Heat treatment during manufacturing of milk powder is one of the most important tools for manipulation of its functional properties, and it is the basis of the classification of these proteins into low-, medium-, and high-heat types. Slight differences in the sequences of the major proteins in milk (genetic variants) seem to have also a significant effect in milk powder processing (U.S. patent). Therefore, the effects of high-temperature storage and heat treatment on skim milk of defined genetic variants of beta-lactoglobulin (beta-LG) were measured. The samples had 45% total solids, the temperature of aging was 50 degrees C, and the heat treatment was 90 degrees C for 10 min prior to evaporation. Measurements on shear rate and on apparent viscosity were determined for each sample. During storage of the concentrated milk, the apparent viscosity and yield values increased markedly, and the age-dependent increase in viscosity in heat-treated concentrated skim milks was much more pronounced than in those prepared from unheated skim milks. The increase in apparent viscosity and yield value with storage time was notably different for milks containing different genetic variants. Unheated concentrated milks containing the B variant of beta-LG showed the most rapid increase in apparent viscosity with storage time, whereas the viscosity increase was slowest in the concentrate containing the A variant. In contrast, heat-treated concentrated milks containing the A variant of beta-LG showed the most rapid increase in viscosity with storage time, whereas the viscosity increase was slowest in the concentrate containing the AB variant. The changes in apparent viscosity of concentrated milk were largely reversible under high shear during the early stages of storage, but samples stored for a long time showed irreversible changes in apparent viscosity. Particle size analysis confirmed irreversible aggregation and fusion of casein particles during storage.  相似文献

Identifying and counting the total number of biological species observed to date, and plotting versusa measure of the effort used to record them, gives rise to a species accumulation curve. Interest typically is concerned with estimating the total number of species in the area of study, having observed only the accumulation curve, having no information on species frequencies. This article considers the problem of optimally stopping the sampling process. We use a sequential procedure with a fixed maximum horizon for accumulation. A utility function based on the number of new species to be observed and the effort saved from the maximum horizon is adopted, and a workable algorithm based on backward induction is obtained. Fresh applications of phosphorus (P) may cause ‘incidental’ losses of dissolved and particulate P forms in land runoff when rainfall interacts directly with fertilizers and manures which are spread, or excreted, onto the soil surface. Research indicates that when incidental P losses (IPL) occur, they often make the dominant (50–98 %) contribution to measured P loads in surface and sub‐surface runoff from field plots, with increased risk of eutrophication where P‐enriched runoff is routed directly to the watercourse. Rates of P loss are temporally and spatially very variable (< 1 to 25 % of total P applied) depending on the amount of P applied; the P release properties of the materials applied (% P extractable in water), the timing of storm events after application and the amounts of runoff generated. Large P applications left on the surface of wet, frozen, compacted, and intensively underdrained soils in high rainfall areas are particularly vulnerable to IPL. Concentrations of P in runoff are often greatest during the first storm event following P application, but can remain high for several weeks, or even months after application. Catchment scale impacts are more difficult to quantify due to the effects of dilution with runoff from fields without IPL, and the contributions of P from other sources. Approaches to predicting IPL are discussed and need to be improved in order to assess the contribution of IPL to catchment P loads in river basin management planning. Strategies to control IPL should focus on adoption of more sensitive management practices in fields with a high risk of rapid runoff or preferential flow, and are likely to very effective.  相似文献

The total arsenic, inorganic arsenic, lead, cadmium, and mercury contents of 18 algae food products currently on sale in Spain were determined. The suitability of the analytical methodologies for this type of matrix was confirmed by evaluating their analytical characteristics. The concentration ranges found for each contaminant, expressed in milligrams per kilogram of dry weight, were as follows: total arsenic, 2.3-141; inorganic arsenic, 0.15-88; lead, < 0.05-1.33; cadmium, 0.03-1.9; and mercury, 0.004-0.04. There is currently no legislation in Spain regarding contaminants in algae food products, but some of the samples analyzed revealed Cd and inorganic As levels higher than those permitted by legislation in other countries. Given the high concentrations of inorganic As found in Hizikia fusiforme, a daily consumption of 1.7 g of the product would reach the Provisional Tolerable Weekly Intake recommended by the WHO for an average body weight of 68 kg. A more comprehensive study of the contents and toxicological implications of the inorganic As present in the algae food products currently sold in Spain may be necessary, which might then be the basis for the introduction of specific sales restrictions.  相似文献

The influence of enzyme mixtures containing amylase and lipase activities on straight dough bread staling was studied. Amylopectin retrogradation, crumb firming, amylose-lipid complexes, and dextrin production were analyzed in bread samples supplemented with two enzyme mixtures. The addition of enzyme mixtures to bread formula causes a beneficial effect on bread keeping properties and the formation of a more thermostable amylose-lipid complex than the one found in control bread. Amylopectin retrogradation was inhibited by the use of the enzyme; the effect was accompanied by reduced crumb-firming rates. The enzymatically generated water-soluble dextrins (maltose and DP3, DP4, DP5, and DP6 dextrins) are the most effective in preserving crumb softness during bread storage.  相似文献

The processes of absorption, blood transport, tissular distribution, metabolism, and excretion are at present understood very little. The aim of this study was to investigate blood transport and identify which principal plasma proteins in humans and rats bind to monomeric catechin and procyanidins in red wine ex vivo. Human and rat plasma and serum were incubated with (+)-catechin and procyanidins from grape seed, the origin of red wine catechins. Proteins were separated by SDS-PAGE and native-PAGE to determine which proteins bound to these compounds. The principal protein that bound to (+)-catechin in each species was sequenced. SDS-PAGE showed that (+)-catechin and procyanidins mainly bound to a protein of about 80 kDa in rats and 35 kDa in humans. Their sequencing indicated that these proteins were apo A-I in humans and transferrin in rats. The fact that red wine procyanidins bind to both proteins suggests that they may have a role in reverse cholesterol transport and in the oxidizing action of iron.  相似文献

Arabinoxylans (AX) are natural fibers extracted from maize bran, an industrial byproduct. To promote this polymer as a food ingredient, development of edible coatings and films had been proposed. Indeed, composite arabinoxylan-based films were prepared by emulsifying a fat: palmitic acid, oleic acid, triolein, or a hydrogenated palm oil (OK35). Lipid effects on water vapor permeability (WVP), surface hydrophobicity (contact angles), lipid particle size, and mechanical properties were investigated. Results showed that OK35-AX emulsion films had the lowest WVP. Emulsified films presented a bimodal particle size distribution; however, the smallest particle mean diameter (0.54 microm) was observed in OK35-AX emulsion films. Contact angles of water comparable to those observed for LDPE films (>90 degrees ) are measured on the OK35-AX film surface. Finally, only triolein-AX emulsion films had elongation higher than films without lipid. These results suggest that OK35 enhances functional properties of AX-based films and should be retained for further research.  相似文献

Qualitative and quantitative analyses of N-heterocycle compounds were conducted by using a liquid-liquid extraction followed by additional chemical silica gel purification and injection into a gas chromatographic (GC) column coupled to a nitrogen-phosphorus detector (NPD). The purified extract fraction was investigated by GC-NPD and by GC-mass spectrometry. The compounds identified and quantified in wines were 2,4,5-trimethyloxazole, 2,4-dimethylthiazole, and 4-methylthiazole by GC-NPD and both 2-acetylthiazole and 2-acetyl-2-thiazoline by GC-MS. The procedure was used to analyze different wines and gave reliable and reproducible results.  相似文献

Under conditions close to those of wine, that is, low pH, aqueous medium, and low temperatures, this work describes N-(2-sulfanylethyl)-2-oxopropanamide (1), a new intermediate in the formation of 2-acetylthiazole from methylglyoxal and cysteine. 1 was characterized by MS, derivatization MS, and (1)H and (13)C NMR and was synthesized from 2-sulfanylethanamine and ethyl pyruvate. A formation pathway for 2-acetylthiazole from methylglyoxal and cysteine is proposed, in which 1 is a new intermediate in Maillard-type reactions in systems under mild conditions.  相似文献
