The odor-active substances in a fish soup cooked with scallions, ginger, and cooking wine were extracted by solid-phase micro-extraction and analyzed by gas chromatography–olfactometry–mass spectrometry. The results of sensory evaluation indicate that the three seasonings—scallions, ginger, and cooking wine—reduced the fishy odor. Further, the effect of cooking wine or scallions was better than ginger. The main odorants of scallions, ginger, and cooking wine that reduced the fishy odor by masking the odor were detected. The main odorants in the scallions-treated sample were isovaleraldehyde, nonanal, alloaromadendrene, and dipropyl disulfide. The main odorants in the ginger-treated sample were sesquiterpenes, olefins, aldehydes, alcohols, and ketones. The main odorants in the cooking wine-treated sample were (E)-2-heptenal, decanal, copaene, and terpinen-4-ol.  相似文献

The North Chinese leopard (Panthera pardus japonensis), the least-known big cat, disappeared in most historical range for decades, following the development of modern civilization. Unfortunately, we have scarce knowledge about the status of this big cat so far, apart from anecdotal reports. In this study, we investigated density, distribution, and habitat use of the leopard, the apex predator, in a complex forest landscape in the Loess Plateau. We used a camera-trapping network to obtain population estimates for leopards over 2 years through spatially explicit capture–recapture models. Our results, based on maximum likelihood and Bayesian/MCMC methods, reveal that the largest wild population of the leopard was found widely distributed in remnant forests in central Loess plateau. The population is increasing in our study area, and the density of leopards (1.70 (SE = 0.48) − 2.40 (SE = 0.67)/100 km2) is higher than other areas of China. According to the analysis of 2 seasonal occupancy models, prey species drive partially the leopard habitat use, predicting that the big cat thrives from the recovery of prey community. However, human disturbances, especially oil wells, seem to have negative impacts on the habitat use of leopards. Specifically, it is necessary to have joint efforts by the government and researchers to improve human disturbances management and prey species population density, as well as strengthen the investment in research on the North Chinese leopard, which could all further strengthen protection ability and ensure the long-term survival of this species.  相似文献

  1. Dosidicus gigas is an ecologically and economically important squid species extensively distributed in the eastern Pacific Ocean. Its habitat is extremely sensitive to climatic and environmental variability.
  2. The relationship between habitat pattern of D. gigas and El Niño–Southern Oscillation (ENSO, divided into the El Niño, ENSO-neutral, and La Niña events) was assessed from 1950 to 2015, using a habitat suitability index (HSI) modelling approach including two crucial environmental variables: sea surface temperature (SST) and sea surface height anomaly (SSHA).
  3. On the basis of cross-correlation analysis, it showed that both SST anomaly and SSHA were significantly positively related to the ENSO index. Moreover, a significantly negative association was found between the HSI values and the ENSO index.
  4. Due to the El Niño events, SST off Peru became higher and sea level rose, resulting in contracted areas of suitable SST and SSHA; consequently, suitable habitats for D. gigas dramatically decreased. In contrast, during the ENSO-neutral and La Niña years, the extent of suitable SST and SSHA increased due to the colder water and lower sea level, and suitable habitat for D. gigas expanded.
  5. Moreover, the latitudinal gravity centre of HSI was significantly positively associated with the ENSO index. Relative to the ENSO-neutral and La Niña years, a southward movement of the monthly preferred SST isotherm for D. gigas during the El Niño years could explain the occurrence of more suitable habitats in southern waters off Peru.
  6. These findings suggested that the ENSO event plays an important role in regulating environmental conditions off Peru and further affected the spatio-temporal distribution of D. gigas habitat.

利用燕麦和黄豆原料,通过根霉Q303和米曲霉AS3.042微生物发酵,制备麦酱原醅,再与碎鲜辣椒混合,加入泡菜发酵液进行发酵,制备低盐风味麦辣酱。采用单因素和正交试验方法,对低盐风味麦辣酱的工艺参数进行了研究。结果表明:麦酱制醅的最佳条件为:根霉Q303、米曲霉AS3.042的接种量3‰、温度28℃、时间48 h;麦酱酱醅后熟温度45℃、后熟时间10 d、盐质量分数7%;低盐风味麦辣酱的最佳质量配比为麦酱∶碎鲜辣椒=1∶1、接种5%的泡菜发酵液、发酵温度为28℃、发酵时间5 d。  相似文献

Sorghum (Sorghum bicolor L.) is a gluten-free cereal that has the highest content of phenolic compounds among cereals. It needs to be processed prior to use for human consumption, which may change its antioxidant profile. The knowledge on the effects of extrusion and dry heat in a conventional oven on flavones, flavanones, and proanthocyanidins is limited. Thus, the content and stability to dry heat in a conventional oven (DHCO) and extrusion cooking on phenolic compounds profile in sorghum genotypes were evaluated. Flavanones and flavones decreased after extrusion cooking (100%) and DHCO (31.7–61.6%). The 3-deoxyanthocyanidins were stable in DHCO but were susceptible to extrusion cooking (70.7–93.9%). Proanthocyanidins were identified only in the genotype SC391 and were reduced after both treatments (DHCO: 39.2% and extrusion cooking: 52.1%). Phenols decreased in the genotype SC319 submitted to DHCO (8.3%) and in all extruded genotypes (13.6–14.9%). The DHCO increased the antioxidant capacity in all genotypes, whereas extrusion cooking reduced antioxidant capacity in only two genotypes. In general, differential stability of the major flavonoids in sorghum was observed under DHCO and extrusion cooking, implying that different processing techniques can be selected to minimize losses of bioactive polyphenols in sorghum depending on the flavonoid composition.  相似文献

Nitrogen fertilizer is applied to supplement soil nitrogen supply to maximize forage brassica crop dry-matter production. However, nitrogen fertilizer applications in excess of that required to maximize growth result in potentially toxic nitrate–nitrogen (NO3–N) concentrations in grazeable plant tissues. Three experiments, two for forage kale at Lincoln (Canterbury) and one for forage rape at Hastings (Hawke's Bay) in New Zealand were grown under different rates of nitrogen (0–500 kg N ha−1) to determine the effect of different rates of nitrogen on NO3–N content of different plant parts of the crops. One of the kale experiments was grown with either full irrigation or no rain and no irrigation over summer, hereafter referred to as summer drought. The NO3–N concentration on a whole plant (weighted average) basis increased from 0·1 mg g−1 dry matter for the control plots to 2·30 mg g−1 for the 500 kg N ha−1 plots for forage kale. It increased from 0·99 for the control plots to 3·37 mg g−1 for the 200 kg N ha−1 plots for forage rape crops. However, NO3–N concentration increased with N supply under the summer-drought plots from an average of 0·33 mg g−1 when ≤120 kg N ha−1 was applied to 2·30 mg g−1 for the 240 kg N ha−1 treatments but was unaffected by N supply under irrigation. The NO3–N concentrations were higher in the stems and the petiole (which included the midrib of the leaf) than leaves in all three experiments. The NO3–N concentration was highest at the bottom of the kale stem and decreased towards the top. We recommend N application rates based on soil tests results, and for conditions similar to the current studies up to 300 kg N ha−1 under irrigation and adjusted lower N rates for regions prone to dry summers.  相似文献

Yam crops (Dioscorea spp.) present a very high and unexplained interplant variability which hinders attempts at intensification. This paper aims to characterize the plant-to-plant variability in yield and to identify its underlying causes for the two major yam species (Dioscorea alata and Dioscorea rotundata). Four field experiments were carried out between 2006 and 2009 in Benin. Yams were grown using a traditional cropping method (i.e. in mounds at 0.7 plants m−2) without biotic or abiotic stresses. In order to test interplant competition, a low density treatment (0.08 plants m−2) was included for D. alata in the 2006 experiment. Throughout four years of experimentation, yields varied from 12 Mg ha−1 to 21 Mg ha−1. Both yam species presented a high interplant coefficient of variation (CV) for tuber yield (42–71%). The unbiased Gini coefficient (G′) was used to measure how steep a hierarchy is in an absolute sense. CV and G′ of individual plant biomass both confirm clear plant size hierarchies from early growth. However, no difference in the CV of plant size and plant tuber yield was observed between high and low plant density. This implies that, despite early interaction between neighbouring plants, competition was not the driving factor controlling plant variability. In fact uneven emergence proved to be the primary cause. Yam emergence takes place over a long period (e.g. it took 51 and 47 days for the 90% central range to emerge for D. alata and D. rotundata, respectively), creating an early inter-plant size hierarchy which later affected tuber production. For both species, plants which emerged early initiated their tuberization earlier in the growing season and reached higher maximum yield regardless of weather conditions (e.g. 1200 and 764 g plant−1 for early-emerging D. alata and D. rotundata plants respectively, and 539 and 281 g plant−1 for late-emerging plants). Plant size hierarchization together with its observed left-skewed distribution, led to reduce total and marketable yield by increasing the proportion of small tubers. These results highlight the need to better understand the underlying mechanisms controlling the yams’ uneven emergence before attempting to improve traditional cropping systems.  相似文献
