特色凤凰茶保健蛋糕的研制

摘    要:以凤凰茶、面粉、鸡蛋为主要原料,通过正交试验设计确定特色凤凰茶保健蛋糕最佳配方为面粉50 g,白砂糖50 g,凤凰茶茶粉2 g,苏打粉3 g。结果表明:在蛋糕中添加凤凰茶粉不仅使产品有茶香味,而且具有保健功能。

The Preparation of Special Sanitarian Fenghuang Tea Cake

Abstract:Fenghuang tea, flour, and eggs were used as the main materials, the Orthogonal experimental method indicated that the best formula of the Special Sanitarian Fenghuang Tea Cake was 50 g flour, 50 g sugar, 2 g Fenghuang tea powder and 3 g soda. The results of the experiment showed that the cake mixing with Fenghuang tea powder made the product having tea aroma and sanitarian function.
