The present investigation aims at understanding the role of chemically modified starch on the firmness of fresh or stale bread. Bread was prepared from wheat flour or substituted wheat flour that contained 18% chemically modified tapioca starch and 2% vital gluten. Hydroxypropylated tapioca starch (HTS), acetylated tapioca starch (ATS), phosphorylated cross‐linked tapioca starch (PTS), and native tapioca starch (NTS) were tested. Bread prepared from the substituted flour with PTS showed a firmer texture on the day of baking compared with bread prepared from NTS, HTS, and ATS. PTS retained its granular structure in the gluten network after baking and seemed to play the role of filler particles in the gluten matrix, thereby increasing firmness of fresh bread crumb. Bread prepared from the substituted flour with HTS or ATS firmed at a lower rate and showed a lower endothermic melting enthalpy of amylopectin after three days of storage compared with NTS or PTS. These findings suggest that the staling of bread containing chemically modified tapioca starch involves recrystallization of amylopectin. 相似文献

Organic carbon (OC) and nitrogen (N) storage in soil plays an important role in global climate change and in maintaining food security. Pollution of soil with heavy metals has occurred in many parts of the world, but their effects on soil OC and N have not been well addressed. Relevant data were extracted from peer‐reviewed journal papers and analysed by a meta‐analysis to determine how long‐term heavy metal pollution affected soil OC and N status. Plant biomass decreased significantly because heavy metals in soil decreased soil OC and N concentrations by 5.0 and 17.9%, respectively, but increased the C/N ratio by 5.1%. The largest reductions in soil OC and N concentrations were in soil more strongly polluted by metals. The changes in soil OC and N with metal pollution varied with climatic conditions. More substantial decreases in OC and N concentrations were likely to occur in polluted soil with large background contents of OC and low pH. Overall, heavy metals were linked to greater reductions in soil OC and N concentrations in natural ecosystems than in agro‐ecosystems. These results provided a quantitative evaluation of the effects of heavy metal pollution on the decrease in soil C and N concentrations and, therefore, on global climate change. Long term effects of lantana (Lantana camera L.) residue and fertilizer application were studied on copper (Cu) fractions in a Typic Hapludalf under rice-wheat cropping at Palampur, India (32°6′N, 76°3′E). A partitioning of soil Cu revealed residual Cu and organically bound Cu as the most dominant fractions followed by Cu occluded by free oxides, specifically exchangeable Cu and soil solution and exchangeable Cu. Continuous incorporation of lantana after 12 years resulted in redistribution of Cu from non-available forms to readily and potentially available forms in soil. All the Cu fractions were positively interrelated amongst themselves and with grain yield and Cu uptake in rice and wheat crops. Specifically exchangeable Cu followed by organically bound Cu were the most important Cu fraction contributing towards grain yield and Cu uptake in rice and wheat crops. 相似文献

The origin of resistant starch (RS) in distiller's dried grains with solubles (DDGS) of triticale, wheat, barley, and corn from dry‐grind ethanol production was studied. A considerable portion of starch (up to 18% in DDGS) escaped from either granular starch hydrolysis or conventional jet‐cooking and fermentation processes. Confocal laser scanning microscopy revealed that some starch granules were still encapsulated in cells of grain kernel or embedded in protein matrix after milling and were thus physically inaccessible to amylases (type RS1). The crystalline structures of native starch granules were not completely degraded by amylases, retaining the skeletal structures in residual starch during granular starch hydrolysis or leaving residue granules and fragments with layered structures after jet‐cooking followed by the liquefaction and saccharification process, indicating the presence of RS2. Moreover, retrograded starch molecules (mainly amylose) as RS3, complexes of starch with other nonfermentable components as RS4, and starch–lipid complexes as RS5 were also present in DDGS. In general, the RS that escaped from the granular starch hydrolysis process was mainly RS1 and RS2, whereas that from the jet‐cooking process contained all types of RS (RS1 to RS5). We investigated the erodibility of surface casts produced by an anecic earthworm of the Colombian savannahs by means of indoor rain simulations. The kinetic energy applied to samples, 21.62 J minute−1 m−2, was estimated to be equivalent to 41% of the energy of the more intense period of a local storm. The erodibility of casts was assessed at different stages of their ageing along with the effects of repeated wetting‐drying cycles. Bare soil cores and soil cores of the same size with a cast on their surface (soil + cast) were used as controls. Saturated hydraulic conductivity (HC) was measured to test whether casts enhance soil water permeability. Fresh, almost liquid, individual casts were completely dispersed by a 2‐hour rainfall simulation at a dispersion rate of 0.9 ± 0.5% of sample minute−1. After 5 hours drying at 32°C and 79% relative humidity, casts were as moist as fresh casts (non‐significant Mann–Whitney U‐test) but had a solid appearance and were no longer dispersed by raindrop impact. Under simulated rainfall, dry casts were very slowly fragmented into large aggregates (> 5 mm). The HC of casts was increased by repeated cycles of wetting and drying but unaffected by length of air‐drying and natural ageing, and averaged 7 (3, n = 6), 20 (3, n = 7) and 32 (1, n = 45) cm hour−1 for bare soil, soil + cast and all casts, respectively (standard error, sample size). Except for bare soil, these values were greater than the greatest rainfall intensities recorded locally. The consequences for soil erosion, nutrient losses and water infiltration are discussed. 相似文献

Understanding the temporal distribution of NO3-N leaching losses from subsurface drained ‘tile’ fields as a function of climate and management practices can help develop strategies for its mitigation. A field study was conducted from 1999 through 2003 to investigate effects of the most vulnerable application of pig manure (fall application and chisel plow), safe application of pig manure (spring application and no-tillage) and common application of artificial nitrogen (UAN spring application and chisel plow) on NO3-N leaching losses to subsurface drainage water beneath corn (Zea mays L.)–soybean (Glycine max L.) rotation systems as a randomized complete block design. The N application rates averaged over five years ranged from 166 kg-N ha?1 for spring applied manure to 170 kg-N ha?1 for UAN and 172 kg-N ha?1 for fall applied manure. Tillage and nitrogen source effects on tile flow and NO3-N leaching losses were not significant (P?<?0.05). Fall applied manure with CP resulted in significantly greater corn grain yield (10.8 vs 10.4 Mg ha?1) compared with the spring manure-NT system. Corn plots with the spring applied manure-NT system gave relatively lower flow weighted NO3-N concentration of 13.2 mg l?1 in comparison to corn plots with fall manure-CP (21.6 mg l?1) and UAN-CP systems (15.9 mg l?1). Averaged across five years, about 60% of tile flow and NO3-N leaching losses exited the fields during March through May. Growing season precipitation and cycles of wet and dry years primarily controlled NO3-N leaching losses from tile drained fields. These results suggest that spring applied manure has potential to reduce NO3-N concentrations in subsurface drainage water and also strategies need to be developed to reduce early spring NO3-N leaching losses. 相似文献

We performed a comparative experiment to investigate: (1) how the ubiquitous soil bacterium Bacillus subtilis weathers granite; and (2) which granite-forming minerals weather more rapidly via biological processes. Batch system experiments (granite specimen in a 500 ml solution including NaCl, glucose, yeast extract and bacteria B. subtilis at 27 °C) were carried out for 30 days. Granite surfaces were observed by SEM before and after the experiment. B. subtilis had a strong influence on granite weathering by forming pits. There were 2.4 times as many pits and micropores were 2.3 times wider in granite exposed to B. subtilis when compared with bacteria-free samples. B. subtilis appear to preferentially select an optimum place to adhere to the mineral and dissolve essential elements from the mineral to live. Plagioclase was more vulnerable to bacterial weathering than biotite among the granite composing minerals. 相似文献

Between 1930 and 2003 with emphasis on the 1940s maize landraces (Zea mays L. ssp. mays) from all over Switzerland were collected for maintenance and further use in a new Swiss breeding program. The genetic relationship
and diversity among these accessions stored in the Swiss gene bank is largely unknown. Our hypothesis was that due to the
unique geographic, climatic, and cultural diversity in Switzerland a diverse population of maize landraces had developed over
the past three centuries. The aims were to characterize the genetic diversity of the Swiss landraces and their genetic relationship
with accessions from neighbouring regions as well as reviewing their history, collection, and maintenance. The characterization
and grouping was based on analyses with ten microsatellite markers. Geographic, cultural, and climatic conditions explained
a division in two distinct groups of accessions. One group consisted of landraces collected in the southern parts of Switzerland.
This group was related to the Italian Orange Flints. The other group contained accessions from northern Switzerland which
were related to Northern European Flints in particular German Flints. Historic evidence was found for a frequent exchange
of landraces within the country resulting in a lack of region-specific or landrace-specific genetic groups. The relatively
large separation between the accessions, indicated by high F
ST (0.42), might be explained partly by a bottleneck during the collection and maintenance phase as well as by geographical
and cultural separation of north and south of the country. Due to the high genetic diversity, the accessions here are a potential
