水洗结合pH值调整对鸡肉糜低盐热凝胶特性的影响 总被引:1,自引:0,他引:1
为解决肉糜类产品含盐量偏高而降低食盐添加量又影响其凝胶特性的技术难题,研究水洗结合pH值调整处理对0.88%食盐含量鸡胸肉糜热凝胶的质构特性、水分吸附和保水性的影响,并与0.15%和2.5%食盐添加量组进行对比。结果表明:水洗结合pH值调整不利于2.5%食盐组样品的质构特性,但对0.15%和0.88%食盐组的改善效果显著;pH值调整可显著增强0.15%和0.88%食盐组水洗肉糜的溶胀和凝胶保水性。2×2析因分析发现水洗和pH值调整具有显著的主效应和交互效应(P<0.05):两两比较后得出水洗组和pH值调整组的假设检验统计量(t值)为4.69,而水洗结合pH值调整组与未处理组的t值为30.25,P值均小于0.001。这些结果说明水洗结合pH值调整处理的新工艺可以使肌肉蛋白形成具有良好质构特性和保水性的低盐热凝胶,从而为低盐肉糜类产品的研发提供参考。 相似文献

目的分析通过刺络拔罐配合静力练习治疗急性踝关节扭伤的临床疗效。方法收集2009年-2013年病例共71例,根据治疗方案随机分为观察组36例、对照组35例,观察组采用刺络拔罐配合静力练习治疗,对照组采用单纯刺络拔罐治疗。7 d为1个疗程,1个疗程后观察疗效,2个月后复查或随访患者,评价踝关节Kofoed评分。结果两组治疗后临床疗效比较,差异有统计学意义(P<0.05)。2个月后评价踝关节Kofoed评分,观察组与对照组比较,差异有统计学意义(P<0.05)。结论急性踝关节扭伤通过刺络拔罐配合静力练习治疗效果优于单纯刺络拔罐治疗。 相似文献

The Pocono mesic till barrens (PMTB) are a unique assemblage of fire-maintained shrub communities that support numerous rare species. Historically these barrens covered a large area in the vicinity of Long Pond, Pennsylvania, USA. However, due largely to regional fire suppression instituted in the early 1960s, over 70% of the area covered by barrens succeeded to fire-intolerant forest that does not support the rare species. We investigated the influence of forest proximity on barrens succession across three geomorphic types during periods of high fire frequency and fire suppression, testing the hypothesis that forest processes such as seed rain, shading, and detrital enrichment of soils enhances barrens succession through a contagion effect. Evidence of a forest contagion effect should be shown by increased rates of barrens succession with increasing proximity to the nearest forest edge. In order to detect a forest contagion effect, barrens persistence and barrens succession were modeled in proximity zones of 0-50 m, 50-100 m, 100-200 m, and greater than 200 m from the nearest forest edge. We used existing GIS data layers for fire, geomorphology, and vegetation distribution in 1938, 1963, and 1992. The layers were modified and overlain using ArcView software to determine persistence and succession rates for each unique combination of layers in each proximity zone from 1938 to 1963 (pre-fire suppression) and 1963 to 1992 (post-fire suppression). ANCOVA results indicate that proximity to the nearest forest edge significantly affected barrens persistence rates in both time periods, but succession rates were significantly affected in 1938 to 1963 only. Twenty-eight percent of the 1938 barrens succeeded to forest by 1963; 56% of the 1963 barrens became forest by 1992. Results support previous findings that barrens persistence is enhanced by increased fire frequency, and that barrens persist longer where they overlie flat glacial till than on other geomorphology types. 相似文献

Hymenopterous parasitoids play an important role in the control of insect populations. During oviposition, Hymenopterous parasitoids use cues such as odours from their environment to locate their specific host. Leptopilina heterotoma (parasitoid of Drosophila larvae) locate their host by probing the substrate with the ovipositor. This behaviour can be induced by the odour of the host substrate alone. We analysed the sub-lethal effects of chlorpyrifos at LD20 on the probing activity in response to a fruit odour (banana). The insecticide increased the percentage of females spontaneously probing in response to the odour. Parasitoid females were then conditioned to associate banana odour with the oviposition in host larvae. This conditioning enables parasitoids to memorize the odour and to increase their probing response to this odour. During the olfactory conditioning, females exposed to the insecticide found and oviposited in host larvae more quickly than control females. One hour after the olfactory conditioning, females exposed to the insecticide presented a higher increase of their probing response to the odour than controls. Twenty-four hours after conditioning, the stimulation produced by chlorpyrifos was no longer perceptible, but the level of response of conditioned females was still higher than that of non-conditioned females, showing that odour memory was not impaired by the insecticide treatment. Abstract – Temperature fluctuation has been shown to affect somatic growth rates and metabolic functions of fish, but little is known about the effects of fluctuating temperatures on life-history traits. We examined these effects on female Japanese medaka ( Oryzias latipes ) reared from hatch to maturity at two mean temperatures (27 and 30 °C) with diel temperatures either held constant or allowed to fluctuate ±5 °C. Feeding regimes were manipulated to equilibrate medaka growth rates in all treatments. Age and length at maturity decreased as a result of thermal fluctuation, whereas there was no effect of temperature fluctuation on the proportion of fish attaining maturity or on the number of eggs produced by a mature female. We hypothesise that short-term high temperatures associated with temperature fluctuation decreases development time, whereas reduced energy conversion efficiency at higher temperatures does not allow for increased egg production. 相似文献
