酶法降解茶叶多糖技术研究

摘    要:试验采用还原糖法研究木聚糖酶、纤维素酶和β-葡聚糖酶降解茶叶多糖的能力,并探讨了β-葡聚糖酶降解茶叶多糖的主要特性。结果表明,纤维素酶和β-葡聚糖酶相对木聚糖酶具有较强分解茶叶多糖的能力,β-葡聚糖酶对茶叶多糖降解的最适温度为40℃,最适pH为7.0,其热稳定性好,pH为6~7最稳定。

Abstract:Reducing sugar method was used to study the ability of xylannase,celluase and β-glucanase to degrade tea polysaccharides(TPS),and the main features of β-glucanase degrading TPS were measured.The results showed that:the ability of β-glucanase degrading TPS was more excellent than those of xylannase and celluse.The best temperature of degrading TPS was 40 ℃,and the best pH was 7.0.
