摘    要:以定军山蓝莓产业示范园的蓝莓为研究对象,通过酸水解法、直接滴定法、酸碱滴定法、微波消解法以及参照食品安全国家标准等,测定出不同蓝莓品种的营养成分。结果表明,不同品种的蓝莓差异显著,其中奥尼尔、顶峰、密斯提和蓝鸟的水分含量大且糖酸比合适;蓝丰的花青苷含量高达297 mg/100 g,可溶性蛋白质、维生素C和总酚含量丰富;灿烂富含钙、镁、铜、钾、钠等多种矿质元素;蓝玲、双丰、戴安娜和莱格西4个品种没有明显优势。在生长环境相同的情况下,不同品种蓝莓品质存在一定的差异,与蓝玲、双丰、戴安娜和莱格西4个蓝莓品种相比,奥尼尔、顶峰、密斯提、蓝鸟、蓝丰和灿烂等6个蓝莓品种综合品质更好,除了鲜食还适宜加工成果酒、饮料、果脯、果干等,具有更大的市场开发和附加经济价值,建议在陕南地区推广种植。

Abstract:Taking the blueberry produced by DING Jun-Shan blueberry industry demonstration garden as the object of study, through the acid water solution, direct titration method, acid-base titration method, microwave digestion method, as well as according to the food security national standards, the nutrient contents in different blueberry varieties were determined. Exper-imental results showed that the nutrient contents in different blueberry varieties were significant different. In which, Oˊneal, Climax, Misty and Bluejay had rich moisture content and appropriate sugar acid. Bluecrop was rich in soluble protein, vita-min C, total phenolics, and its anthocyanin content was up to 297 mg/100 g. Britewell was abundant in mineral elements such as calcium, magnesium, cuprum, potassium and sodium. Blue bell, Sweetheart, Diana and Legacy had no obvious ad-vantage. Under the same growth environment, there was a certain difference in the quality of blueberry varieties. Compared with Blue bell, Sweetheart, Diana and Legacy, Oˊneal, Climax, Misty, Bluejay, Bluecrop and Britewell had better compre-hensive quality, and the six blueberry varieties were suitable not only for fresh food but also for wine, beverages, preserved fruits and dried fruits, with greater market development and additional economic value, so it was recommended to promote their cultivation in southern Shaanxi.
