甘薯块根类胡萝卜素与薯肉色的研究

摘    要:甘薯块根类胡萝卜素的含量随品种不同有很大差异。高者达28.08毫克/100克鲜重,少者仅0.12毫克/100克鲜重。块根薯肉色与类胡萝卜素的含量呈正相关,r=0.82,达极显著水平。类胡萝卜素的组成成分也影响着块根的薯肉色。β-胡萝卜素是甘薯块根的主要色素,当其含量达总量60%以上,且类胡萝卜素的总量也高时,块根薯肉色橙红。用色差

Abstract:The contents of carotenoid and flesh color of sweet potato root tuber in 40 varietieswere determined.The carotenoid content and color appears to be more closely associatedwith varieties of sweet potato.Contents and components of carotenoid depended on colorof sweet potato root tuber.The correlation between carotenoid content and flesh color insweet potato was highly significant.Therefore color difference meter and color disk wererecommended for the use of estimation of carotenoid content in sweet potato root tuber.
