The aims of this work were to evaluate the effects of different concentrations of hexanal, (E)-2-hexenal, hexyl acetate, and their mixtures on the fate of pathogenic species such as Escherichia coli, Salmonella enteritidis, and Listeria monocytogenes inoculated in model systems as well as the antimicrobial activity against the target species of the chosen molecules when added to the packaging atmosphere of inoculated fresh-sliced apples. The result obtained in this work pointed out the potential use of compounds such as hexanal, (E)-2-hexenal, and hexyl acetate for both the extension of shelf life and an improvement of hygienic safety of "minimally processed foods". In fact, hexanal, (E)-2-hexenal, and hexyl acetate had a significant inhibitory effect against pathogen microorganisms frequently isolated from raw materials (E. coli, S. enteritidis, and L. monocytogenes) when inoculated in both model and real systems. In this last condition, these compounds, at the levels used (150, 150, and 20 ppm for hexanal, hexyl acetate, and (E)-2-hexenal, respectively), displayed a bactericide effect on L. monocytogenes and they exhibited significant extensions of lag phase of E. coli and S. enteritidis inoculated at levels of 10(4)-10(5) CFU/g.  相似文献

Summary We have developed a simple method for the determination of gaseous compounds that reflect microbial activity in soil, as affected by factors such as the presence of an organic amendment (peat) or a variation in soil moisture. The method is based on a gas chromatographic analysis of the headspace of vials containing the soil under examination. A single gas chromatograph can detect up to 10 different gases. As expected, after peat was added to the soil, CO2 evolution and O2 uptake increased significantly. Positive relationships were found between the evolution of N2O, and soil moisture and the amount of peat added to the soil. Both the these variables influenced the CO2:O2 ratio. The results given by this method show high reproducibility.  相似文献

The aim of this research was to assess the antimicrobial activity of nine different industrial essences used in a soft drink factory in relation to their composition, as well as to verify the role of vapor pressure on their bioactivity. The essences were tested against a Saccharomyces cerevisiae strain isolated from spoiled soft drinks. The tests were carried out by adding the essences directly to a liquid medium or into the headspace of closed systems inoculated with the yeast. The headspace composition was evaluated through a solid phase microextraction-gas chromatography technique. The use of a mass spectrometer allowed the identification of the peaks detected. The microbial growth was indirectly monitored by measuring the metabolic CO2 released by the yeast. The results obtained indicated that the most effective essences were characterized by the highest concentration of some terpenes, such as citral, beta-pinene, and p-cymene. Moreover, all of the essences were more bioactive when added directly to the liquid medium.  相似文献

The ionic composition of 53 precipitation samples collected at a coastal site in western Sardinia (Torregrande) was measured in order to determine concentrations and fluxes of the major ions. Precipitation events were sampled over a two year period, Oct'92/Oct'93 and Oct'93/Oct'94. Despite the proximity to the African continent and the detection of Saharan inputs reflected in high pH values and highnssCa fluxes, there is evidence for acidic rain with over 54% of the events having pH values <5.6. This would suggest long-range transport of anthropogenic inputs, as there is no obvious local source. Within the study period, a marked decrease in median pH is recorded at Torregrande in '93/'94, decreasing from 5.94 to 5.18. This is coupled with an increase in total annual flux of NO3 from 27 to 63 μg/cm2, making the average flux of NO3 in the two years comparable with that at Capo Carbonara (48 μg/cm2). Particulate fluxes at Torregrande show a marked inter- as well as intra-annual variability, from 70 to 200 μg/cm2. Variations of pH seems to be partially due to the total particulate as well asnssCa fluxes. A statistic of Saharan enriched rain episodes of the two sites showed a peak transport season in April–May and October which is two times greater at Capo Carbonara. Rainfall on the west coast, therefore, appears to be less affected by Saharan dust than rainfall on the southern coast and therefore shows greater signs of acidification due to anthropogenic inputs.  相似文献

In this work the effects of hexanal, as a component of packaging atmosphere, on the shelf life of and evolution of naturally occurring microbial populations in fresh apple slices during storage at 4 and 15 degrees C were evaluated. Although hexanal had no bactericidal effects, in all conditions considered, this volatile molecule significantly extended the shelf life. In fact, the presence of hexanal in the storage atmosphere (at 4 degrees C) totally inhibited mesophilic bacteria and considerably prolonged the lag phase of psychrotrophic bacteria. Also, at 15 degrees C, hexanal strongly inhibited molds, yeasts, and mesophilic and psychrotrophic bacteria. Moreover, hexanal led to a yeast selection favoring species having a reduced spoilage potential due to their prevalent respiratory activity. When added to a modified atmosphere (70% N(2) and 30% CO(2)), this molecule was also very effective in preventing browning reactions for at least 16 days at 15 degrees C. No changes in hue angle values were observed in samples packaged in modified atmosphere with hexanal, even after 16 days of storage at 4 degrees C.  相似文献

The ionic composition of 55 aerosol samples and 31 precipitation events collected in a coastal site in southern Sardinia (Capo Carbonara, 39°06 N; 09°31 E) were compared. The samples were collected during one year period (Oct'90/Oct'91) and showed high variability in composition according to meteorological conditions. Rain and soluble part of aerosol showed a strikingly similar ionic composition: most significant anions were chlorine and sulphate, and sodium is the principal cations, followed by magnesium and calcium. The acid events are associated with N-NW trajectories (anthropogenic influxes from N. Europe) with avg. pH=4.65, non sea salt (nss) Ca=60 eq/l and NO3/nssSO4=0.6. Southern precipitations are influenced by Saharan dust alkaline effects, with avg. pH=6.75,nssCa=271 eq/l and NO3/nssSO4=0.4. Na/Cl ratio in rain is similar to sea water (0.87), whilst in aerosols there is a Cl loss (Na/Cl=1.10), probably due to reaction with nitric acid. Total fluxes of Ca, Mg, NO3 and SO4 were 104, 9, 64 and 113 g/cm2, and wet deposition exceeded (65–90%) dry deposition. Scavenging ratios (SR) as defined by the equation:SR=[(Ci)rain/(Ci)air] *d, (d=1200g/m3) were calculated, using geometric means (Ci) of precipitation and aerosols collected concurrently during the period (a total of 23 samples). The SR values are Ca=3400, Cl=2400, Na, K, SO4=1700, Mg=1000 and NO3=750. These numbers could be useful to infer total fluxes by using simply rainwater ionic composition in Mediterranean semi-arid sites like Sardinia.  相似文献

Trace metal (As, Cd, Cr, Ni, Hg, Pb) concentrations in soil samples collected around the Porto Marghera (Italy) industrial zone (2–40 km) near the city of Venice were compared with direct measurements of atmospheric deposition measured at comparable distances from the same source. Concentrations of Cd and Pb in soils decreased exponentially with increasing distance from the source; less clear signals were detected for As, Cr and Ni. Significant differences were found among the soils, which were partially resolved when their clay contents were normalised. Preliminary comparisons of fluxes of Cd and Pb derived from soil with direct deposition measurements showed increasing values with longer integration times. Annual Cd and Pb flux values of one year of direct deposition were 5 to 10 times lower than mean annual fluxes derived from soils,integrating 50 to 100 years. Values range from ~0.1–0.4 to 1–2 mg m-2 yr-1 for Cd, and from 3–18 to 50–100 mg m-2 yr-1 for Pb. These results fit information on `historical' emission trends as recorded in sediments of the lagoon.  相似文献

In this paper, the effects of hexanal and trans-2-hexenal, which are both natural molecules characterizing apple aroma, on the microbial population and on color retention of fresh sliced apples were evaluated. In particular, a central composite design (CCD) was developed to assess the individual and interactive effects of the chosen volatile molecules and storage temperatures on (i) the growth of the naturally occurring microflora, (ii) the evolution over time of an inoculated spoilage yeast (Pichia subpelliculosa), and (iii) the enzymatic browning reaction in minimally processed apples. The inclusion of hexanal and trans-2-hexenal in the storage atmosphere of apple slices determined a significant extension of shelf life also when P. subpelliculosa was inoculated at levels of 10(3) colony-forming units/g and abusive storage temperatures were used. In fact, the presence of these molecules in the packaging atmospheres considerably prolonged the lag phases of the inoculated yeast and reduced the growth potential of naturally occurring bacteria. Moreover, the addition to the modified atmosphere of low levels of the hexanal increased the color stability of the products up to 16 days.  相似文献

  • 1. Loss on ignition (LOI) is a widely used method to estimate organic matter (OM) in the sediment of marine and freshwater ecosystems. Thermogravimetric‐differential thermal analysis (TG‐DTA) of organic species provides information on thermal reactions, the amount and properties of clay structural water, organic species and carbonates.
  • 2. The accuracy of LOI compared with that of TG‐DTA was evaluated in 33 sediment samples from the Lagoon of Venice (Italy).
  • 3. In all tests conducted with TG‐DTA the mass loss of OM and the loss of clay structural water (LCSW) from oxidized samples were measured. The mass loss of OM at 350°C (TG‐DTA 350 OM) and the total extraction of organic matter at 567°C (TEOM) calculated from the difference between natural state samples and oxidized samples highlight the presence of both thermally labile and thermally stable substances.
  • 4. The grain size data of sediment samples from the Lagoon shows a variable distribution between slightly muddy sand and mud. Loss of clay structural water at 350°C (LCSW 350) and total extraction of clay structural water at 567°C (TECSW) both estimated by TG‐DTA on oxidized samples, were found to correspond approximately to 6% and 10%, respectively of the clay fraction (<4 µm). This percentage may be used to correct LOI measurements of OM in sediments with high clay content.

LOI 350 (loss on ignition at 350°C) and LOI 550 (loss on ignition at 550°C) proved to be ~80% and ~200%, respectively, of total extraction of mass loss at 350°C (TG‐DTA 350 tot) and at 567°C (TEML) estimated by TG‐DTA on natural samples, meaning that the LOI 550 value represents a significant overestimate. The difference between the LOI 550 and TEML values indicates that the mass loss excess (MLE) may be accounted for by losses due to breakdown of carbonates.
