During baking, bread dough undergoes an expansion followed by a slight contraction at the end of baking. The contraction during baking has been evidenced by some authors. However, there is a limited amount of literature about the contraction of the crumb during the chilling phase and also during the freezing phase in the case of freezing. A study has been carried out to better understand the impact of the baking degree on the contraction of the crumb during chilling after baking and during freezing. The volume of the samples has been evaluated with a laser volumeter. Breads (70 g dough) were baked until reaching 75 °C, 85 °C, 95 °C, 98 °C and then 98 °C for 10 min. Results showed that a longer baking resulted in a lower contraction of the bread. The volume change was between 25% and 2.5% for baking at 75 °C—0 min dwell and 98 °C—10 min dwell, respectively. The contraction was compared to the contraction of degassed bread crumb samples, which was more important. SEM pictures showed that the degree of baking also corresponded to a very different structure of the crumb. For the longer baking, the starch granules were fully gelatinized and no ghosts of starch granules were visible. The magnitude of the contraction was thus associated with the degree of baking and with the degree of starch granule destructuration.  相似文献

Chicoric acid (ChA) and caftaric acid (CafA) were identified as bioactive components of chicory and have been ascribed a number of health benefits. This study investigated the hydrolysis of ChA and CafA with enzymes and a probiotic bacterium Lactobacillus johnsonii (La1). Esterase from Aspergillus japonicus (24 U/mg) hydrolyzed 100% of ChA (5 mM) and CafA (5 mM) after 3 h, at pH 7.0 and 37 °C. Under the same reaction conditions, 100% hydrolysis of ChA and CafA was achieved with a spray-dried preparation of La1. The addition of La1 (100 mg/mL, 3.3 E9 cfu/g) to CafA solution in a gastrointestinal model (GI model) resulted in 65% hydrolysis of CafA. This model simulates the physicochemical conditions of the human gastrointestinal tract. No hydrolysis of CafA was observed after passage through the GI model in the absence of La1. The results of this study support the hypothesis that ChA and CafA are degraded by gut microflora before absorption and metabolization.  相似文献

Purpose

Sugar beet pulp (SBP) has been shown to be a promising low-cost sorbent for the removal of metals from contaminated waters. The objective of this study was to investigate the impact of SBP addition to horizontal-flow gravel filters in increasing the copper (Cu) retention ability of stormwater basins.

Material and methods

Small-scale gravel filters filled with 6 kg of a sand–sediment mix (SS) were used to experimentally treat Cu-contaminated water under conditions that represented an intense storm event. Sugar beet pulp efficiency was assessed by adding 100 g of raw SBP. Two ways of applying SBP were tested: (1) mixed with SS into the gravel filter or (2) packed at the outlet in a PVC column. Eluates were characterized by their volume, pH, Cu and dissolved organic carbon (DOC) concentrations.

Results and discussion

When placed at the outlet, SBP fixed 73 % of the Cu remaining in solution and increased the overall retention capacity of the gravel filter to 99.4 %. Conversely, when SBP was mixed with SS, the outflowing water carried higher concentrations of Cu and DOC. Complementary batch experiments underlined the crucial role of DOC in the decline of Cu sorption ability observed when SS and SBP were mixed. Geochemical calculations suggested that DOC (assumed to be pectins) promotes the mobilisation of Cu from SS by complexing it in porewater.

Conclusions

Accompanied with careful guidance, SBP has the potential of removing dissolved Cu from contaminated water in gravel filters. Protocols for SBP preparation and conditions of use should be established so as to promote its sorption efficiency and decrease its release of Cu-complexing compounds like pectins.  相似文献

Long-term observations of Trichoniscus pusillus revealed that chemical composition and microbial activity of the leaf litter serving as food influenced the reproductive success of females and the mortality rates of juveniles as well. Of the food sources investigated, only alder litter, exhibiting high microbial activity, allowed the maintenance of a stable population with frequently reproducing females. This study concludes that the food type is a significant factor for population parameters of this parthenogenetic isopod. Our results on T. pusillus, belonging to the taxon Synocheta, are compared with data on terrestrial isopod species of the taxon Crinocheta.  相似文献

Sixteen 10-12-year-old and eight 1-year-old dogs were studied over a two year period to determine comparative differences in physiological response to 4 diets varying in protein content and percentages of energy contributed by protein. The ability of old dogs to utilize nutrients as supplied by these foods was not significantly different from that of young adult dogs. Except for indices of mitogenic stimulation and serum urea nitrogen (SUN) other physiological parameters studied were not affected by the diet fed. Regardless of diet, old dogs had significantly higher serum levels of cholesterol, phosphorus and alkaline phosphatase and had lower indices of mitogenic stimulation than did young dogs.  相似文献

The primary objective of this study was to evaluate the accuracy of the bentiromide test in differentiating between dogs with exocrine pancreatic insufficiency (EPI) and those with primary intestinal disease (PID). A secondary objective was to correlate the results of the commonly used diagnostic techniques with the results of the bentiromide test. This test consists of the oral administration of a synthetic peptide that is cleaved only by chymotrypsin. A subsequent rise in the plasma concentration of p-aminobenzoic acid (PABA) indicates the degree of cleavage, providing an in vivo assessment of chymotrypsin activity. Fourteen dogs with EPI and five dogs with PID were categorized on the basis of clinical signs, laboratory evaluations, and histologic examination of intestinal biopsies. Six normal dogs served as controls. The bentiromide test clearly identified the dogs with EPI and distinguished them from the dogs with PID and the control dogs. The results of the bentiromide test correlated well with the results of the clinical and laboratory evaluations. On the basis of these observations and conclusions, recommendations for the pragmatic application of the bentiromide test are offered.  相似文献

Lesions in 32 calves that died or were euthanatized during the course of severe natural infection with bovine respiratory syncytial virus (BRSV) are described. All calves had been dyspneic for 1 to 2 days. At necropsy, lesions that could be related to dyspnea included congested and cyanotic mucosae and widespread petechiae. The lungs had various lesions in the cranioventral (CV) and caudodorsal (CD) portions. The CV portion of the lungs was consolidated, firm, and edematous. Histologically, the main characteristic was degenerative, necrotic bronchiolitis, with few syncytial cells. Signs of repair, such as epithelial hyperplasia, fibrosis, and bronchiolitis obliterans, often were observed. The CD portion of the lungs was markedly distended, owing to severe edema and emphysema. Bronchiolar lesions were lacking in the CD portion. In 14 calves, hyaline membranes were seen in the CV and CD portions. Results of immunofluorescence for BRSV were positive in 24 calves, but only in the CV portion of the lungs. The calves had variable concentrations of BRSV-specific IgG1 and IgM in serum, lung lavage fluid, or both. The BRSV-specific IgA, on the contrary, was seldom detected. Thus, 2 discrepancies existed. Although the clinical picture appeared to be acute, bronchiolar lesions and serotest results suggested infection of longer duration. Also, although virus and viral cytopathologic features were detected only in the CV portion of the lungs, the CD portion had extensive lesions that consisted of emphysema and edema.  相似文献

The temperature–humidity index (THI) is widely used to characterize heat stress in dairy cattle. Diet composition is known to induce variation in metabolic‐associated heat production. However, the relationships between THI and diet are poorly characterized with regard to performance and intake behaviour. Therefore, the objectives were to evaluate the impact of THI on water intake (WI), dry matter intake (DMI) and the frequency of drinking and feeding bouts in lactating dairy cows offered four dietary treatments: each contained 20% grass silage and additionally (i) 20% maize silage, 60% concentrate (M‐HC); (ii) 60% maize silage, 20% concentrate (M‐LC); (iii) 20% pressed beet pulp silage, 60% concentrate (BPS‐HC); or (iv) 60% pressed beet pulp silage, 20% concentrate (BPS‐LC) (DM basis). Individual WI and DMI were recorded from April to July 2013. Furthermore, dietary effects on milk production and reticular pH were estimated. Milk yield was lowest for M‐LC, while energy‐corrected milk was similar for all diets. Milk fat percentage was higher and milk protein amount lower for cows offered both LC diets. Reticular pH below 6.3, 6.0 and 5.8 lasted longest for BPS‐LC. WI was higher for HC diets. However, the frequency of drinking bouts was not influenced by the ration. Lower DMI occurred for BPS‐LC compared to M‐LC. Frequency of feeding bouts was significantly higher for LC diets. THI was significantly related to WI, DMI as well as drinking and feeding bouts. Per increasing THI, WI increased slightly more for LC diets and DMI decreased more for HC diets. Frequency of drinking bouts increased slightly higher for BPS rations per rising THI, while the decrease in feeding bouts was highest for M‐HC. In conclusion, TMR composition and moderate heat stress impacted WI and DMI of dairy cows, while both dietary energy density and ruminal filling might intensify the THI impact.  相似文献
