摘    要:以丰富的低值鱼类为原料,经去腥、蒸煮、烘烤等工序,制成休闲鱼粒。就其加工过程水分含量的变化,不同烘烤条件及添加剂的使用对成品品质的影响进行了较为系统的研究,为实现休闲鱼粒批量化生产提供依据。

Abstract:A new kind of fish tablets was developed with abundant of low-value fish as the major material by flavor,cooking,baking processes. Meanwhile,processing on its moisture content changes,different baking conditions and the use of additives to the quality of the final impact of a more systematic study,so as to achieve this kind of fish to put into mass production basis.
