【目的】探讨影响不同部位的牛肉肉色稳定性差异的主要生化因素。【方法】从8头牛胴体上分别取背最长肌、半膜肌和腰大肌,在0-4℃冷藏7 d,每隔1 d分别测定肉色、色素含量、pH、MDA含量、NADH浓度、乳酸脱氢酶和高铁肌红蛋白还原酶活性等指标。【结果】背最长肌在整个冷藏期间的a*值最高且变化最小,MDA含量最少,NADH浓度、乳酸脱氢酶和高铁肌红蛋白还原酶活性最高,肉色最稳定;半膜肌居中,而腰大肌的a*值最小,变化最显著,MDA含量最高,NADH浓度、乳酸脱氢酶和高铁肌红蛋白还原酶活性最低,肉色最不稳定。【结论】牛肉肉色稳定性与其NADH浓度、乳酸脱氢酶和高铁肌红蛋白还原酶活性显著相关(P<0.05)。  相似文献

The effects of fasting on the quality of the dorsal and ventral ordinary muscles from cultured Pacific bluefin tuna (Thunnus orientalis) during chilled storage were investigated. Tuna were subjected to fasting for 2 days in the summer or 6 days in the winter prior to harvesting. The breaking strength of the dorsal ordinary muscle sampled in the summer increased until 24 h and then decreased. There were no significant differences in the lipid and glycogen content of the ordinary muscle after 9 h of storage between the controls and either fasting group. The pH of the ordinary muscle subjected to summer and winter fasting was higher than in the controls after 24–48 h of storage. However, the relationship between the pH and glycogen content was unclear. The metmyoglobin content during chilled storage was lower in the ordinary muscles from either fasting group than in the controls. In conclusion, fasting for 6 days in the winter improved the color stability of the ordinary muscle without a decline in its lipid content.  相似文献

In two experiments, the effects of succinate and NADH(reduced nicotinamide adenine dinucleotide) on metmyoglobin reductase activity and electron transport chain-linked metmyoglobin reduction were investigated and compared. In experiment 1, metmyoglobin(MetMb), substrate and inhibitors were incubated with mitochondria. Comparsion of the effects of succinate and NADH on MetMb reduction was investigated. The MetMb percentage in sample treated with 8 mol L-1 succinate decreased by about 69% after 3 h incubation, and the effect was inhibited by the addition of 10 mol L-1 electron transfer chain complex II inhibitor malonic acid; the MetMb percentage in samples treated with 2 mol L-1 NADH decreased by 56% and the effect was inhibited by the addition of 0.02 mol L-1 electron transport chain complex I inhibitor rotenone. These results indicated that electron transport chain played an important role in MetMb reduction. Both complex II and complex I take part in the MetMb reduction in mitochondria through different pathways. NADH-MetMb reduction system was less stable than succinateMetMb system. In experiment 2, the beef longissimus dorsi muscle was blended with different concentrations of succinate or NADH. Enhancing patties with higher concentration of succinate or NADH improved colour stability in vacuum packaged samples(P〈0.05). These results verified that mitochondria electron transport chain is related to the MetMb reduction in meat system.  相似文献

Lipid oxidation and metmyoglobin (MMb) reduction are popular issues in meat color research. This study evaluated the effects of aldehyde products, particularly 4‐hydroxy‐2‐nonenal (HNE) and hexenal, of lipid oxidation on the oxymyoglobin stability, mitochondrial membrane permeability, MMb reduction ability, electron transport chain‐mediated MMb reduction, and nicotinamide adenine dinucleotide reduced form (NADH)‐dependent MMb reductase activity of bovine Longissimus muscle. The results indicated that HNE and hexenal accelerate the oxidation rate of oxymyoglobin, significantly increase the permeability of the mitochondrial membrane, and inhibit electron transport chain‐mediated MMb reduction. However, HNE and hexenal were found to exert no effect on the activity of NADH‐dependent MMb reductase. Thus, the aldehyde products of lipid oxidation could damage the microstructure of mitochondria and inhibit mitochondria‐mediated MMb reduction, which is disadvantageous in terms of the color stability of fresh bovine Longissimus muscle.  相似文献

与传统的处理方法相比,冷鲜肉的超高压处理有许多优点,应用前景广阔。为了研究超高压处理对生鲜肉冷藏期间肉色稳定性的影响,该文以猪背最长肌为材料,探究其超高压处理后冷藏期间肉品色泽和高铁肌红蛋白还原酶活性之间的关系。结果表明:温度4℃、压力150~200 MPa、保压时间10 min有助于提高猪背最长肌冷藏期间的肉色红度和高铁肌红蛋白还原酶活性(125.0~201.5 nmol/(min·g))。试验证实,适当的压力处理能够激活高铁肌红蛋白还原酶活性,使肌红蛋白保持还原状态,从而有益于维系冷藏期间肉品色泽的稳定性。  相似文献

Recently isolated spore-forming pigmented marine bacteria Bacillus indicus HU36 are sources of oxygenated carotenoids with original structures (about fifteen distinct yellow and orange pigments with acylated d-glucosyl groups). In this study, we evaluated the stability (sensitivity to iron-induced autoxidation) and antioxidant activity (inhibition of iron-induced lipid peroxidation) of combinations of bacterial HU36 carotenoids with the bacterial vitamin menaquinone MQ-7 and with phenolic antioxidants (vitamin E, chlorogenic acid, rutin). Unexpectedly, MQ-7 strongly improves the ability of HU36 carotenoids to inhibit FeII-induced lipid peroxidation, although MQ-7 was not consumed in the medium. We propose that their interaction modifies the carotenoid antioxidant mechanism(s), possibly by allowing carotenoids to scavenge the initiating radicals. For comparison, β-carotene and lycopene in combination were shown to exhibit a slightly higher stability toward iron-induced autoxidation, as well as an additive antioxidant activity as compared to the carotenoids, individually. HU36 carotenoids and phenolic antioxidants displayed synergistic activities in the inhibition of linoleic acid peroxidation induced by heme iron, but not by free iron. Synergism could arise from antioxidants interacting via electron transfer through the porphyrin nucleus of heme iron. Overall, combining antioxidants acting via complementary mechanisms could be the key for optimizing the activity of this bacterial carotenoid cocktail.  相似文献

研究了维生素C(Vc)、茶多酚(TP)以及牛至(Origanum vulgare)和鼠尾草(Salvia farinacea)等植物提取物对鲜牛肉的护色效果。采用4℃冰箱冷藏经处理过的鲜牛肉1个星期,使其发生氧化反应,然后测定其生成的变肌红蛋白的相对含量和pH值,并配合色泽感官评定来评价提取物的抗氧化性能。结果表明:Vc与TP复配剂的抗氧化性明显好于单一抗氧化剂的抗氧化性,其最佳配比为Vc250mg/L、TP32.5mg/L;在复配的基础上分别添加牛至500mg/L、鼠尾草300mg/L的抗氧化效果最好。  相似文献
