The effect of chitosan with different molecular weights as coatings for shelf-life extension of fresh fillets of Atlantic cod (Gadus morhua) and herring (Clupea harengus) was evaluated over a 12-day storage at refrigerated temperature (4 +/- 1 degrees C). Three chitosan preparations from snow crab (Chinoecetes opilio) processing wastes, differing in viscosities and molecular weights, were prepared; their apparent viscosities (360, 57, and 14 cP) depended on the deacetylation time (4, 10, and 20 h, respectively) of the chitin precursor. Upon coating with chitosans, a significant (p < or = 0.05) reduction in relative moisture losses of 37, 29, 29, 40, and 32% was observed for cod samples coated with 360 cP chitosan after 4, 6, 8, 10, and 12 days of storage, respectively. Chitosan coating significantly (p < or = 0.05) reduced lipid oxidation as displayed in peroxide value, conjugated dienes, 2-thiobarbituric acid reactive substances and headspace volatiles, chemical spoilage as reflected in total volatile basic nitrogen, trimethylamine, and hypoxanthine, and growth of microorganisms as reflected in total plate count in both fish model systems compared to uncoated samples. The preservative efficacy and the viscosity of chitosan were inter-related; the efficacy of chitosans with viscosities of 57 and 360 cP was superior to that of chitosan with a 14 cP viscosity. Thus, chitosan as edible coating would enhance the quality of seafoods during storage.  相似文献

Aggregates and gel network structure of globin hydrolysates   总被引:4,自引:0,他引:4  
A gel with excellent functional properties was prepared successfully using the hydrolysates of globin. In the present study, the structures of intermediate aggregates and gel network were observed directly with an electronic microscope. It was shown clearly that the intermediate aggregates were in a thin rod shape with a length of 130--140 nm, which was in good accordance with the results of the light scattering obtained in a previous study. The diameter of intermediate aggregates was 4--5 nm. Each unit of the intermediate aggregate was composed of beta-chain and peptide beta-1 in a ratio of 1:1. Its molecular weight was 26922 Da, and it had a diameter of 4.1 nm. The thin rod-shaped aggregates were formed with units through the hydrophobic interaction. The length of intermediate aggregate was >30--33 times the diameter. Furthermore, the cross-linked structure formed by peptide alpha-1 and the thin rod-shaped aggregates was also confirmed by the photography of the electronic microscope. These results supported the model proposed in previous papers as proper to depict exactly the formation and structure of the gel network of globin hydrolysates.  相似文献

Application of aroma extract dilution analysis (AEDA) on the volatile components of low-, medium-, and high-heat-treated nonfat dry milks (NDM) revealed aroma-active compounds in the log(3) flavor dilution (log(3) FD) factor range of 1 to 6. The following compounds contributed the highest log(3) FD factors to overall NDM flavor: 2,5-dimethyl-4-hydroxy-3(2H)-furanone [(Furaneol), burnt sugar-like]; butanoic acid (rancid); 3-(methylthio)propanal [(methional), boiled potato-like]; o-aminoacetophenone (grape-like); delta-decalactone (sweet); (E)-4,5-epoxy-(E)-2-decenal (metallic); pentanoic acid (sweaty); 4,5-dimethyl-3-hydroxy-2(5H)-furanone [(sotolon), curry]; 3-methoxy-4-hydroxybenzaldehyde [(vanillin), vanilla]; 2-acetyl-1-pyrroline and 2-acetyl-2-thiazoline (popcorn-like); hexanoic acid (vinegar-like); phenylacetic acid (rose-like); octanoic acid (waxy); nonanal (fatty); and 1-octen-3-one (mushroom-like). The odor intensities of Furaneol, butanoic acid, methional, o-aminoacetophenone, sotolon, vanillin, (E)-4,5-epoxy-(E)-2-decenal, and phenylacetic acid were higher in high-heat-treated samples than others. However, the odor intensities of lactones, 2-acetyl-1-pyrroline, and 2-acetyl-2-thiazoline were not affected by heat treatment. Sensory evaluation results also revealed that heat-generated flavors have a major impact on the flavor profile of NDM.  相似文献

Pesticides applied in extended agricultural fields may be controlled by means of bioindicators, such as honeybees, in which are the pesticides bioaccumulate. Liquid chromatography-atmospheric pressure chemical ionization-mass spectrometry (LC-APCI-MS) experiments with positive (PI) and negative (NI) ion modes were optimized for the analysis of 22 organophosphorus pesticides in honeybee samples. The extraction required 3 g of sample, which was extracted with acetone. The extract was purified with coagulating solution and reextracted with Cl(2)CH(2). Pesticides studied could be detected by both ionization modes except for parathion, parathion-methyl, and bromophos, which did not give signals in PI mode, and triazophos, which was not detected in NI mode. Fragmentation voltage and vaporizer temperature were optimized to achieve the highest sensitivity. The spectra profile of each pesticide in PI mode showed the [M + H](+) ion as the main signal, whereas in NI mode only fragment ions were shown. The detection limit obtained in selected ion monitoring mode ranged from 1 to 15 microg kg(-1). The average recoveries from spiked honeybees at various concentration levels (0.5-5 mg kg(-1)) exceeded 65% with relative standard deviations of 4-15%. The method was applied to real samples, in which residues of coumaphos and dimethoate were detected.  相似文献

Efforts in grasspea (Lathyrus sativus) improvement have increased since the development of lines that are very low in the neurotoxin Beta-N-oxalyl-L-alpha-beta-diamino propionic acid (ODAP); also referred to as Beta-N oxalyl-amino-L-alanine (BOAA). Many programs now address several related aspects of improvement simultaneously. These include reduced ODAP concentrations, insect and disease resistance, nitrogen fixation, agronomic practices, fodder and forage production, and components for increased yielding ability. The coordinated, multidisciplinary approach now being applied to the genetic improvement of grasspea should allow the potential of this largely neglected grain legume to be fully realized.  相似文献

在温定盆栽和池栽防雨旱棚条件下,研究了土壤水胁迫对冬小麦耗水规律及产量的影响,结果表明,随土壤水分胁迫加剧,干物质积累减少,子粒千物质来自贮藏同化物的比例上升,产量下降,产量构成三因子中穗粒数,亩穗数下降均极显著,而千粒重下降较少,随水分胁迫加剧,拔节前耗水量占总耗水量的比率增高,从播种到拔节期,耗水量占总耗水量的比例愈高,拔节后植株衰老死亡愈早,产量降低就愈大,中度水分胁迫下,虽然水分生产率和经  相似文献

为了解决越来越严重的水资源危机,发展节水灌溉已经成为灌区越来越重要的任务。自改革开放以来,漳河灌区灌溉用水量有了大幅度下降,而农业生产总产量却有所上升。灌区通过节水灌溉,使得灌溉水分生产率不断提高,在保证农业生产总产量稳步提高的前提下节约灌溉用水。与此同时,将所节约的农业灌溉用水转移到如发电、城镇供水、工业用水等非农业用水部门,从而大大提高了单方水利用效益。这是我国开展节水灌溉较为成功的典范。通过研究漳河灌区节水灌溉的影响,寻求大型灌区真实节水的途径,使得有限的水资源得到更加充分、合理的利用。  相似文献

甘肃省地处生态脆弱区,气候条件复杂,干旱发生概率高、范围广。为了更好地研究甘肃省干旱时空变化特征,综合考虑甘肃省气候类型和地理特征将其划分为4个气候分区(Ⅰ区,河西大陆性气候区;Ⅱ区,陇中北部季风气候区;Ⅲ区,陇南-陇中南部季风气候区;Ⅳ区,甘南高寒气候区),并采用甘肃省26个国家气象站点的气象资料,计算其近60年(1960—2019年)的月、季和年尺度的标准化降水蒸散指数(SPEI-1、SPEI-3、SPEI-12),结合气候倾向率、Mann-Kendall突变检验、空间插值等方法探讨甘肃省近60年的干旱时空演变特征。结果表明:从时间变化角度看,不同时间尺度的SPEI均呈减小变化趋势,且随时间尺度的增大,SPEI波动幅度越小;在四季变化上,春、夏、秋季SPEI在甘肃省各气候分区都呈现在波动中下降的趋势,且下降趋势明显,表明干旱趋势显著,冬季SPEI在各气候分区呈现在波动中上升的趋势,表明有湿润化的趋势。从空间变化角度看,甘肃省Ⅰ区呈干旱减缓趋势,Ⅱ区、Ⅲ区和Ⅳ区呈干旱加剧趋势,且春季各气候分区干旱加剧趋势明显,夏、秋季次之,而冬季基本上都呈现干旱减缓趋势;甘肃省不同气候分区不同等级干旱发生频率分布差异大且不均衡,干旱频率由小到大依次为:特旱、中旱、重旱、轻旱。  相似文献

在渠灌区,研究充分利用地形落差情况下自压式低压管灌树状管网的优化设计,对降低投资有重要意义。管网优化设计应将管网布置优化和管径优化结合进行设计。本文利用正交表及其优化分析原理,同时结合应用非线性数学规划法优化管径,不仅可得到所有管网布置组合中的最优方案,还可视实际需要得到若干次优方案。该优化设计法计算工作量较小,简单可靠且实用。  相似文献
