随着人们生活水平的提高,对食品质量的要求也在不断的提高,调味品在食品质量中扮演着非常重要的角色。本实验以普通养殖鲫鱼为主要原料,研究水产调味品鲫鱼汁的最佳工艺。通过正交试验和感官评价,最终得到水产调味鲫鱼汁的最佳配方:黄原胶0.04%,鲫鱼汁30%,盐15%,糖5%,谷氨酸钠5%,5′-肌苷酸0.25%,叶黄素0.03%,鱼味香精0.03%,山梨酸钾0.05%,均质压力35MPa。水产调味品鲫鱼汁质地均匀,口感细腻,鱼鲜风味突出,色泽淡黄,气味芬芳,符合人们对于风味和营养的需求,具有广阔的市场前景。 相似文献

Effects of Glutamate and Na+ on the Development and Enzyme Activity of the Oriental Migratory Locust,Locusta migratoria manilensis (Meyen) in Successive Generations 下载免费PDF全文
Rapid and mass rearing ofLocusta migratoria manilensis is an urgent need to meet the increasing demand for food of people. In this study, the effects of four artificial feeds on the development, reproduction and the activities of detoxification and protective enzymes of L. migratoria manilensis in three successive generations were investigated. The results showed that sucrose and monosodium glutamate (MSG) significantly increased the net reproductive rate (R0) and the intrinsic growth rate (rm) ofL. migratoria manilensis, but sodium chloride (0.17%) suppressed this increase. Furthermore, the artificial feed with sucrose and monosodium glutamate increased the activities of esterase (EST), acetylcholinesterase (ACHE), glutathione-S- transferase (GST), multi-function oxidase (MFO), phenol oxidase (PO), catalase (CAT) and peroxidase (POD), but inhibited the activity of superoxide dismutase (SOD). However, sodium chloride (0.17%) increased the activities of EST, ACHE, CAT and SOD, and inhibited the activities of MFO, GST, PO and POD. Correlation analysis found that the increasing of PO activity and the decreasing of SOD activities were significantly related with the increasing of the intrinsic growth rate (rm). The above results indicated that sucrose and monosodium glutamate could promote the development and reproduction of L. migratoria manilensis, but Na+ inhibit such promotion with the concentration above 0.2%. The activities of PO and SOD can be used as biochemical standard to assess the effect of artificial feed. 相似文献

建立了同时测定鸡汁中谷氨酸钠和呈味核苷酸的紫外光谱法。根据吸光度的加和性原理,通过联立方程求解,测定鸡汁中的谷氨酸钠和呈味核苷酸(I+G)含量。测定的鸡汁中谷氨酸钠平均含量分别为11.99%、13.69%和14.38%,相对标准偏差(RSD)分别为2.50%、4.57%和3.79%,加标回收率在94.15%~105.27%之间,平均值为99.59%,回收率RSD为3.79%。呈味核苷酸(I+G)平均含量分别为0.94%、1.19%和1.33%,RSD分别为1.02%、0.98%、1.27%,加标回收率在94.12%~104.16%之间,平均值为100.71%;回收率RSD为3.21%。UV方法方便快捷,准确可靠,能够测定鸡汁中的谷氨酸钠和I+G的含量。 相似文献

[目的]为了研究葡萄糖、谷氨酸钠和乙烯利对番茄果实中番茄红素合成量的影响。[方法]用不同浓度的葡萄糖、谷氨酸钠和乙烯利处理各发育时期的千禧番茄果实,研究它们对番茄红素合成量的影响,并设计正交试验确定这3种物质混合液的最佳配比。[结果]适当浓度的葡萄糖、谷氨酸钠和乙烯利浸泡液处理可提高各发育时期番茄果实中番茄红素的合成量。3种物质的混合液处理坚熟期番茄果实的最佳配比是葡萄糖3.0%,谷氨酸钠3.0%,乙烯利1.0%,处理后番茄红素的含量提高了191%。且乙烯利对番茄红素高表达的影响最大,其次为谷氨酸钠、葡萄糖。[结论]该研究为提高番茄果实中番茄红素的合成量提供了理论依据。 相似文献

本文旨在研究谷氨酸钠对断奶仔猪肠道短链脂肪酸的影响。试验选择健康、体重及断奶日期一致(24日龄)的杜×长×大三元杂交猪120头(6.42±0.36kg),按体重随机分为3组,每个组40头仔猪。试验从24d断奶到断奶后7d结束,分别饲喂3种日粮,添加0.5%氯化钠组;添加0.25%谷氨酸钠+0.25%氯化钠组,添加0.5%谷氨酸钠组。分别收集盲肠和结肠食糜,测定食糜中短链脂肪酸的含量。与对照组相比,添加0.5%的谷氨酸钠能显著增加盲肠和结肠中的乙酸、丁酸及戊酸浓度(P<0.01)。同时添加0.5%的谷氨酸钠组采食量及日增重均无显著影响,但腹泻显著低于添加0.5%氯化钠组。因此,在断奶仔猪饲料中添加0.5%的谷氨酸钠能增加结肠和盲肠中短链脂肪酸含量,促进肠道健康,减少腹泻的发生。 相似文献
