The impact of processing on nonenzymatic antioxidant degradation and lipid oxidation leading to off-flavor development in potato flakes during storage was investigated. Lipoxygenase activity measurements in parallel with the analysis of lipid oxidation products (oxylipins) profiles using HPLC showed that the processing conditions used inhibited efficiently enzymatic lipid oxidation. However, nonenzymatic lipid oxidation products were found throughout processing and in fresh potato flakes. Furthermore, these autoxidative processes cannot be inactivated by the main endogenous nonenzymatic antioxidants in potato tubers (ascorbic acid, phenolic compounds and carotenoids), as these antioxidants are degraded during processing. Indeed, leaching and thermal treatments taking place during processing lead to a decrease of about 95%, 82% and 27% in the content of ascorbic acid, phenolic compounds and carotenoids, respectively. Therefore, storage is a critical step to prevent off-flavor development in potato flakes. Specific attention has thus to be paid on the use of efficient exogenous antioxidants as well as on storage conditions. 相似文献

The nucleoporins Nup58 and Nup45 are part of the central transport channel of the nuclear pore complex, which is thought to have a flexible diameter. In the crystal structure of an alpha-helical region of mammalian Nup58/45, we identified distinct tetramers, each consisting of two antiparallel hairpin dimers. The intradimeric interface is hydrophobic, whereas dimer-dimer association occurs through large hydrophilic residues. These residues are laterally displaced in various tetramer conformations, which suggests an intermolecular sliding by 11 angstroms. We propose that circumferential sliding plays a role in adjusting the diameter of the central transport channel. 相似文献

Dietary Supplementation of Oregano and Sage Dried Leaves on Performances and Meat Quality of Rabbits

The aim of this research was to evaluate the dietary supplementation 1% (w/w) of oregano and sage dried leaves on performances and meat quality of broiler rabbits. A feeding trial, which lasted 48 d, was carried out on 105 male Bianca Italiana rabbits randomly divided in seven groups and fed ad libitum. At the end of the trial ten animals per group were slaughtered and samples of dorsal muscle were taken in order to perform laboratory analysis. Mortality rate did not statistically differ between groups. Growth performances of animals fed diets supplemented with aromatic plants were higher (P〈0.05) than those of animals of control group, whereas carcass parameters were not affected by treatments excepting for the slaughter weight that showed the same trend as growth performances. Meat quality traits, oxidative lipid stability and fatty acid proifle were not inlfuenced by aromatic plant supplementation. In conclusion, oregano and sage in form of dried leaves can be used in rabbit without adverse effects on performance, carcass characteristics and meat quality traits. 相似文献

Spent grain, the major by-product of the brewing industry, was magnetically modified by contact with water-based magnetic fluid. The prepared material has been used as a new inexpensive magnetic adsorbent for the removal of water-soluble dyes. The dye adsorption could be described both with the Langmuir and Freundlich isotherms. The maximum adsorption capacities reached the value up to 72.4 mg of dye (Bismarck brown Y) per g of dried magnetically modified spent grain. 相似文献

A total of 350 nymphs of the common tick Ixodes ricinus (Linnaeus, 1758) were collected in an endemic focus of Lyme borreliosis (South Moravia, Czech Republic) and examined for the presence of the protozoan Babesia microti (Fran?a, 1909) by polymerase chain reaction (PCR), using primers specific for the B. microti gene encoding small subunit rRNA. The assay revealed five positive pools (out of 70 pools examined); the corresponding prevalence rate was about 1.5%. Sequence analysis of the PCR products confirmed their 100% homology with that of B. microti. The study represents the first evidence of B. microti in ixodid ticks in the Czech Republic. 相似文献

SummaryThe goals of this study were to make an inventory of recent and ongoing fruit and fruit product innovations, to assess what novelty or improvement they offer, and whether consumers could identify and/or recognise them. Researchers from 11 European countries submitted 386 examples of fruit and fruit product innovations. The list of innovations obtained has been coded, categorised, sorted, and reduced in subsequent stages. First, the examples received were categorised according to the Oslo Manual definitions. Second, product and marketing innovations were selected, as they are the only ones that were likely to be recognised by consumers. Next, analysis revealed that the novelties these innovations offered related to Convenience, Health, Differentiation, Target Group, Information, Sensory Characteristics, In Home and/or Out of Home Quality. Some innovations offered only one novel aspect, whereas others offered multiple aspects. This study investigated the efficacy of tea tree oil (TTO) as an anaesthetic for common carp, Cyprinus carpio L., by estimation of behaviour changes and responsiveness to being taken out of the water. All applied concentrations (from 0.2 to 0.6 mL L−1) resulted in sedation and immobilization. The lowest effective concentration (induction time ≤3 min, recovery time ≤10 min after 15 min of exposure) was 0.5 mL L−1. Exposure in excess of 30 min at a concentration of 0.5 mL L−1 caused mortality. TTO displayed distinct general anaesthetic‐like properties, fulfilling the basic requirements for a potent fish anaesthetic. 相似文献

A 10‐week trial was conducted to determine the response of juvenile jade perch Scortum barcoo on the replacement of dietary fish oil (FO) in a fishmeal free diet. Three iso‐nitrogenous, isocaloric and isolipidic diets were formulated, each containing a different primary fat source: FO, linseed oil (LO), and a mixture of Schizochytrium and LO. The substitution of FO with the mixture of Schizochytrium and LO did not cause a difference in growth. However, there was an 8% reduction in weight gain in fish fed dietary LO, indicating that juvenile jade perch do require a minimal concentration of dietary n‐3 highly unsaturated fatty acids (HUFA). Fish fed the Schizochytrium diet stored more efficient n‐3 HUFA and in particular DHA in their flesh, and retained a higher fillet recovery compared to fish fed FO. In addition, we demonstrated that jade perch are able to produce both n‐3 HUFA and n‐6 HUFA when dietary PUFA are present. Fish fed the LO diet for 10 weeks contained the lowest amount of n‐3 HUFA in fillets among dietary treatment groups. However, feeding these fish the Schizochytrium diet for an additional 4 weeks increased the n‐3 HUFA content towards the same concentration of n‐3 HUFA found in the flesh of fish fed FO, without affecting the sensory properties of the fillets. In contrary, feeding the Schizochytrium diet for a continuous period of 14 weeks lowered overall sensory property scores. 相似文献

Artemisia dracunculus L. (tarragon) has a long history of use as a spice and remedy. Two well-described "cultivars" (Russian and French) are used widely and differ in ploidy level, morphology, and chemistry. Key biologically active secondary metabolites are essential oils (0.15-3.1%), coumarins (>1%), flavonoids, and phenolcarbonic acids. In vivo studies mainly in rodents, particularly from Russian sources, highlight potential anti-inflammatory, hepatoprotective, and antihyperglycemic effects. Despite concerns about the toxic effects of two of its main constituents, estragole (up to 82%) and methyleugenol (up to 39%), no acute toxicity or mutagenic activity has been reported at doses relevant for human consumption. Water extracts of A. dracunculus contain very low amounts of estragole and methyleugenol and, therefore, are considered to pose a very limited risk. Overall, a stronger focus on clinical studies and precise taxonomic and phytochemical definition of the source material will be essential for future research efforts. 相似文献
