摘    要:文中对形成牛肉黄脂的影响因素和鉴别方法等进行了阐述,并从卫生学评价和处理方面提出对黄疸、黄脂病、黄脂肉的检验方法,为牛肉品质鉴别提供参考。

Abstract:The article mainly elucicated the influencing factors and identification methods of yellow fat of beef,meantime,the testing methods of icterus,steatites,and yellow fat meat were discussed from viewpoint of hygiene evaluation and disposal,which demonstrated the significance in the practical beef production.
