Bivalves are known for their high nutritional value and are considered a healthy food for human consumption. The effect of different cooking methods (steaming, boiling, grilling, and frying) on proximate and fatty acid composition of Arca noae (Bivalvia: Linnaeus 1758) were determined. The comparison of raw and cooked Ark shell showed that the cooking had considerable effects on the nutritional quality of this species. Significant changes in moisture (%), protein (mg/g of flesh), total lipid (mg/g of flesh), and fatty acid composition (mg/g dry weight) were observed after cooking as compared to fresh Ark shell (p < 0.05). However, the analysis of malondialdehyde (MDA) and peroxide value (PV) showed that all cooking treatments led to lipid oxidation. Steaming, boiling, and grilling were found to be a suitable and healthier cooking processes for A. noae, since they conserve the amount of n-3 PUFA better as compared to frying. 相似文献

During animal development, several planar cell polarity (PCP) pathways control tissue shape by coordinating collective cell behavior. Here, we characterize by means of multiscale imaging epithelium morphogenesis in the Drosophila dorsal thorax and show how the Fat/Dachsous/Four-jointed PCP pathway controls morphogenesis. We found that the proto-cadherin Dachsous is polarized within a domain of its tissue-wide expression gradient. Furthermore, Dachsous polarizes the myosin Dachs, which in turn promotes anisotropy of junction tension. By combining physical modeling with quantitative image analyses, we determined that this tension anisotropy defines the pattern of local tissue contraction that contributes to shaping the epithelium mainly via oriented cell rearrangements. Our results establish how tissue planar polarization coordinates the local changes of cell mechanical properties to control tissue morphogenesis. 相似文献

In this study, we conducted an investigation to determine the true prevalence of bovine and ovine brucellosis in central-eastern Tunisia. A total of 1134 veterinary samples taken from 130 ruminant herds were screened for brucellosis using IS711-based real-time PCR assay. Sera collected from the ruminants were tested using the Rose Bengal test and indirect enzyme-linked immunosorbent assay. Based on serological and molecular results, the true adjusted animal population level prevalence was 23.5 % in cattle, against 13.5 % in sheep. In addition, the true adjusted herd level prevalence of brucellosis was 55.6 % in cattle and 21.8 % in sheep. A statistically significant association was found between vaginal and milk shedding for ruminants. In addition, our results showed that Brucella abortus could be responsible for bovine and ovine brucellosis. Multivariable logistic regression analysis at the animal population level indicated that age and origin variables were important risk factors for cattle. However, age and abortion variables were found to be associated with ovine brucellosis. At the herd level, risk factors for Brucella positivity were as follows: abortion and herd composition for cattle against herd composition, mortality rates, and hygiene for sheep. Animal hygiene, food quality, and sanitary practices on the farm should be applied as strategies to control brucellosis in herds. 相似文献

Phytochemicals studies have shown the presence of many beneficial compounds such as spermidine, rutin, quercetin, kaempferol, stigmasterol, campesterol, tocopherols, and carotenoids. Biological studies reveal important antimicrobial, anti-oxidative, anti-inflammatory, immunomodulatory and antiviral properties. The volatile compounds emitted by living leaves of basil (Ocimum basilicum L. cv. Genovese) plants under saline conditions were investigated by means of headspace–solid phase microextraction (HS‐SPME) and gas chromatography coupled with mass spectrometry (GC–MS). Furthermore, the composition of the essential oil obtained by hydrodistillation of the leaves was studied. Plants were grown for 15 d without salt or with an equimolar concentration of Na+ in the form of Na2SO4 (25 mM) and NaCl (50 mM), after which the growth, the essential oil, and the volatile constituents of the leaves were determined. Fifty‐four components were identified belonging to different chemical classes. Under control conditions, the essential oil was rich in linalool (45.9%), 1,8‐cineole (16.7%), eugenol (10.3%), trans‐α‐bergamotene, and epi‐α‐cadinol (4.9%). The main volatiles detected in the headspace of leaves of untreated basil plants were linalool (29.8%), followed by 1,8‐cineole (19.2%), trans‐α‐bergamotene (10.0%), and eugenol (7.0%). Under saline conditions, leaf growth was more depressed by 25 mM Na2SO4 than 50 mM NaCl, and essential oil concentration increased by 22% in the NaCl, but decreased by 18% in the Na2SO4 treatment, respectively. Both salts caused some changes in the essential oil and composition of volatile compounds. Most prominent was a strong negative correlation between eugenol and methyleugenol proportions, which may indicate an enhancement of the O‐methyltransferase activity. In comparison to the essential oil, the composition of volatiles showed some variations in their emission profile under both salts, the most important was an increase of eugenol. It is therefore concluded that the decrease of eugenol occurring in basil essential oil caused by both salts could be due to the enhancement of the eugenol O‐methyltransferase activity, an enzyme that accepts eugenol as substrate, generating methyl eugenol, and also to the increase of the eugenol emission as shown by the SPME profile. 相似文献
