茶树品种'木禾种'成品茶的感官特征及干茶识别

摘    要:‘木禾种’与‘鸠坑种’、‘龙井种’并称为浙江三大有性系茶树品种,然而对‘木禾种’成品茶特征尚未见研究报道。本文通过感官审评、理化指标检测和卷积神经网络识别三种方法对7个‘木禾种’原料加工的成品茶进行分析,旨在获取‘木禾种’在茶类适制性、成品茶辨别度上的基础数据和信息。结果表明‘木禾种’在黑茶陈香纯正,红茶显甜香,各茶类均具有一定的适制性;‘木禾种’成品茶水浸出物含量整体偏低;与丽水香茶、寿眉白茶、贡眉白茶、武夷岩茶、熟普、茉莉花茶、金骏眉7种成品茶比对结果,‘木禾种’的7个成品茶的识别率平均达到了99.24%,具有非常高的外形辨识度。本文还分析了‘木禾种’茶树在各类茶的适制性,其成品茶具有非常高的品种辨识度,可为‘木禾种’资源的进一步开发利用提供参考。

Abstract:Tea cultivars‘Muhe’,‘Jiukeng’,and‘Longjing’are collectively known as the three major sexual tea cultivars in Zhejiang Province.However,there has no been research on the characteristics of tea products from cultivar‘Muhe’.This paper analyzes 7 kinds of finished tea products processed using cultivar‘Muhe’through three methods:sensory appraisal,physical and chemical detection and convolutional neural network identification,aiming at obtaining basic data of cultivar‘Muhe’in tea processing suitability and discrimination of finished tea products.The results show that the Pu′er tea made from cultivar‘Muhe’had pure aroma,and its black tea was sweet and fragrant in aroma.Each tea has a certain degree of suitability;the content of the water extract of the Muhe finished tea is generally low;Compared with 7 kinds of tea,"Lishui Xiangcha tea","Shoumei white tea","Gongmei white tea","Wuyi rock tea","Pu′er tea","jasmine scented tea",and black tea"Jinjunmei",with recognition rate of the 7 kinds made teas from cultivar‘Muhe’reached 99.24%,with a high recognition for shape.This paper analyzes the suitability of materials from tea cultivar‘Muhe’for processing various types of tea,and provides methods for identifying tea products made from cultivar‘Muhe’,which provides a reference for the further development and utilization of‘Muhe’resources.
