| Abstract: | Based on the review of quality deterioration and its mechanisms of bamboo shoots during storage,the research results on techniques of preventing micro-organic infection,reducing physical activity activities water loss and preventing moisture loss and many other and supporting fresh-keeping techniques were summarized,and the development direction of fresh-keeping of bamboo shoots were proposed in this paper. |
