蓝莓营养保健蛋糕的研制

摘    要:本文将蓝莓制成蓝莓汁添加到蛋糕中,制成营养保健蛋糕,通过单因素试验和正交试验确定了最佳配方为:蛋糕专用粉250 g,鸡蛋300 g,白砂糖200 g,蓝莓汁150 g,蛋糕油20 g,泡打粉18 g.按照该配方生产出的蛋糕具有蓝莓特有的香味和色泽,口感松软香甜,而且具有良好营养和保健价值,发展前景十分广阔.

Abstract:The nutrition health cake was made by adding blueberry juice to it. The formula, tested by single factor and orthogonal tests, was as follows: cake flour 250g, egg 300g, white sugar 200g, blueberry juice 150g, emulsifier 20g, baking powder18g. The cake tastes soft and sweet with the typical flavor and color of blueberry. With its value in nutrition and health, the cake with blueberry juice will be widely acknowledged and enjoyed in the future.
