Biquara is one of the main fish species caught in the northeast coast of Brazil but presents low commercial value. Therefore, the elaboration of biquara-based products with the addition of plant bran as a source of dietary fiber should be studied as a way to add value to biquara. The objective of the present study was to evaluate the physicochemical, microbiological, and sensory aspects of fishburgers made with biquara fillet with the addition of wheat bran (WB) (0, 1, 2, and 3%). The increase in WB decreased moisture and increased protein levels, ash, fiber, carbohydrates, and energy value. In addition, the inclusion of WB increased the cooking shrinkage and decreased hardness and cohesiveness of the samples. The fishburgers with the greatest WB levels presented a reddish-yellow hue. The microbial counts of the products were below the maximum limit allowed by the Brazilian legislation. The overall acceptance of the fishburgers improved with the addition of 0 to 2% WB. Therefore, the biquara fillets have a potential for the elaboration of fishburgers with the addition of 2% WB, once the products presented suitable physicochemical composition, sensory acceptance, and hygienic sanitary control according to the current national legislation. 相似文献

Genetics and harvest size influence fish growth performance and product quality attributes, making selection of fish strain and harvest size critical for optimizing quality. Definition of performance and quality outcomes in a recirculating aquaculture system (RAS) environment may guide selection of fish stocks best suited for RAS farmers to meet production and product quality goals. Accordingly, five genetic lines of rainbow trout, Oncorhynchus mykiss were reared to 3 kg in a partial water reuse system and sampled at common harvest sizes (0.5, 1, 2 and 3 kg) to compare growth performance and product quality attributes. Fish weight affected fish processing yields and cook yields. Genetic line affected fish weight. When correcting for fish size, differences in fillet yields due to genetic line were present. Both fish weight and genetic line affected different organ indices, fillet colour scores and mortality. Muscle composition and texture were similar at each harvest, but changed with increasing fish size over time. Differences in growth performance and product quality traits due to genetic line identify variation in available fish stocks, and balancing change to these traits due to fish size can guide producer selection of fish stocks and optimal harvest size to meet individual production goals. 相似文献

The relationship between color change and other physical and chemical characteristics of sliced cooked cured beef (SCCB ) during chilled storage were investigated using principal components analysis (PCA ) to determine the color fading causes. Samples were prepared and stored at 8°C for up to 35 days in a vacuum package to simulate a supermarket storage environment; related indicators were measured periodically every week. The results showed that the first PC explained 59.82% of the total variation, and the second explained 22.28%. PC 1 was a concentrated reflection of color changes of SCCB during storage and PC 2 was an environment factor causing the change of color. The change in apparent redness is mainly caused by redox reaction of the nitroso hemochromogen (NH ) (eigenvectors of a* , C and NH in PC 1 were all the maximum value of 0.28); a* was correlated with NH (0.96), free sulfhydryls (0.98), carbonyl derivatives (?0.95) formed during protein oxidation, and malondialdehyde (?0.98) and dienes (?0.92) formed by lipid oxidation. Color fading was significantly correlated with oxidizing and reducing power, existing forms of nitrogen and with the pH of the meat matrix. [目的]针对某机构出口水产品检验检疫风险管理中存在的问题,尝试建立故障模式和影响分析模型(FMEA),用于出口水产品检验检疫风险管理。[方法]针对检验检疫流程中的每一个过程,确定可能发生的故障模式,分析并列出可能由其带来的故障影响;采用特尔斐法和头脑风暴法确定风险事件发生频率、严重程度和可探测度的赋值规则并进行量化赋值,得到风险优先数(RPN),最终得到风险评价结果,并提出风险应对方式、风险管理保障措施及管理策略。[结果]构建的FMEA风险分析模型,可通过电子信息载体将风险分析结果和发现的风险点转化成风险参数,直接、快速、有效地作用于检验检疫流程。[结论]FMEA模型可有效提升出口水产品检验检疫风险管理水平,促进我国水产品外贸发展。 相似文献

基于生命周期评价法,根据工厂搜集的基础数据清单,采用GaBi6.0软件分析了1 m3井干式木结构墙体产品物化过程(从原材料开采到产品出厂的生命周期)的原材料消耗、能源消耗和环境负荷,并利用软件提供的CML2001评价方法和数据库评价了墙体产品生命周期范围内造成的环境影响。结果表明:1)生产1 m3墙体产品,全球变暖潜值、人体毒性、环境酸化、富营养化、光化学臭氧生成潜力和非生物资源耗竭的加权后结果(绝对值)依次为3.50×10-9、2.11×10-9、1.38×10-10、1.38×10-10、2.33×10-11、1.30×10-12,其中全球变暖潜值和人体毒性是墙体产品环境影响的主要类型,分别占环境影响总值的59.2%和35.7%;2)墙体产品从原材料获取到产品出厂可分为原材料获取、集成材制造、墙体制造和油漆与包装这4个阶段,4个阶段的环境影响结果(绝对值)分别为2.40×10-9、7.32×10-10、4.25×10-10、7.20×10-11,原材料获取阶段为环境影响的主要阶段;3)除去原材料获取阶段木材固定大量CO2对环境的积极影响,在环境污染方面,人体毒性占总环境影响的35.7%,占污染的绝大部分,人体毒性主要由原材料获取、集成材制造和墙体制造这3个阶段贡献,且主要由这3个阶段的木材加工粉尘和电能使用造成。 相似文献

Rice seed deterioration rate due to aging is correlated with ambient temperature, relative humidity, and moisture. Eight cultivars were analyzed for differences in seed deterioration via accelerated ageing at 45°C and 100% relative humidity (RH) for 24, 48, 72, 96, 120 hr. Khazar and Neda had highest germination percentages when exposed to 120 hr seed ageing. For Lenjan, with increased seed ageing, moisture content increased from 9.8% in the control to 21.7% after the 120 hr treatment. Khazar and Shiroudi had the lowest decrease in shoot length. Root length decreased from 0 hr control to 120 hr treatment, and was lowest in Fajr and Khazar. Minimum electrical conductivity was observed in Neda and Fajr after 120 hr. Lowest increases in lipid peroxidation from control to 120 hr treatment was in Fajr, Khazar, and Neda. Neda and Khazar are the most suitable cultivars to store in the humid, sub-tropics of northern Iran. 相似文献
