为了研究益生菌发酵乳无菌提取物对食源性有害微生物(空肠弯曲杆菌)有毒基因表达的抑制作用,以利用空肠弯曲杆菌的有毒基因flaA σ28启动子和无启动子的质粒pRYluxCDABE联结构建的生物冷光转基因模型为试验材料,通过检测生物发光特性的方法,研究了空肠弯曲杆菌有毒基因flaA表达与益生菌(5种双岐杆菌,6种乳酸杆菌)发酵乳无菌提取物之间的关系。结果表明,益生菌发酵乳无菌提取物对空肠弯曲杆菌flaA σ28启动子的活性有显著的抑制作用(P<0.05),并可显著抑制空肠弯曲杆菌有害基因flaA的表达。  相似文献

[目的]以实验室前期从驼乳中分离得到的乳明串珠菌、副干酪乳杆菌为对象,并通过体外实验对发酵驼乳抑制α-淀粉酶和α-葡萄糖苷酶活性以及抗氧化能力进行测定。[方法]以α-淀粉酶抑制率和α-葡萄糖苷酶抑制率为考察指标,在单因素试验的基础上,采用正交试验优化发酵驼乳的参数条件。测定在不同储藏时间下试验组乳明串珠菌、副干酪乳杆菌发酵驼乳、对照组乳明串珠菌、副干酪乳杆菌发酵牛乳和嗜热链球菌、保加利亚乳杆菌发酵驼乳pH值、酸度、活菌数、α-淀粉酶抑制率、α-葡萄糖苷酶抑制率、羟自由基和超氧阴离子自由基清除率的变化。[结果]驼乳发酵的最佳工艺条件为乳明串珠菌∶副干酪乳杆菌比例2∶3、接种量2%、发酵温度39 ℃,发酵时间24 h,此条件下测得对α-淀粉酶和α-葡萄糖苷酶的抑制率分别达到87.20%和20.85%,与未优化前相比,α-淀粉酶的抑制率提高14.10%,α-葡萄糖苷酶抑制率提高4.4%。在4 ℃储藏期间发酵驼乳α-淀粉酶抑制率在第6d时最高为90.39%,对α-葡萄糖苷酶的抑制率最高为36.32%,抑制率显著高于对照组。各组对羟自由基的清除率达到70%以上,最高为94.91%,超氧阴离子自由基清除率最高达到78.10%,整个测定过程中试验组的抗氧化活性均显著高于对照组。[结论]经乳酸菌发酵驼乳抑制α-淀粉酶和α-葡萄糖苷酶活性提高,在储藏期间抗氧化活性显著高于对照组(P<0.05)。  相似文献

一种含有竹叶黄酮的复配型肉类食品添加剂的开发   总被引:5,自引:0,他引:5  
通过竹叶黄酮和异Vc钠的系列复配应用试验,得到了一种性能优越的肉类食品添加剂.实验选用中式香肠体系,通过测定过氧化值(POV)、酸价(AV)和亚硝酸盐含量,辅以感官评定等手段,评价此复合抗氧化剂的抗氧性能以及对产品风味和质量的整体影响.结果表明,在原配方的基础上,硝酸盐或亚硝酸盐减半使用,同时添加0.01%的竹叶黄酮和0.05%的异Vc钠,能显著抑制香肠的脂质过氧化,延长产品保质期,降低产品中亚硝酸盐的含量,同时维持并改善中式香肠应有的感官品质.竹叶黄酮在有效发挥抗氧化作用的同时,部分替代了具有潜在致癌作用的发色剂,提高了制品的安全性,是一种十分有前途的肉类食品添加剂.  相似文献

本试验旨在研究无抗发酵饲料对生长育肥猪生长性能、肠道菌群和养分表观消化率的影响。选择18 kg左右断奶仔猪60头,随机分为2个组,每组3个重复,每个重复10头猪。对照组饲喂含抗生素基础饲粮(每千克含黄霉素5 mg),试验组饲喂80%基础饲粮和20%的无抗发酵饲料组成的试验饲粮。试验期154 d。结果表明:1)试验组的末重、平均日增重和平均日采食量都显著高于对照组(P0.05),而料重比则显著低于对照组(P0.05)。2)试验组中期和后期的乳酸菌数量的对数值显著高于对照组(P0.05),而试验组中期和后期的大肠杆菌和沙门氏菌数量的对数值显著低于对照组(P0.05)。3)在十二指肠肠段,试验组肠道食糜中的乳酸菌和大肠杆菌数量的对数值显著高于对照组(P0.05)。4)在十二指肠肠段,试验组肠道每克和每平方厘米黏膜的乳酸菌数量的对数值显著高于对照组(P0.05);试验组肠道每克黏膜的大肠杆菌数量的对数值显著高于对照组(P0.05)。在空肠肠段,试验组肠道每克和每平方厘米黏膜的乳酸菌数量的对数值显著高于对照组(P0.05)。5)试验组的粗蛋白质和粗纤维的表观消化率显著高于对照组(P0.05)。由此可见,无抗发酵饲料能提高生长育肥猪的生长性能,改善肠道微生物平衡,增强消化能力。  相似文献

This experiment was conducted to investigate the effect of soybean meal replaced by brewer's grain (BSG) or fermented brewer's grain (FBSG) on growth performance,immune organ index and intestinal flora of meat geese.A total of 250 geese at 28 days of age were randomly assigned to 5 groups with 5 replicates per group and 10 geese per replicate.The geese in control group were fed a basal diet (with soybean);The geese in groups 1 and 2 were fed the basal diet with the 10% and 20% BSG replacing the soybean,respectively;The geese in groups 3 and 4 were fed the basal diet with the 10% and 20% FBSG replacing the soybean,respectively.The whole experiment period was 42 days,including three phases:15 d (early stage),14 d (middle stage) and 14 d (later stage).The results showed as follows:①From the whole experiment period,compared with control group,the ADG of geese in group 1 was significantly increased (P<0.05),the ADG and ADFI of geese in group 4 were significantly decreased (P<0.05),there were no obvious change in growth performance of geese in groups 2 and 3 (P>0.05).② Compared with control group,the thymus index and spleen index of geese in groups 1,2 and 3 were extremely significantly increased at early stage (P<0.01);At middle and later stages,the spleen index of geese in group 2 were significantly and extremely significantly increased (P<0.05;P<0.01);There were no significant differences in bursa of fabricius index of geese among all groups (P>0.05).③ Compared with control group,the number of Escherichia coli and Salmonella in cecum in groups 1 and 2 were extremely significantly decreased at early and later stages (P<0.01),while the number of Bifidobacteria and Lactobacillus were increased in different degrees;the number of Bifidobacteria and Lactobacillus in cecum in groups 3 and 4 were extremely significantly increased at later stage (P<0.01).In conclusion,10% BSG replacing soybean in the basal diet could improve the growth performance and intestinal flora of meat geese;10% FBSG replacing soybean in the basal diet could promote the growth of beneficial bacteria of meat geese,but had no effect on growth performance;While 20% replacing soybean in the basal diet could decrease the feed intake and weight gain of meat geese,hinder its growth and development.  相似文献

采用荷叶、山楂、菊花、决明子、莱菔子和沙棘具有降脂减肥作用的药食同源中药材为原料,组方经水提取后接种酿酒酵母,通过发酵改善风味,制作植物饮料.结果表明,水提取液添加白砂糖50 g/L,在三角瓶及30 L发酵罐中于21℃下经6d发酵,最终植物饮料总糖含量约26 g/L,可得到口感良好、风味独特的天然植物发酵饮料.  相似文献

The objective of this study was to evaluate of the growth performance, serum biochemical indices, liver antioxidant parameters and ability of anti-infection with Aeromonas hydrophila by adding the fermented Chinese medicine by Bacillus Subtilis to the carp fish feed, and to find out the appropriate supplemental level of fermented Chinese medicine in diets. Carp fingerling with an initial body weight of (35±0.5) g were set up to 6 experimental diets supplemented with 0 (control group), 0.1‰, 0.5‰, 1‰, 2‰ and 3‰ fermented Chinese medicine for 56 days, respectively. Each group had 30 fish and set up 3 repetitions. After the feeding trail,the fish were challenged with Aeromonas hydrophila to calculate the relative percentage survival (RPS).The results showed as follows:Supplementing fermented traditional Chinese medicine by Bacillus subtilis, the weight gain rate (WGR), specific growth rate (SGR), condition factor (CF), the activities of lysozyme (LSZ), complement 3 (C3),total protein (TP),total anti-oxidation capacity (T-AOC),total superoxide dismutase (T-SOD) and catalase (CAT) in serum of common carp were enhanced at different degrees, while the feed coefficient (FCR)and malondialdehyde (MDA) in serum were declined at different degrees.When the fermented Chinese medicine supplemental levels were 2‰ and 3‰,the effects were significant (P<0.05)(except for C3, ALP and Cr).The experimental results of the virulence of common carp infected with pathogen Aeromonas hydrophila showed that,the fermented herbal could obviously improve the ability of anti-infection, the immune protective rate of the group with 2‰, 3‰ doses of the fermented Chinese medicine could reach 77.23% and 74.63%, respectively. From what had been discussed above, the group with 2‰ and 3‰ doses of the fermented Chinese medicine had significant effect on the growth performance, serum biochemical indices, liver antioxidant parameters and Aeromonas hydrophila anti-infection ability. Considering the cost of adding fermented Chinese medicine, the recommendations for the best additive quantity was 2‰.  相似文献

本文通过体外消化来模拟消化系统以研究乳及发酵乳对FeCl3中铁的化学状态及透析率的影响,结果表明,在消化过程中乳及发醇乳可促进铁的溶解、以及Fe3 的还原和铁的透析,这一作用与样品的pH元失,认为是消化过程中产生的氨基酸和肽起了作用。研究还发现,原乳先加铁盐再送行发酵所产生的作用要较发醇后再加铁盐的作用大,认为发醇乳对铁化学状态及透析率的影响具有时间效应。此外,有乳存在的各试验组其Fe3 透析率较可溶性铁的透析率与对照组差异更大。  相似文献
