To check the influence of the conservation procedure in the chemical composition of chanterelle mushroom, phenolic compounds and organic acids of samples preserved under four different conditions (drying, freezing, conservation in olive oil and in vinegar) were determined. Phenolics and organic acids were analyzed by HPLC-DAD and HPLC-UV, respectively. The results showed that chanterelle is characterized by the presence of six phenolic compounds (3-, 4-, and 5-O-caffeoylquinic acid, caffeic acid, p-coumaric acid, and rutin) and five organic acids (citric, ascorbic, malic, shikimic, and fumaric acids). Samples preserved in olive oil also exhibited hydroxytyrosol, tyrosol, luteolin, and apigenin, whereas conservation in vinegar led to the detection of hydroxytyrosol, tyrosol, and tartaric acid in the analyzed samples. The conservation procedures to which chanterelle samples were subjected seem to affect the qualitative and quantitative phenolics and organic acids profiles. 相似文献

Antilisterial activities of Thymbra capitata and Origanum vulgare essential oils were tested against 41 strains of Listeria monocytogenes. The oil of T. capitata was mainly constituted by one component, carvacrol (79%), whereas for O. vulgare three components constituted 70% of the oil, namely, thymol (33%), gamma-terpinene (26%), and p-cymene (11%). T. capitata essential oil had a significantly higher antilisterial activity in comparison to O. vulgare oil and chloramphenicol. No significant differences in L. monocytogenes susceptibilities to the essential oils tested were registered. The minimum inhibitory concentration values of T. capitata essential oil and of carvacrol were quite similar, ranging between 0.05 and 0.2 microL/mL. Antioxidant activity was also tested, the essential oil of T. capitata showing significantly higher antioxidant activity than that of O. vulgare. Use of T. capitata and O. vulgare essential oils can constitute a powerful tool in the control of L. monocytogenes in food and other industries. 相似文献

This work examines the occurrence of native acetylated lignin in a large set of vascular plants, including both angiosperms and gymnosperms, by a modification of the so-called Derivatization Followed by Reductive Cleavage (DFRC) method. Acetylated lignin units were found in the milled wood lignins of all angiosperms selected for this study, including mono- and eudicotyledons, but were absent in the gymnosperms analyzed. In some plants (e.g., abaca, sisal, kenaf, or hornbeam), lignin acetylation occurred at a very high extent, exceeding 45% of the uncondensed (alkyl-aryl ether linked) syringyl lignin units. Acetylation was observed exclusively at the gamma-carbon of the lignin side chain and predominantly on syringyl units, although a predominance of acetylated guaiacyl over syringyl units was observed in some plants. In all cases, acetylation appears to occur at the monomer stage, and sinapyl and coniferyl acetates seem to behave as real lignin monomers participating in lignification. 相似文献

In this paper we present surface dynamic properties (interfacial tension and surface dilational properties) of a whey protein isolate with a high content of beta-lactoglobulin (WPI) adsorbed on the oil-water interface as a function of adsorption time. The experiments were performed at constant temperature (20 degrees C), pH (5), and ionic strength (0.05 M). The surface rheological parameters and the interfacial tension were measured as a function of WPI concentration (ranging from 1 x 10(-)(1) to 1 x 10(-)(5)% w/w) and different processing factors (effect of convection and heat treatment). We found that the interfacial pressure, pi, and surface dilational modulus, E, increase and the phase angle, phi, decreases with time, theta, which should be associated with WPI adsorption. These phenomena have been related to diffusion of the protein toward the interface (at short adsorption time) and to the protein unfolding and/or protein-protein interactions (at long-term adsorption) as a function of protein concentration in solution and processing conditions. 相似文献

Two headspace techniques based on mass spectrometry detection (MS), electronic nose, and solid phase microextraction coupled to gas chromatography-mass spectrometry (SPME-GC/MS) were evaluated for their ability to differentiate various infant formula powders based on changes of their volatiles upon storage. The electronic nose gave unresolved MS fingerprints of the samples gas phases that were further submitted to principal component analysis (PCA). Such direct MS recording combined to multivariate treatment enabled a rapid differentiation of the infant formulas over a 4 week storage test. Although MS-based electronic nose advantages are its easy-to-use aspect and its meaningful data interpretation obtained with a high throughput (100 samples per 24 h), its greatest disadvantage is that the present compounds could not be identified and quantified. For these reasons, a SPME-GC/MS measurement was also investigated. This technique allowed the identification of saturated aldehydes as the main volatiles present in the headspace of infant milk powders. An isotope dilution assay was further developed to quantitate hexanal as a potential indicator of infant milk powder oxidation. Thus, hexanal content was found to vary from roughly 500 and 3500 microg/kg for relatively non-oxidized and oxidized infant formulas, respectively. 相似文献

The two enzymes involved in enzymatic browning reactions, polyphenol oxidase (PPO) and peroxidase (PO), have been partially purified and extracted from different fractions of beet root. PPO is mainly located in the membrane fraction, and it was also found in the soluble fraction. In both cases PPO was in its latent state. However, PO activity was higher in the soluble fraction than in the membrane fraction. Nevertheless, the highest values of specific activity for PO were obtained from the solubilized enzyme from acetone powders. Under native isoelectric focusing (IEF), several PPO isoenzymes were present in the pH range of 4.8-5.8. All of these isoenzymes shared a single band with a similar apparent mass under sodium dodecyl sulfate-polyacrylamide gel electrophoresis. PO was also analyzed by IEF, showing a complex isoenzyme pattern in all fractions. The characteristic basic PO isoenzyme of high pI found in both the soluble fraction and the solubilized enzyme from acetone powders was not detected in the membrane fraction. In Brazil, most Eucalyptus stands have been planted on Cerrado (shrubby savanna) or on Cerrado converted into pasture. Case studies are needed to assess the effect of such land use changes on soil fertility and C sequestration. In this study, the influence of Cerrado land development (pasture and Eucalyptus plantations) on soil organic carbon (SOC) and nitrogen (SON) stocks were quantified in southern Brazil. Two contrasted silvicultural practices were also compared: 60 years of short‐rotation silviculture (EUCSR) versus 60 years of continuous growth (EUCHF). C and N soil concentrations and bulk densities were measured and modelled for each vegetation type, and SOC and SON stocks were calculated down to a depth of 1 m by a continuous function. Changes in SOC and SON stocks mainly occurred in the forest floor (no litter in pasture and up to 0.87 kg C m?2 and 0.01 kg N m?2 in EUCSR) and upper soil horizons. C and N stocks and their confidence intervals were greatly influenced by the methodology used to compute these layers. C/N ratio and 13C analysis showed that down to a depth of 30 cm, the Cerrado organic matter was replaced by organic matter from newly introduced vegetation by as much as 75–100% for pasture and about 50% for EUCHF, poorer in N for Eucalyptus stands (C/N larger than 18 for Eucalyptus stands). Under pasture, 0–30 cm SON stocks (0.25 kg N m?2) were between 10 and 20% greater than those of the Cerrado (0.21 kg N m?2), partly due to soil compaction (limit bulk density at soil surface from 1.23 for the Cerrado to 1.34 for pasture). Land development on the Cerrado increased SOC stocks in the 0–30 cm layer by between 15 and 25% (from 2.99 (Cerrado) to 3.86 (EUCSR) kg C m?2). When including litter layers, total 0–30 cm carbon stocks increased by 35% for EUCHF (4.50 kg C m?2) and 53% for EUCSR (5.08 kg C m?2), compared with the Cerrado (3.28 kg C m?2), independently of soil compaction. 相似文献

The effect of forest structure and health on the relative surface temperature captured by airborne thermal imagery was investigated in Norway Spruce-dominated stands in Southern Finland. Airborne thermal imagery, airborne scanning light detection and ranging (LiDAR) data and 92 field-measured sample plots were acquired at the area of interest. The surface temperature correlated most negatively with the logarithm of stem volume, Lorey’s height and the logarithm of basal area at a resolution of 254?m2 (9?m radius). LiDAR-derived metrics: the standard deviations of the canopy heights, canopy height (upper percentiles and maximum height) and canopy cover percentage were most strongly negatively correlated with the surface temperature. Although forest structure has an effect on the detected surface temperature, higher temperatures were detected in severely defoliated canopies and the difference was statistically significant. We also found that the surface temperature differences between the segmented canopy and the entire plot were greater in the defoliated plots, indicating that thermal images may also provide some additional information for classifying forests health status. Based on our results, the effects of forest structure on the surface temperature captured by airborne thermal imagery should be taken into account when developing forest health mapping applications using thermal imagery. 相似文献
