Flavor characterization and quality of salt-cured and desalted cod (Gadus morhua) products was studied using sensory analysis and gas chromatography techniques. The products were produced in Iceland using two different processing methods (filleting and splitting) and three different salting procedures, i.e., the old single-step kench salting or a multistep procedure, and presalting (injection and brine salting or only brine salting), which was followed by kench salting. The main difference observed was between fillets and split fish, where the split fish was darker and had stronger flavor characteristics. Comparison of different salting procedures showed that the use of presalting improved the appearance of the salted products, which can be described as increased lightness and reduced yellowness of the products. In the same products, the intensity of curing flavors was milder, as described by sensory analysis and key aroma compounds. Derivatives from lipid and protein degradation contribute to the characteristic flavor of the salted products. 相似文献

This paper investigated whether nitrogen and heavy metal concentrations derived by biomonitoring of atmospheric deposition are statistically meaningful in terms of compliance with minimum sample size across several spatial levels (objective 1), whether this is also true in terms of geostatistical criteria such as spatial auto-correlation and, by this, estimated values for unsampled locations (objective 2) and whether moss indicates atmospheric deposition in a similar way as modelled deposition, tree foliage and natural surface soil at the European and country level, and whether they indicate site-specific variance due to canopy drip (objective 3).Methods
Data from modelling and biomonitoring atmospheric deposition were statistically analysed by means of minimum sample size calculation, by geostatistics as well as by bivariate correlation analyses and by multivariate correlation analyses using the Classification and Regression Tree approach and the Random Forests method.Results
It was found that the compliance of measurements with the minimum sample size varies by spatial scale and element measured. For unsampled locations, estimation could be derived. Statistically significant correlations between concentrations of heavy metals and nitrogen in moss and modelled atmospheric deposition, and concentrations in leaves, needles and soil were found. Significant influence of canopy drip on nitrogen concentration in moss was proven.Conclusion
Moss surveys should complement modelled atmospheric deposition data as well as other biomonitoring approaches and offer a great potential for various terrestrial monitoring programmes dealing with exposure and effects.3.
To evaluate the impact of the herbicide flumioxazin (fmx) on nontarget grapevines, its effects were assessed on fruiting cuttings and field-grown plants. The stress caused by the herbicide differed according to the grapevine model. In cuttings, leaf gas exchange and photosynthetic pigment levels as well as hexose contents decreased, whereas sucrose and starch accumulated, suggesting an inhibition of photosynthesis and an increase of carbohydrate reserves as a response to the fmx-induced stress. Paradoxically, in the field-grown grapevine leaves, fmx caused a stimulation of photosynthesis, an accumulation of photosynthetic pigments and monosaccharides, in parallel with a mobilization of sucrose and starch. These results suggest that fmx reaches grapevine leaves via root uptake and has prolonged effects. In cuttings, fmx generated a toxic effect related to its target, whereas in field-grown plants, fmx had rather positive physiological effects and acts as a signal further stimulating photosynthesis and related parameters. 相似文献

To further characterize carbohydrate physiology in grapevine flowers, we examined inflorescence autotrophy in the 'Gewurztraminer' and 'Pinot noir' cultivars, which differ in sensitivity to flower abscission. In both cultivars, positive net photosynthesis occurred in inflorescences. The rate of photosynthesis gradually decreased throughout flower development and there was no net carbon assimilation at fruit set. The rate of photosynthesis was positively correlated with chlorophyll concentration but not to stomatal conductance. Throughout flower development, the internal CO2 concentration increased in inflorescence tissues, suggesting that assimilates are also formed through refixation of respiratory CO2 by the phosphoenolpyruvate carboxylase (PEPC) pathway. Significant differences between the two cultivars were recorded during meiosis, when photosynthesis was higher in 'Gewurztraminer'. We conclude that the inflorescence of grapevine contributes to its own carbon nutrition by photosynthesizing throughout flower development. Moreover, the differential patterns of photosynthesis in the inflorescences of 'Gewurztraminer' and 'Pinot noir' might account for their differing fertilization rates and sensitivity to flower abscission. 相似文献

In Vitis vinifera L, photosynthesis and photosynthate partitioning are affected in the presence of fludioxonil and pyrimethanil, two fungicides commonly used in vineyards against Botrytis cinerea Pers. However, the effects were found to be different according to the model studied: plantlets (cv Chardonnay) grown in vitro, fruiting cuttings (cv Chardonnay) and plants grown in vineyards (cvs Chardonnay, Pinot noir and Pinot Meunier). In the plantlets grown in vitro, both fungicides decreased gas exchanges, photosynthetic pigment and starch concentrations in the leaves, whereas soluble carbohydrates transiently accumulated, suggesting that plantlets mobilised starch in response to photosynthesis inhibition caused by fungicides. In the fruiting cuttings, the fungicides did not affect photosynthesis, although fludioxonil caused starch decrease in parallel with sucrose accumulation, suggesting that the fungicide effects were of lower intensity than in vitro. Conversely, in vineyard, the two fungicides stimulated photosynthesis and increased pigment concentrations in the three vine cultivars tested. In the meantime, glucose, fructose and starch levels of the leaves declined after fungicide exposure, whereas sucrose accumulated, indicating that sucrose synthesis increased in the leaves following the fungicide treatment. Among the three varieties, Chardonnay was the most sensitive to the fungicides as revealed by the intensity of the responses and the longer period for recovery. In vineyard, the results suggested that the two fungicides, in addition to inhibiting B cinerea development, had a beneficial effect on vine physiology through the stimulation of leaf carbon nutrition, which may further enable the plant to rapidly make use of its defence reactions. 相似文献

Induction of triploidy has been suggested as an effective tool to prevent spawning of farmed fish. This experiment examined the growth potential of triploid cod when reared communally with diploid ones after the juvenile stage. Pressure treatment was used to induce triploidy in a batch of cod eggs in April 2009. The resulting offspring were reared separately from their diploid counterparts until they reached the proper size for PIT tagging. At the age of 8 months, an equal number of 115 diploids (135.5 ± 3.95 g) and triploids (93.6 ± 2.63 g) were communally reared in a circular flow-through tank until the age of 22 months. By the end of this rearing period, diploids (1,002.4 ± 39.9 g) were significantly heavier than triploids (654.6 ± 27.7 g), but the specific growth rate did not differ significantly during the growth trial. Gonadal development at the age of 22 months was also lower among triploids than diploids, especially for females (5.3 and 91.9 %) but also for males (32.5 and 72.7 %). Sterility among female triploids was evident by the reduced size and dysfunctional gonads, but gonadal development in male triploids was less suppressed. Prevalence of body deformities was, however, significantly higher among triploids (62.6 %) than diploids (33.9 %). Higher prevalence of deformities in triploid cod underlines the need for further fine-tuning of the triploidization procedure or finding other methods of sterilization. Purpose
This study aimed at investigating correlations between heavy metal concentrations in mosses and modelled deposition values as well as other site-specific and regional characteristics to determine which factors primarily affect cadmium, lead and mercury concentrations in mosses. The resulting relationships could potentially be used to enhance the spatial resolution of heavy metal deposition maps across Europe.Materials and methods
Modelled heavy metal deposition data and data on the concentration of heavy metals in naturally growing mosses were integrated into a geographic information system and analysed by means of bivariate rank correlation analysis and multivariate decision trees. Modelled deposition data were validated annually with deposition measurements at up to 63 EMEP measurement stations within the European Monitoring and Evaluation Programme (EMEP), and mosses were collected at up to 7,000 sites at 5-year intervals between 1990 and 2005.Results and discussion
Moderate to high correlations were found between cadmium and lead concentrations in mosses and modelled atmospheric deposition of these metals: Spearman rank correlation coefficients were between 0.62 and 0.67, and 0.67 and 0.73 for cadmium and lead, respectively (p?<?0.001). Multivariate decision tree analyses showed that cadmium and lead concentrations in mosses were primarily determined by the atmospheric deposition of these metals, followed by emissions of the metals. Low to very low correlations were observed between mercury concentrations in mosses and modelled atmospheric deposition of mercury. According to the multivariate analyses, spatial variations of the mercury concentration in mosses was primarily associated with the sampled moss species and not with the modelled deposition, but regional differences in the atmospheric chemistry of mercury and corresponding interactions with the moss may also be involved.Conclusions
At least for cadmium and lead, concentrations in mosses are a valuable tool in determining and mapping the spatial variation in atmospheric deposition across Europe at a high spatial resolution. For mercury, more studies are needed to elucidate interactions of different chemical species with the moss. 相似文献9.

This study describes an equine joint friction test using a cartilage-on-cartilage arrangement and investigates the influence of age and load on the frictional response. Osteochondral plugs were extracted from equine shoulder joints (2–5 years, n = 12; 10–14 years, n = 15), and mounted in a pin-on-disc tribometer. The frictional response was then measured under constant conditions (2 N; 20 °C; 5 mm/s), and with increasing load (2 N, 5 N, 10 N). In all experiments, the friction coefficient of young cartilage was significantly (P < 0.001) smaller than obtained from old cartilage, while the application of a greater load resulted in a significant (P < 0.001) decrease in friction coefficient only in old cartilage. It was concluded that cartilage ageing was responsible for an increase in friction coefficient under these experimental conditions. Moreover, where young cartilage lubrication remained stable, cartilage ageing may have been responsible for lubrication regime change. The cartilage-on-cartilage model could be used to better understand lubrication regime disturbances in healthy and diseased equine joints, and to test the efficacy of various bio-lubricant treatments. 相似文献
