功率超声波在农产品加工中应用的研究进展

摘    要:功率超声作用于液态媒质时,可产生多种独特的物理和声化学效应,使其在各行各业中的应用越来越广泛。简要阐述了功率超声作用的基本原理和特点及超声波的发生方法,并从超声场强化分离、结晶、沉淀、雾化、乳化和破乳、干燥与脱水、杀菌、解冻、洗涤、提高肉制品质量、影响酶的活性等方面综述了功率超声近年来在农产品加工领域中的应用研究进展。

Abstract:The high-intensity ultrasound acting on a liquid medium can generates a series of unique physical and chemical effects, which had been ultrasound, widely applied in many industries. In this paper the author summarized the basic principle and the characteristics of highintensity ultrasound and the methods of producing ultrasound wave. The current situation of applications of high-intensity ultrasound in agriculture and the products processing industry was reviewed in terms of uhasround -reinforced separation, crystallization, deposition, atomization, emulsification, de-emulsification, dryness, dehydration, sterilization, thawing, washing and so on.
