以菠萝蜜种子为原料提取淀粉,以木薯淀粉、大米淀粉、玉米淀粉和马铃薯淀粉为参照,采用体外消化试验测定菠萝蜜种子淀粉的快速消化淀粉、慢消化淀粉和抗性淀粉含量,并进行酶解动力学实验。结果表明:菠萝蜜种子淀粉快速消化淀粉、慢消化淀粉和抗性淀粉的含量分别为4.50%、19.65%和75.85%,酶解速率为0.60 h-1,平衡浓度为36.93%,酶解指数为41.43,血糖指数为62.45,属于中等血糖食物;菠萝蜜种子淀粉消化性、平衡浓度、酶解指数与血糖指数均高于马铃薯淀粉,而低于其他三种淀粉,酶解速率比马铃薯淀粉、木薯淀粉快,比大米淀粉、玉米淀粉慢。   相似文献

胃肠仿生消化是研究食品营养学及药物代谢动力的重要方法。为实现胃肠仿生连续消化,对胃肠仿生消化装置进行了设计,本胃肠仿生模拟消化装置包括胃肠仿生消化桶及仿生模拟消化控制系统,设置了结构相同的中间腔体的胃仿生消化桶和肠仿生消化桶,外围设置有加热仓,消化桶上均设置有搅拌机构、玻璃观察窗、取样装置、酸液存储槽及碱液存储槽、pH传感器、加热管及温度传感器,二号消化桶右侧固定有控制系统单元的配电箱。装置便于实现胃肠仿生模拟消化过程pH值、温度和搅拌速度的控制与调整,以及消化液的取样分析及消化过程的观察监测,可用于食品营养基质或生物活性物质的仿生消化情况的监测。  相似文献

预酶解-滚筒干燥加工工艺对全麦片品质的影响   总被引:1,自引:0,他引:1  
【目的】探讨预酶解-滚筒干燥处理对全麦片品质特性的影响,为高品质全麦片的加工提供理论依据。【方法】以小麦全粉为原料,采用α-淀粉酶、纤维素酶及其复合酶进行预酶解-滚筒干燥制备全麦片:未经预酶解处理直接滚筒干燥全麦片(drum-dried whole wheat groats,DWG),α-淀粉酶-滚筒干燥速食全麦片(drum-dried whole wheat groats with α-Amylase,DWGA),纤维素酶-滚筒干燥速食全麦片(drum-dried whole wheat groats with cellulase,DWGC),α-淀粉酶-纤维素酶-滚筒干燥速食全麦片(drum-dried whole wheat groats with α-Amylase and cellulase,DWGAC),以及以小麦精粉为原材料制备直接滚筒干燥精麦片(drum-dried refined wheat groats,DRG),分别测定其复水性速率、结块率、水溶性指数、吸水性指数、糊化度、黏度、色度,淀粉、还原糖、植酸含量、淀粉和蛋白质消化特性等指标,比较并分析预酶解-滚筒干燥对全麦片品质特性的影响。【结果】预酶解-滚筒干燥处理能显著改善全麦片的冲调性,其中DWG样品复水速率最低,DWGAC复水速率最高,与对照样品DWG相比,DWGA、DWGC、DWGAC的结块率显著降低。预酶解-滚筒干燥处理显著提高了全麦片的溶解性,其中DWGA、DWGC、DWGAC相比于DWG水溶性指数分别提高了4.98、2.07和5.04倍。同时,预酶解-滚筒干燥处理使全麦片的淀粉、植酸含量显著降低(P<0.05),还原糖含量和糊化度显著升高(P<0.05),适当降低了全麦片的色度。此外,预酶解-滚筒干燥处理使全麦片中快消化淀粉比例显著提高,快消化淀粉含量分别比对照增长了22.34%、34.84%和46.59%,其中DWGAC快消化淀粉含量最高;蛋白质体外消化速率加快,蛋白质体外消化率分别提高了0.33、0.25、0.26倍,消化率升高。【结论】预酶解-滚筒干燥处理提高了全麦片的冲调分散性,降低了结块率和黏度,提高了淀粉和蛋白质体外消化性能,对全麦片品质有提升作用。  相似文献

The effects of six extruded diets with different starch sources (cassava flour, brewer's rice, corn, sorghum, peas or lentils) on dog total tract apparent digestibility and glycemic and insulinemic response were investigated. The experiment was carried out on thirty-six dogs with six dogs per diet in a completely randomized design. The diets containing brewer's rice and cassava flour presented the greatest digestibility of dry matter, organic matter and gross energy (p < 0.05), followed by corn and sorghum; pea and lentil diets had the lowest. Starch digestibility was greater than 98% in all diets and was greater for brewer's rice and cassava flour than for lentils and peas diets (p < 0.05). Dogs' immediate post-prandial glucose and insulin responses (AUC < or = 30 min) were greater for brewer's rice, corn, and cassava flour diets (p < 0.05), and later meal responses (AUC > or = 30 min) were greater for sorghum, lentil and pea diets (p < 0.05). Variations in diet digestibility and post-prandial response can be explained by differences in chemical composition of each starch source including fibre content and starch granule structure. The nutritional particularities of each starch ingredient can be explored through diet formulations designed to modulate glycemic response. 本试验旨在探讨猪仿生消化中小肠阶段主要消化酶的组成及活性对饲粮养分消化率的贡献,为仿生消化法评定猪饲粮养分的消化率提供参考。试验采用单因素完全随机设计,5个处理分别为胃模拟消化、胃+小肠(淀粉酶)模拟消化、胃+小肠(淀粉酶+糜蛋白酶)模拟消化、胃+小肠(淀粉酶+糜蛋白酶+胰蛋白酶)模拟消化、胃+小肠(淀粉酶+糜蛋白酶+胰蛋白酶+小肠消化4 h时补充消化酶)模拟消化,每个处理5个重复,每个重复1根消化管。考察各处理条件下玉米、豆粕、小麦麸及玉米-豆粕型饲粮的干物质、粗蛋白质及总能消化率的差异和各消化酶的贡献。结果表明:1)模拟小肠液中淀粉酶、糜蛋白酶均可显著提高胃消化后玉米、豆粕、小麦麸及玉米-豆粕型饲粮的干物质、粗蛋白质以及总能的消化率(P<0.05);胰蛋白酶可以进一步提高胃消化后豆粕、小麦麸的干物质、粗蛋白质以及总能消化率(P<0.05);补充3种消化酶可以提高对小麦麸粗蛋白质及玉米-豆粕型饲粮干物质、粗蛋白质及总能的消化率(P<0.05)。2)小肠液中消化酶对饲粮养分消化率的贡献上,因饲粮底物的不同而异,其中淀粉酶、糜蛋白酶对总能和粗蛋白质消化率的贡献相对较高,而胰蛋白酶和补充消化酶对饲粮养分消化率的贡献虽然相对较少,但也可以引起消化率显著性差异(P<0.05)。在猪的小肠模拟消化阶段,淀粉酶、糜蛋白酶、胰蛋白酶及补充消化酶对饲粮养分的消化程度均有显著性贡献。  相似文献

Rumen digesta was obtained from wild Hokkaido sika deer to compare bacterial flora between summer and winter. Bacterial flora was characterized with molecular‐based approaches and enrichment cultivation. Bacteroidetes was shown as a major phylum followed by Firmicutes, with similar proportions in both seasons. However, two phylogenetically unique groups in Bacteroidetes were found in each season: unknown group A in winter and unknown group B in summer. The ruminal abundance of unknown group A was the highest followed by Ruminococcus flavefaciens in winter. Moreover, the abundance of these two was higher in winter than in summer. In contrast, the abundance of unknown group B was higher in summer than in winter. In addition, this group showed the highest abundance in summer among the bacteria quantified. Unknown group A was successfully enriched by cultivating with oak bark and sterilized rumen fluid, particularly that from deer. Bacteria of this group were distributed in association with the solid rather than the liquid rumen fraction, and were detected as small cocci. Accordingly, unknown group A is assumed to be involved in degradation of fibrous materials. These results suggest that wild Hokkaido sika deer develop a rumen bacterial flora in response to changes in dietary conditions.  相似文献

1. A 2 × 2 factorial design was used to test the hypothesis that impaired intestinal starch digestibility is attributable to rapid passage of digesta from the gizzard to the intestine, and that, compared to steam pelleting, increasing the availability of starch through extrusion cooking may alleviate the potential negative effect of rapid digesta flow on starch utilisation.

2. Thus, 7-d-old-broiler chickens were distributed to 48 cages and given a wheat-based (WB) pelleted diet containing either coarse oat hulls (OH-Pel) or fine cellulose (Cel-Pel) until d 19 to stimulate divergent development of the gizzard. Thereafter, both groups were further subdivided and challenged with a WB diet containing cellulose in either pelleted (Cel-Pel) or extruded (Cel-Ext) form on d 20 and 22. Either excreta or intestinal contents were collected at time intervals after feeding and analysed for marker and starch.

3. OH-Pel increased gizzard size and holding capacity. No excessively high starch levels (maximum 25 g/kg) were detected in the excreta. However, 8 h feed-deprived birds given Cel-Pel and challenged with Cel-Pel exhibited higher starch excretion and showed large individual variation during the first 135 min of collection.

4. Contrary to the OH-Pel group, more digesta and starch passed to the jejunum at 1 and 2 h and ileum at 2 and 3 h after feeding for birds given Cel-Pel, resulting in lower jejunal and ileal starch digestibility.

5. Increased starch gelatinisation through extrusion processing significantly improved starch digestibility regardless of gizzard function. However, at 1, 2 and 3 h after feeding, more digesta was retained in the foregut of birds given Cel-Ext.

6. The current data showed that starch degradation rate is associated with the flow of digesta which is linked to gizzard development, and that enzymatic hydrolysis of intact starch granules may be limited with more rapid feed passage through the gut.  相似文献
