Sensory analysis is indispensable in order to promote the project of developing sorghum-based products and, therefore, work on sensory profiles of these products and consumer acceptance is needed to help them succeed. Thus, this study investigated the acceptance of 5 optimized gluten-free sorghum-based and a Reference (with gluten) cakes (prepared from cake premixes), considering their drivers of liking and disliking and their purchase intention. Chocolate and orange flavored gluten-free cakes were prepared based on the numerical optimizations of the formulations (technological, nutritional, functional, technological and nutritional, and technological and functional optimizations). Three sensory evaluation techniques were applied to cakes: acceptance testing, purchase intention and Check-all-that-apply. There was an improvement in the sensory properties of the gluten-free samples in which the nutritional or functional characteristics were optimized together with the technological characteristics, resulting in higher acceptances. It was confirmed that sensory studies are indispensable to confront the challenge of developing sorghum-based foods with sensory characteristics desired by consumers. Therefore, it is concluded that it was possible to offer a gluten-free cake premix that presents good sensory quality, having the potential to be offered as a novelty by the food industry, given that most consumers stated that they did not know sorghum.  相似文献

Whole wheat products have gained popularity in recent years due to the health and nutritional benefits, with Asian salted noodles as one formulation. However, there is a general perception of decreased product quality and sensory acceptance of whole wheat noodles This study examined changes to sensory properties, texture (tensile and compressive strength), color, and cooking loss of noodles prepared from blends of wheat flour and bran that underwent five forms of hydro, thermal, pressure and their combined treatments: autoclaving, extrusion, jet-cooking, puffing, and roasting. Including the control (bran without processing) all six treatments were deemed palatable by sensory panel evaluation despite having statistically significant differences in physiochemical and sensory properties. For instance, 10 of the 22 sensory properties demonstrated significant differences among treatments. Bran processing tended to result in weaker (tensile and compressive strength) and stickier noodles while allowing for greater uptake of water during cooking.  相似文献

为优化青海传统蒙古奶茶加工工艺,提高其口感质量,以青砖茶、鲜牛乳为主要原料,赤砂糖和食盐为辅料,探究浸提料水比、浸提温度、浸提时间及牛乳、赤砂糖、食盐的添加比例对青海传统蒙古奶茶品质的影响。采用单因素试验、Plackeet-Burman(PB)试验设计、Box-Behnken试验设计,通过感官评定、茶多酚含量及稳定性分析得到蒙古奶茶的三个显著性因素,最佳工艺条件为:浸提时间90min,糖6%,盐0.4%。该配方下蒙古奶茶呈浅棕色液体,无分层,口感最佳,营养成分指标为:茶多酚330.27mg/kg,蛋白质0.69%,可溶性固形物14.7%,沉淀率3.24%,稳定系数0.905。此蒙古奶茶制备工艺可为该青海传统乳制品的工业化生产提供参考依据。  相似文献

[目的]分析烤烟复烤片烟在最佳醇化状态下化学成分与感官质量的关系。[方法]选取全国9个烟叶产区达到最佳醇化状态的60份复烤片烟作为试验材料,对化学成分、感官质量及烟气成分进行简单相关性分析。[结果]总糖、还原糖、烟碱、总氮、施木克值、糖碱比等与感官质量相关性显著,K、Cl等与各感官质量指标相关性不显著,浓度与各化学成分相关性不显著,烟气中CO与K、Cl相关性显著,烟气烟碱与各化学成分相关性显著。[结论]该研究可为卷烟加工企业更加合理的储存和使用烟叶提供依据。  相似文献

Brown rot (Monilinia spp.) affects the shelf life, fruit quality and marketability of peaches (Prunus persica L.). Increasing consumer concern regarding food safety makes it necessary to search for natural environmentally friendly alternative products for postharvest disease control. In this investigation, polyethylene terephthalate (PET) punnets containing thyme oil (TO sachets) and sealed with chitosan/boehmite nanocomposite lidding films significantly reduced the incidence and severity of brown rot caused by Monilinia laxa in artificially inoculated peach fruits (cv. Kakawa) held at 25 °C for 5 days. Furthermore, PET punnets containing TO sachets and sealed with chitosan/boehmite nanocomposite lidding films significantly reduced the brown rot incidence to 10% in naturally infected fruits stored at 0.5 °C, 90% RH for 7 days and at the simulated market shelf conditions for 3 days at 15 °C, 75% RH. The chitosan/boehmite nanocomposite lidding films maintained the active components of thyme oil, thymol (56.43% RA), caryophyllen (9.47% RA) and β-linalool (37.6% RA) within the (head space volatiles) punnet. Panellists preferred fruits packed from commercial punnet containing thyme oil (sachets) and sealed with chitosan/boehmite nanocomposite lidding films due to overall appearance, taste, and natural peach flavour.  相似文献

To maintain peach and nectarine quality after harvest, low temperature storage is used. Low temperatures induce physiological disorders in peach, but the effect of cold storage on the sensory quality of the fruit before it is damaged by chilling injury syndrome remains unclear. To evaluate the cold storage effect on the sensory quality two peach cultivars (’Royal Glory’ and ‘Elegant Lady’) and two nectarines (’Ruby Diamond’ and ‘Venus’) were harvested at a standardized firmness level and subjected to quality evaluations and sensory analysis at harvest and after storage at 0 °C for 35 d. For both time points, a supplementary ripening followed such that homogeneous flesh firmness and suitability for consumption was achieved.The fruit segregation through the Durofel firmness (DF), evaluated using a non-destructively method (Durofel device), allowed the formation of a uniform group of fruit in terms of flesh firmness (FF), showing scores between 45.1 and 55.9 N. The average FF in fruit ripened immediately after harvest was 22.9 N and 25.6 N in fruit ripened after cold storage for 35 d.The “acceptability” of fruit is highly correlated with “aroma”, “sweetness”, “juiciness”, “texture” and “flavor”. Only the “acid taste” parameter had no significant correlation with “acceptability” or with the other parameters evaluated.It is possible to conclude that the sensory quality and acceptability of peach and nectarine are characteristic of each cultivar and change, depending on the time elapsed after harvest. In general, it was confirmed that nectarine cultivars have a more consistent quality than peach cultivars.  相似文献

The effect of pulsed light at increasing fluence (17.5, 52.5, 105.0 and 157.5 kJ/m2) was studied with reference to germicidal efficiency and changes in fresh-like appearance of sliced apple. Independent of fluence, viable counts and inoculated bacteria were reduced by 1 and 3 logs respectively. Fluence significantly affected weight loss, colour and sensory attributes of apple slices during storage at 6 °C. Pulsed light at 17.5 kJ/m2 resulted in apple slices comparable to the untreated samples, with limited quality changes. By contrast, at higher fluence, apple slices underwent dehydration and browning due to loss of cell integrity. Exposure to high fluence treatments was also associated with negative changes in the flavour profile of sliced apple during storage.  相似文献
