摘    要:介绍了具有寒地特色的酒庄葡萄酒生产工艺流程,指出酒庄葡萄酒生产过程的适当降低发酵温度来保护果香,加强低温冷处理促进酒石酸盐沉淀以达到降酸的目的.

Abstract:Wine processing technology in cold area was introduced and its key techniques were pointed out.Thoes were: Protecting fruit aroma though aptly reducing fermentation temperature,reducing aced by decreasing temperature to promote tartrate precipitation and keeping chilling temperature to promote tartrate precipitation to reduce acid.
