Various antioxidant assays are used to characterize fruits consumed fresh or processed although an easy, reliable and cheap assay is not available to follow the changes in antioxidant power. This study tested the applicability of a recently developed antioxidant measuring system, Water-soluble (ACW) and Lipid-soluble (ACL) Antioxidant Capacity, using the PHOTOCHEM® instrument. Initially, 13 cultivars of 4 berry species were assayed with Photochem and compared with widely used methods based on single electron transfer reactions like ferric reducing ability of plasma, total polyphenolic content (TPC) and 2,2′-diphenyl-1-picrylhydrazyl radical-scavenging capacity. Assays based on hydrogen atom transfer reactions were also carried out including total radical-scavenger capacity (TRSC). The correlations among the results were all significant at P ≤ 0.05, except the one between TPC and ACW. The overall antioxidant capacity ranked on the order of strawberry < red currant < raspberry < black currant. However, significant differences could have been detected among genotypes and antioxidants assays used for the analysis. The Photochem instrument is not suitable for easy, cheap and high-throughput routine analysis of berry antioxidant capacity and hence is not preferable to other assays.  相似文献

Eight lupin (Lupinus angustifolius L.) genotypes grown at four locations in south central Alberta in 2004 were evaluated for variability in phenolic constituents and antioxidant activity measured by a photochemiluminescence assay. Genotype was the main source of variation for content of phenolic compounds and antioxidant activities. Phenolic compounds in genotypes varied minimally from 11.9 to 14.7 mg catechin equivalent and 4.15 to 4.95 mg rutin equivalent g−1 lupin for total phenolic and flavonoid contents, respectively. Lupin genotypes exhibited weak antioxidant activity based on water–soluble substances (ACW) of 0.54 to 1.07 μmole Trolox equivalent antioxidant capacities (TEAC)/g with lag time ranging from 70 to 153 s and an antioxidant index of 6.7 to 14.5 and 1.9 to 3.3 μmole TEAC/g based on measurements of lipid-soluble substances (ACL). Antioxidant activity of lupin genotypes was not related to phenolic contents of seeds.  相似文献

The antioxidant potential of milling fractions from breadwheat and durum   总被引:1,自引:0,他引:1  
The effect of primary processing, namely milling, on the phenolic content and antioxidant capacity of two wheat cultivars, namely Canada Western Amber Durum (Triticum turgidum L. var. durum) and Canada Western Red Spring (Triticum aestivum L.) was studied. The milling products: bran, flour, shorts and feed flour fractions were examined. In addition, semolina was an end-product of durum wheat milling. Antioxidant activity of wheat phenoliocs was evaluated using oxygen radical absorbance capacity, inhibition of photochemiluminescence, the Rancimat method, and inhibition of oxidation of low-density lipoprotein cholesterol and deoxyribonucleic acid. The phenolic composition of wheat extracts was determined using high performance liquid chromatography. Bran showed the highest antioxidant activity whereas the endosperm possessed the lowest in both cultivars examined. The phenolic compounds are concentrated in the outermost layers namely the bran. The consumption of wheat with bran in the form of whole grain may provide beneficial health effects.  相似文献
