Cooked rice quality is based on a number of factors including texture. Texture and structure of foods are closely related and aspects of the relationship can be explored by correlating compression measurements to structural observations of the compressed material. To obtain compression measurements, single cooked, milled rice grains were compressed in a texture analyzer to a specific percentage (% compression) of the original grain; the uncompressed grain is 0%. The experiment, using single grains in each case, was repeated multiple times. Compression percentages of 20, 30, 40, 50, 60, and 70% were measured against a constant resistance force in the texture analyzer. Structures of cooked rice grains at the various compression levels were compared by brightfield and fluorescence microscopy. The outside of an uncompressed, intact, cooked rice grain is swollen and distorted while the interior has three or more odd‐shaped holes (voids). Each void is largest in the center of the grain and decreases in size toward the peripheral edges becoming fine cracks toward the outermost portion of the void. The voids tended to increase in area up to 40% compression and then decrease in area upon further compression. Percent compression versus resistance force was a curvilinear relationship. With increasing % compression, cell shapes became increasingly more rounded, although there wasn't much effect on the integrity of cell walls with increasing % compression. The degree to which grain structure changed during the various compression tests, combined with the curvilinear behavior of resistance force versus % compression, indicates that the voids and cell walls have an effect on texture.  相似文献

Carrots, squash, and Sudan grass were irrigated with groundwater amended with manganese, molybdenum, selenium, and uranium stock solutions to simulate a range of concentrations found at ten inactive uranium ore milling sites to determine plant tissue levels after a 90 day growth period in sand in a greenhouse. Sudan grass was also dosed with a series of nitrate concentrations. Except for squash response to uranium, all plantsshowed an increased accumulation of each metal, someto unacceptable levels, with increased metal concentration dose. Squash did not accumulate uranium at any dose tested. Increased nitrate in the irrigation water did not have a major influence on Sudan grass accumulation of any metal.  相似文献

Energy retention was compared in Holstein steers fed either alfalfa or orchardgrass silages for 164 d at either 65 or 90 g DM/kg.75 BW daily in a 2 x 2 factorial. Energy retention was estimated by slaughter-balance using an initial kill of eight steers at 216 kg and a final kill of eight steers per treatment at 326 kg. The ADG was not affected (P greater than .05) by silage, but steers fed alfalfa gained less (P less than .001) gut fill (they lost gut fill) and gained more (P less than .001) of the following than steers fed orchardgrass: empty body, 23%; fat, 50%; fat-free matter, 18%; protein, 16%; water, 17%; ash, 43%; gross energy, 31%; and carbon, 38%. With retained energy at 1.15 Mcal/d, retained energy was equally distributed between fat and protein. Increments of daily retained energy greater than 1.15 Mcal were deposited as 76% to fat and 24% to protein; this distribution was not affected by silage. The energy requirement for maintenance, with BW adjusted to equal gut fill, was not different (P greater than .05) at 130 kcal ME/kg.75 BW for steers fed alfalfa vs 125 for steers fed orchardgrass. Although not significant (P greater than .05), retained energy/ME intake above maintenance was 13% greater for steers fed alfalfa (.261) than for steers fed orchardgrass (.230), which supports the difference observed by calorimetry. The difference in dietary protein (25.6 vs 20.5%) did not contribute to the difference in energy retention because the differences in fat and protein retention could be explained totally by differences in daily energy deposition. The higher NDF of orchardgrass, or other fiber components, seems to be the most probable cause of its somewhat lower partial energetic efficiency relative to alfalfa.  相似文献

Although Clostridium difficile infection (CDI) is a common disease in swine, there is a lack of prevention strategies. The objectives of this study were to evaluate: i) the effectiveness of Lactobacillus spp. and ii) non-toxigenic C. difficile (NTCD) as prevention for the development of CDI in piglets. Cesarean-derived piglets (N = 150) were randomly assigned to 6 groups: GROUP 1 — negative control (n = 10); GROUP 2 — NTCD only (n = 13); GROUP 3 — Lactobacillus spp. only (n = 14); GROUP 4 — positive control (challenged with toxigenic C. difficile strain) (n = 35); GROUP 5 — NTCD and challenged with the toxigenic C. difficile strain (n = 34); and GROUP 6 — Lactobacillus spp. and challenged with the toxigenic C. difficile strain (n = 44). Piglets which received NTCD showed lower prevalence of toxin-positive feces, mesocolonic edema, and microscopic lesions compared with positive control piglets. Administration of Lactobacillus spp. did not reveal clear benefits.  相似文献

Oleoresin flow is an important factor in the resistance of pines to attack by southern pine beetle, Dendroctonus frontalis Zimm., and its associated fungi. Abiotic factors, such as nutrient supply and water relations, have the potential to modify this plant-insect-fungus interaction; however, little is known of the effects of inoculation with beetle-associated fungi on oleoresin flow. We observed that constitutive and induced resin yield in loblolly pine, Pinus taeda L., were affected by either fungal inoculation (with the southern pine beetle-associated fungus Ophiostoma minus (Hedgcock) H. & P. Sydow) or silvicultural treatment. The effects of mass wounding (400 wounds m(-2)) and mass wounding and inoculation with O. minus were assessed by comparison with untreated (control) trees. The treatments were applied to trees in a 2 x 2 factorial combination of fertilizer and irrigation treatments. Fertilization did not significantly affect constitutive resin yield. Even as long as 105 days post-treatment, however, mass-inoculated trees produced higher induced resin yields than control or wounded-only trees, indicating a localized induced response to fungal inoculation. We noted no systemic induction of host defenses against fungal colonization. Although beetles attacking previously attacked trees face a greater resinous response from their host than beetles attacking trees that had not been previously attacked, the effect of an earlier attack may not last more than one flight season. Despite mass inoculations, O. minus did not kill the host trees, suggesting that this fungus is not a virulent plant pathogen.  相似文献

A PC-based line-scan machine vision system providing rapid measurement of bare-root seedling morphological features has been developed. Designed for quality control and morphological data acquisition by nursery personnel, the machine provides a user-friendly, menu-driven graphical interface. Individual seedlings are manually placed on a conveyor belt and inspected in less than 0.25 seconds.The machine automatically locates the root collar and measures stem diameter, shoot height, sturdiness ratio, root mass length, projected shoot and root area, shoot-root area ratio, and percent fine roots. Sample statistics are computed for each measured feature. Measurements for each seedling may be stored for later analysis. Feature measurements may be compared with multi-class quality criteria to determine sample quality or to perform multi-class sorting. Statistical summary and classification reports may be printed to facilitate the communication of quality concerns with grading personnel.Tests were conducted at a USDA Forest Service nursery to evaluate measurement precision. Four quality control personnel measured root collar diameter, shoot height, and root mass length on 100 2--0 Douglas fir and 100 2--0 Ponderosa pine seedlings. The same seedlings were inspected four times by the machine. Root collar diameter measurement standard deviation of the machine was 25% that of manual measurements. Machine and manual measurements had comparable precision for shoot height and root mass length.  相似文献

Coal mining and agriculture have repeatedly come into conflict when they co‐occur. Although seemingly benign when compared with surface mining, underground coal extraction techniques (including longwall mining) cause subsidence of agricultural land and loss of productivity. Despite growing concerns for global food security and increasing demand for coal resources, there is little peer‐reviewed literature on the impacts of longwall mining in prime agricultural areas. In this paper, we examined the present knowledge of subsidence impacts of longwall mining on agriculture and how this may be interpreted for specific locations such as Australia. The review found that subsidence affects soil properties, hydrology and topography. The main impacts on agriculture are altered soil and groundwater hydrology, modified topography associated with increased erosion or waterlogging risk, and zones of compaction or cracking that cause soil physical and chemical changes. Agricultural productivity is also reduced through altering the types of farming practices that are suited to subsided non‐uniform landscapes, decreasing farming efficiency through increasing paddock heterogeneity and decreasing ease of workability. There is a need to consider these multiple impacts under local conditions, with particular regard to the interaction of mine subsidence‐associated disturbances with farming practices. We conclude by describing future research directions required for Australia and other countries outside of the USA—where most of the research has been conducted. A heat expansion process similar to that used for expanded bead polystyrene was used to expand starch-based compositions. Foam beads made by solvent extraction had the appearance of polystyrene beads but did not expand when heated due to an open-cell structure. Nonporous beads, pellets, or particles were made by extrusion or by drying and milling cooked starch slurries. The samples expanded into a low-density foam by heating 190-210 degrees C for more than 20 s at ambient pressures. Formulations containing starch (50-85%), sorbitol (5-15%), glycerol (4-12%), ethylene vinyl alcohol (EVAL, 5-15%), and water (10-20%) were studied. The bulk density was negatively correlated to sorbitol, glycerol, and water content. Increasing the EVAL content increased the bulk density, especially at concentrations higher than 15%. Poly(vinyl alcohol) (PVAL) increased the bulk density more than EVAL. The bulk density was lowest in samples made of wheat and potato starch as compared to corn starch. The expansion temperature for the starch pellets decreased more than 20 degrees C as the moisture content was increased from 10 to 25%. The addition of EVAL in the formulations decreased the equilibrium moisture content of the foam and reduced the water absorption during a 1 h soaking period.  相似文献
