芦笋嫩茎生长期及采后生理变化的研究

摘    要:在田间对190mm高芦笋嫩茎的呼吸强度、糖、蛋白质和游离氨基酸进行了测定。结果表明,芦笋嫩茎顶部的呼吸强度是基部的4倍。采收后,芦笋嫩茎的呼吸强度立即增加到一个峰值,随后在24h内,呼吸强度逐步降低到其呼吸峰值的30%,并保持恒定。芦笋嫩茎顶部的糖含量低于基部,蛋白质含量高于基部。采收后24h,芦笋嫩茎的糖含量、蛋白质含量降低,总游离氨基酸含量稳定,天门冬酰胺/天门冬氨酸含量增加,谷酰胺、谷氨酸和脯氨酸含量减少。采收后48h,总游离氨基酸含量增加75%。

Study on asparagus spears physiological change in rowing on field and after harvest

Abstract:Respiration rate of asparagus spears measured in the field showed that the rate of the tip is four times to that of the butt for 190 mm high spear.After harvest,there was an immediate rise to a peak in the respiration rate,followed by a rapid drop during 24 h to a constant level 30% of the peak respiration rate.Result of sugars and proteins measured showed there are low level of sugars and high level of proteins in the spear tips than that in butt,sugars and proteins declined in the first 24 h after harvest.For 24 h after harvest,total free amino acids remained steady.Asparagine/aspartic acid increased,glutumine/glutamic acid and proline decreased.48 h after harvest,total free amine acids increased by 75%.
