Raman spectroscopy, texture, proximate composition, and water binding analysis were carried out to evaluate the effect of thermal treatment and/or salt addition to meat batter. For this purpose, different meat batters were elaborated: control meat batter (no salt) and meat batters with low (1.0%) and high (2.5%) NaCl content with and without thermal treatment (70 degrees C/30 min). Increase (P < 0.05) in penetration force and hardness upon heating was observed. Results also showed hardness increasing (P < 0.05) as a function of salt addition in heated meat batter. Raman spectroscopy analysis revealed a significant (P < 0.05) decrease in alpha-helix content accompanied by an increase (P < 0.05) in beta-sheets resulting from heating. Significant (P < 0.05) correlations were found between these secondary structural changes in meat proteins and water binding and textural properties of meat batter. In this way, a significant correlation was found between beta-sheets, salt content, hardness, and chewiness in heated samples. 相似文献

This experimental study examines the relationship between texture and microfabric under isotropic stresses generated by wetting and drying. This can be achieved by observing and measuring the reorganization of microfabrics (plasmic fabrics and related distribution pattern, RDP). Microfabrics are produced in the laboratory by mixing montmorillonite with various proportions of sand and silt, and subjecting them to wetting and drying without confinement. Thin sections are cut to study their microfabrics. Results show broad and systematic variations in fabric with changes in texture. Fine matrix (silt plus clay in physical continuity) is developed in samples with low sand:silt ratio, and regardless of this ratio at high clay levels. Coarse porphyric and fine porphyric RDP are formed at low and high clay contents, respectively. Plasmic fabrics are represented mainly by insepic and weakly developed mosepic and masepic fabrics in the matrix in the form of small plasma separations with random orientation, and weak skelsepic plasma as embedded grain argillans. On the other hand, coarse matrix (sand grains in physical continuity) dominates the sandy samples which are associated with relatively thick and strongly birefringent free grain argillans giving well-developed skelsepic fabric. The RDP follows two major paths: beginning with orthogranic (very low clay content) along the iunctic sequence at low clay:silt ratio and along the chlamydic sequence at high ratio. The regularities in fabric development are interpreted in the light of the dynamic properties and behaviour of the active clay fraction in a clay-water system. The pedogenetic implications of the results are explored, and the term “erdic” fabric defined. 相似文献

Heat treatment during manufacturing of milk powder is one of the most important tools for manipulation of its functional properties, and it is the basis of the classification of these proteins into low-, medium-, and high-heat types. Slight differences in the sequences of the major proteins in milk (genetic variants) seem to have also a significant effect in milk powder processing (U.S. patent). Therefore, the effects of high-temperature storage and heat treatment on skim milk of defined genetic variants of beta-lactoglobulin (beta-LG) were measured. The samples had 45% total solids, the temperature of aging was 50 degrees C, and the heat treatment was 90 degrees C for 10 min prior to evaporation. Measurements on shear rate and on apparent viscosity were determined for each sample. During storage of the concentrated milk, the apparent viscosity and yield values increased markedly, and the age-dependent increase in viscosity in heat-treated concentrated skim milks was much more pronounced than in those prepared from unheated skim milks. The increase in apparent viscosity and yield value with storage time was notably different for milks containing different genetic variants. Unheated concentrated milks containing the B variant of beta-LG showed the most rapid increase in apparent viscosity with storage time, whereas the viscosity increase was slowest in the concentrate containing the A variant. In contrast, heat-treated concentrated milks containing the A variant of beta-LG showed the most rapid increase in viscosity with storage time, whereas the viscosity increase was slowest in the concentrate containing the AB variant. The changes in apparent viscosity of concentrated milk were largely reversible under high shear during the early stages of storage, but samples stored for a long time showed irreversible changes in apparent viscosity. This work has evaluated the effects of thermally dried (TDS) or composted (CDS) dewatered sewage sludge on β-glucosidase activity,
total (TCH) and extractable (ECH) carbohydrate content, microbial biomass carbon and basal respiration of soils from limestone
quarries under laboratory conditions. Two doses (low and high) of the dewatered sludge (DS) or of the respective TDS or CDS
were applied to a clayey and a sandy soil, both coming from working quarries. The soil mixtures and the controls (soils with
no added sludge) were incubated for 9 months at 25°C and 30% of field capacity. The addition of sludge increased all the studied
soil parameters, and the increase depended on the amount of sludge. Except in the case of TCH and ECH, the enhancing effect
decreased with time, but at the end of incubation, parameters of the treated soils were higher than those of the control.
The rank order of the initial stimulating effect was soil–TDS ≥ soil–DS ≥ soil–CDS, and probably, this order depended on the
proportion of stable organic matter, which was the lowest in the TDS. Values of metabolic quotient (qCO2) were higher at the lower dose, and they did not change during incubation in the CDS-treated soils. Both TCH and ECH were
the parameters with the greatest significant sludge and dose effects. Basal respiration, microbial biomass carbon and β-glucosidase
activity were the best measured parameters in distinguishing the long-term effects of the three sludge types over the soils. 相似文献

Guava (Psidium guajava L.) is a tropical fruit, widely consumed fresh and also processed (beverages, syrup, ice cream, and jams). Pulp and peel fractions were tested, and both showed high content of dietary fiber (48.55-49.42%) and extractable polyphenols (2.62-7.79%). The antioxidant activity of polyphenol compounds was studied, using three complementary methods: (i) free radical DPPH* scavenging, (ii) ferric reducing antioxidant power assay (FRAP), and (iii) inhibition of copper-catalyzed in vitro human low-density lipoprotein (LDL) oxidation. All fractions tested showed a remarkable antioxidant capacity, and this activity was correlated with the corresponding total phenolic content. A 1-g (dry matter) portion of peel contained DPPH* activity, FRAP activity, and inhibition of copper-induced in vitro LDL oxidation, equivalent to 43 mg, 116 mg, and 176 mg of Trolox, respectively. These results indicate that guava could be a suitable source of natural antioxidants. Peel and pulp could also be used to obtain antioxidant dietary fiber (AODF), a new item which combines in a single natural product the properties of dietary fiber and antioxidant compounds. 相似文献

The sweet potato genebank at the International Potato Center (CIP) maintains 5,526 cultivated I. batatas accessions from 57 countries. Knowledge of the genetic structure in this collection is essential for rational germplasm conservation and utilization. Sixty-nine sweet potato cultivars from 4 geographical regions (including 13 countries) of Latin America were randomly sampled and fingerprinted using AFLP markers. A total of 210 polymorphic and clearly scorable fragments were generated. A geographic pattern of diversity distribution was revealed by mean similarity, multidimensional scaling (MDS), and analysis of molecular variance (AMOVA). The highest genetic diversity was found in Central America, whereas the lowest was in Peru-Ecuador. The within-region variation was the major source of molecular variance. The between-regions variation, although it only explains 10.0% of the total diversity, is statistically significant. Cultivars from Peru-Ecuador, with the lowest level of within region diversity, made the most significant contribution to the between region differentiation. These results support the hypothesis that Central America is the primary center of diversity and most likely the center of origin of sweet potato. Peru-Ecuador should be considered as a secondary center of sweet potato diversity. 相似文献

The Muhammad Nur Reservoir (MNR) is a major multipurpose reservoir located on the Riam Kanan River in the Indonesian Province
of South Kalimantan. The MNR has a high sediment trap efficiency and there is concern that accelerated erosion in the catchment,
resulting from inappropriate land use, poses a significant threat to the storage capacity and effective life span of the reservoir.
Furthermore, on-going deforestation of large parts of the catchment may have changed the inflow pattern to the reservoir.
This paper uses data from fieldwork and published information from different sources to examine the extent of erosion and
sedimentation in the catchment and the sediment delivery to the reservoir. Water level variations in the reservoir over a
22-year period are examined for changes that might indicate an alteration of the hydrologic balance in the catchment. 相似文献

The use of indicators in soil monitoring schemes to detect changes in soil quality is receiving increased attention, particularly
the application of soil biological methods. However, to date, the ability to compare information from different laboratories
applying soil microbiological techniques in broad-scale monitoring has rarely been taken into account. This study aimed to
assess the consistency and repeatability of two techniques that are being evaluated for use as microbiological indicators
of soil quality: multi-enzyme activity assay and multiple substrate-induced respiration (MSIR). Data were tested for intrinsic
(within-assay plate) variation, inter-laboratory repeatability (geometric mean regression and correlation coefficient) and
land-use discrimination (principal components analysis). Intrinsic variation was large for both assays suggesting that high
replicate numbers are required. Inter-laboratory repeatability showed diverging patterns for the enzyme assay and MSIR. Discrimination
of soils was significant for both techniques with relatively consistent patterns; however, combined laboratory discrimination
analyses for each technique showed inconsistent correspondence between the laboratories. These issues could be addressed through
the adoption of reliable analytical standards for biological methods along with adequate replication. However, until the former
is addressed, dispersed analyses are not currently advisable for monitoring schemes. 相似文献

Olive fruits at three stages of ripening (green, cherry, and black) have been studied. After cell wall isolation, the compositions of the cell wall and that of the phosphate-soluble polysaccharides were determined. In cell walls, decreases in arabinose, xylose, glucose, and uronic acid levels were observed, together with a slight increase in mannose on ripening. At the beginning of ripening, fragments of pectic polymers were the major constituents of the phosphate-soluble fraction, with the hemicellulosic ones increasing toward the end of the process. The molecular weight of the fragments solubilized was approximately 6 kDa. After cell wall fractionation, the pectic polysaccharides soluble in imidazole and sodium carbonate were also studied. In both fractions, between the green and cherry stages of ripening, a significant loss of homogalacturonans took place. Between the cherry and black stages of ripening, rhamnogalacturonan side chains were also released in addition to homogalacturonans. In any of the pectic fractions, changes in apparent molecular weight were quantified. 相似文献
