There is controversy about the effect of storage time on metmyoglobin (MetMb) reducing activity in the sarcoplasmic fraction of meat and the role of this reducing activity in maintaining the color of red meat. The presence of metmyoglobin reducing activity in the myofibrillar fraction of muscle extracts was investigated as a possible reason for this controversy. NADH-dependent MetMb reducing activity was found in the particulate fraction of meat following sedimentation of a meat homogenate at 35 000g. There was 5.8 times more MetMb reducing activity in the particulate fraction compared with that of the sarcoplasmic (supernatant) fraction. The presence of metmyoglobin reducing activity in the myofibrils (MMRA), defined as the activity in the sediment after centrifugation of a meat homogenate at 2 000g, was confirmed. The myofibrillar fraction contained 63% of the total MetMb reducing activity available in the meat. The relationship between muscle MetMb reducing activities and meat color parameters was investigated in a beef patties system. The particulate MetMb reducing activity (PMRA) in beef patties was found to be a good indicator of the total metmyoglobin reducing activity in meat and was positively correlated with the color parameters of the patties, suggesting that PMRA may be associated with red meat color of meat patties.  相似文献

The effect of denitrification on the behavior of nitrate in saturated sandy soil was studied in the laboratory and the results were compared with the temporal and spatial concentration of nitrate in nonreactive (without denitrification) and reactive (with denitrification) cases. A laboratory model was fabricated to study steady one-dimensional flow and to transport nitrate with or without denitrification. Denitrification at various rates has been simulated with varied C∶N ratios and detention time. Retardation constant, dispersivity, and degradation constants have been computed using existing analytical models supporting adsorption and zero and/or first order production or decay. It was found that such analytical models can be used to fit the concentration of nitrate in saturated porous media for a C∶N ratio between 2 and 5.  相似文献

Rice flour composition played a key role in determining the changes in pasting properties of rice flour. The influence of incorporating defatted rice bran (DFRB), rice bran fiber (RBF), rice bran protein (RBP), and stabilized rice bran (SRB) fractions on the mechanism of rice flour pasting viscosities was investigated. Pasting properties of long‐ and medium‐grain rice flour substituted with 5, 10, 15, 20, and 100% bran fractions resulted in a significant decrease (P < 0.05) in rice flour pasting property values. Flour substituted with RBP had the lowest pasting property measurements compared with other fractions, and the greater the percentage substituted, the lower the pasting property values. DFRB and RBF were least affected properties when used as a replacement. Results were attributed to the contribution of rice starch in the mechanism of rice paste formation, in which decreasing starch in a rice flour sample, as a result of substituting with fractions of SRB, may have resulted in faster swelling of starch granules to the maximum extent and increased their susceptibility to be disrupted by shear, resulting in low paste viscosities. Results also suggested that protein structural integrity and the nature of starch–protein bonding affected rice flour pasting mechanism formation.  相似文献

ABSTRACT:   In order to elucidate the mechanism of the changes in gel forming characteristics of fish meat by pH-lowering, the gelation-temperature curve and the gelation-moisture content curve were examined using the acidified walleye pollack surimi or neutralized one after acidification. In the gelation-temperature curve, the gel strength was highest at 30°C and lowest at approximately 50–60°C, irrespective of pH shifting. The gel strength at 30°C and 80°C decreased with the decrease in pH value. The neutralization of acidified surimi improved the gel strength, but it was considerably lower than the original gel strength. The gel strength at 50–60°C was not affected by pH lowering. The gel strength at 80°C could not be revived to the original by pH readjustment, either in the presence or in the absence of EDTA. These results suggest that irreversible changes of meat protein take place under the low pH, and the oxidation ability of sulfhydryl (SH) groups of protein molecule is not affected by pH-shifting.  相似文献

Since its detection in 1998, the exotic aphid pest, Essigella californica Essig (Hemiptera: Aphididae) has caused extensive defoliation in commercial Pinus radiata plantations throughout Australia. A total of one hundred and twenty plots encompassing thirty tree ages, and three thinning treatments were established in September 2006 in southern New South Wales, Australia to assess crown health and tree growth. Assessments were carried out annually during 2006-2009 to quantify the relationship between natural aphid-induced defoliation and growth loss at the individual tree level. Over the course of the four years, particularly in 2006, trees were subjected to moisture stress, as indicated by average annual rainfalls that were below the long-term average. In general, the diameter growth of individual trees appeared unaffected by crown damage severity across most tree ages, indicating that the productivity in Green Hills was limited by the interactive effects of climatic and biotic stressors (both cause premature loss of foliage). Furthermore, the results from this four-year experiment demonstrated that both moisture stress and aphid-induced defoliation constrained the growth response to thinning. However, thinning may have assisted damaged trees to maintain growth rates similar to trees with little or no damage. Understanding the impact of disturbances such as insect pest outbreaks on growth yield models is critical for optimal modelling of long-term plantation growth and management. Our results highlight the difficulty in quantifying the effect of aphid-induced defoliation when combined with chronic moisture stress.  相似文献

The formation of reaction and barrier zones was studied in the xylem of Eucalyptus globulus and Eucalyptus nitens tree stems after wounding and artificial inoculation with two white rot fungi. The study had two objectives: to describe host responses in Eucalyptus spp. by light microscopy and to determine whether they would differ in a fungal treatment (wounding and inoculation by one of two fungal isolates) when compared to a control treatment (wounding only). Eucalyptus globulus and E. nitens developed similar reaction and barrier zones. The E. globulus barrier zone was characterized by kino vein formation. In both hosts, the reaction zone was primarily influenced by content and distribution of living tracheids and parenchyma cells within the sapwood. By contrast, the anatomy of the barrier zone showed similarities to the basic xylem structure of each host, except for some cell types that were newly formed (sclereids, kino veins) or increased in number (parenchyma cells, tracheids). Other cell types were reduced in number or completely absent. Host response in terms of barrier zone width appeared to be greater in the fungal than control treatment. Both wood decay fungi appeared to induce a wider barrier zone in both species than that associated with non‐specific damage caused exclusively by wounding. However, the small number of replicates available for this study was possibly insufficient to provide statistical evidence for different barrier zone width between fungal and control treatments.  相似文献

The effect of sequential acid, alkaline, and enzymatic treatment of chickpea and lentil flours on batter rheological properties was investigated. Substitution of wheat with disrupted chickpea and lentil flours significantly (P < 0.05) increased water‐holding capacity from 66.8% in wheat flour to more than 70.0% based on the disruption treatment, indicating an improved adhesion of coated batter. Flow behavior index of batter treatments of partially replaced wheat flour with various ratios of disrupted chickpea and lentil flours ranged from 0.88 to 1.36 and was significantly (P < 0.05) lower than the flour (i.e., 2.15) and nondisrupted control (i.e., 1.28–1.38 for chickpea and 1.22–1.28 for lentil) flours. Consistency coefficients of disrupted chickpea and lentil flours were significantly (P < 0.05) greater when replacing wheat control, indicating a best fit for the shear‐thickening model. Flour disruption decreased the treatment's pasting properties, except the setback, providing support for the significant role of proteins in dictating the pasting characteristics of batter flour treatments. Results of this study suggested a potential use for treated chickpea and lentil flours in enhancing batter rheological properties including adhesion and water‐holding capacity.  相似文献

Abstract

The experiment was conducted at Kulumsa, South East Ethiopia, using four levels of nitrogen (N) (0, 50,100 and 150?kg N ha?1) and four levels of phosphorus (P) (0, 35, 70 and 105?kg P2O5 ha?1) fertilizers arranged in 4?×?4 factorial arrangements in randomized complete block design with three replications. The available P was increased after harvest due to the application of N and P fertilizer at the rates of 100 or 150?kg N ha?1 and 70 or 105?kg P2O5 ha?1. More specifically, nutrients concentration and nutrient uptake were significantly (p?<?.01) varied among treatment combinations and nutrient use efficiency was declined by increasing N and P after optimum rates. The higher physiological efficiency of N (53.47?kg kg?1) and P (580.41?kg kg?1) and the highest apparent recovery of N (19.62%) and P (2.47%) was recorded from application of 50?kg N ha?1 and P at 70?kg P2O5 ha?1 and the highest agronomic efficiency of N (10.78?kg kg?1) and P (15.25?kg kg?1) was recorded from N at the rate of 50?kg N ha?1 and P at 35?kg P2O5 ha?1, respectively. The combination of N at 100?kg N ha?1 and P at 70?kg P2O5 ha?1 was promising combination that generated highest net benefit 488,878.5 ETB (Ethiopian birr) ha?1 with the highest marginal rate of return (36638%) and gave the highest seed yield (1858.82?kg ha?1) with yield increment of about 57.72% over the control.  相似文献
