Anthocyanins (ACNs) are water-soluble plant pigments that have important functions in plant physiology as well as possible health effects. Over 100 common foods were screened for ACNs, and 24 of them were found to contain ACNs. Concentrations of total ACNs varied considerably from 0.7 to 1480 mg/100 g of fresh weight in gooseberry ('Careless' variety) and chokeberry, respectively. Not only does the concentration vary, but the specific anthocyanins present in foods are also quite different. Only six common aglycones, delphinidin, cyanidin, petunidin, pelargonidin, peonidin, and malvidin, were found in all of these foods. However, their sugar moieties and acylation patterns varied from food to food. Results from this study will add to the available data for the USDA Nutrient Database of flavonoids. On the basis of the concentration data and updated food intake data from NHANES 2001-2002, the daily intake of ACNs is estimated to be 12.5 mg/day/person in the United States. Of the different aglycones, cyanidin, delphinidin, and malvidin were estimated to contribute 45, 21, and 15%, respectively, of the total ACN intake. Significant tomato matrix effects on the volatility of certain fresh tomato odorants were found. The concentrations of odorants such as (E,E)-2,4-decadienal, beta-damascenone, and beta-ionone, in crushed fresh tomato fruit obtained by solid-phase microextraction (SPME), resulting from a tomato matrix calibration curve were 5.5-, 2-, and 12-fold higher, respectively, than those calculated by calibration based on buffer solutions. Static headspace analyses indicated that, in most cases, the tomato matrix significantly retains the odorants relative to the buffer solution. Thus, the concentration of odorants in the headspace of tomato is lower than expected compared to a simple matrix such as buffer. CaCl(2), although needed in crushed fruit tissue to block enzymatic activity, was found to interact specifically with 2-isobutylthiazole, reducing its content in the headspace by at least 6-fold. If a matrix effect is found, analysis of the odorant molecule contents in the headspace rather than in the food is recommended in order to better evaluate their access to the olfactory receptors. 相似文献

Present acid forming emissions to the atmosphere have the potential to alter significantly the chemistry of rain, snow, and surface water of weakly buffered lakes in the Upper Midwest. Average precipitation pH from field measurements during 1979–1983 declined from west to east from 4.8, 4.6, and 4.3 along a cross-section of sites in Minnesota, Wisconsin, and Michigan respectively where 990 lake and stream sampling sites were studied. Measurements of weakly buffered lakes show a parallel decline in lake water pH with the lowest values measured, 5.1, 4.6 and 4.4, respectively in the same regions. Correspondingly, the percentage of lakes sampled with little or no acid neutralizing capacity (ANC) was found to increase from 0 to 4 and 13%, respectively. The geographic patterns in ionic composition of airborne acids and bases, and the resultant surface water concentrations are compared. The acid forming capacity (AFC) from airborne inputs is calculated using mass balance and in-lake processes. Stoichiometric acid-base reactions are used to balance the observed chemical differences between airborne inputs and surface water composition considering nitrification, denitrification, other oxidation-reduction reactions, and the evaporation concentration process. Microbial activity in surface water can result in a net decrease in ionic strength from the conversion of most of the ammonium and nitrate to neutral compounds and biomass, but only a partial reduction of about 20% of the sulfate inputs to weakly buffered lakes. The resulting AFC of airborne inputs are calculated to range from 30 to 60, 50 to 90, and 80 to 130 μeq H+L-l, respectively, in northeastern Minnesota-Ontario, northcentral Wisconsin and northern Michigan-Ontario. The differences in AFC of airborne inputs from west to east, and differences in in-lake processes explain the observed acidity of weakly buffered lakes across the region. 相似文献

Responses of soil dissolved organic matter to long-term plantations of three coniferous tree species
Tree species have significant effects on the availability and dynamics of soil organic matter. In the present study, the pool sizes of soil dissolved organic matter (DOM), potential mineralizable N (PMN) and bio-available carbon (C) (measured as cumulative CO2 evolution over 63 days) were compared in soils under three coniferous species — 73 year old slash (Pinus elliottii), hoop (Araucaria cunninghamii) and kauri (Agathis robusta) pines. Results have shown that dissolved organic N (DON) in hot water extracts was 1.5–1.7 times lower in soils under slash pine than under hoop and kauri pines, while soil dissolved organic C (DOC) in hot water extracts tended to be higher under slash pine than hoop and kauri pines but this was not statistically significant. This has led to the higher DOC:DON ratio in soils under slash pine (32) than under hoop and kauri pines (17). Soil DOC and DON in 2 M KCl extracts were not significantly different among the three tree species. The DOC:DON ratio (hot water extracts) was positively and significantly correlated with soil C:N (R2 = 0.886, P < 0.01) and surface litter C:N ratios (R2 = 0.768, P < 0.01), indicating that DOM was mainly derived from litter materials and soil organic matter through dissolution and decomposition. Soil pH was lower under slash pine (4.5) than under hoop (6.0) and kauri (6.2) pines, and negatively correlated with soil total C, C:N ratio, DOC and DOC:DON ratio (hot water extracts), indicating the soil acidity under slash pine favored the accumulation of soil C. Moreover, the amounts of dissolved inorganic N, PMN and bio-available C were also significantly lower in soils under slash pine than under hoop and kauri pines. It is concluded that changes in the quantity and quality of surface litters and soil pH induced by different tree species largely determined the size and quality of soil DOM, and plantations of hoop and kauri pine trees may be better in maintaining long-term soil N fertility than slash pine plantations. 相似文献

UV spectral fingerprints, in combination with analysis of variance-principal components analysis (ANOVA-PCA), can differentiate between cultivars and growing conditions (or treatments) and can be used to identify sources of variance. Broccoli samples, composed of two cultivars, were grown under seven different conditions or treatments (four levels of Se-enriched irrigation waters, organic farming, and conventional farming with 100 and 80% irrigation based on crop evaporation and transpiration rate). Freeze-dried powdered samples were extracted with methanol-water (60:40, v/v) and analyzed with no prior separation. Spectral fingerprints were acquired for the UV region (220-380 nm) using a 50-fold dilution of the extract. ANOVA-PCA was used to construct subset matrices that permitted easy verification of the hypothesis that cultivar and treatment contributed to a difference in the chemical expression of the broccoli. The sums of the squares of the same matrices were used to show that cultivar, treatment, and analytical repeatability contributed 30.5, 68.3, and 1.2% of the variance, respectively. 相似文献

The identities and possible origins of three minor unusual volatile components of tomato are discussed. These are pentyl nitrate, the first identification of a volatile alkyl nitrate in a fresh vegetable or fruit; 5-ethyl-2(5H)-furanone, which, besides its presence in tomato, was found to be a major autoxidation product of pure (Z)-3-hexenal; and 5-ethylcyclopentene-1-carbaldehyde, a likely unusual linolenic acid oxidation product. 相似文献

The objective of this study was to investigate approaches to protect selected flavor compounds from deterioration when stored in an oil matrix. An aroma compound model mixture was prepared in a medium-chain triglyceride (MCT) or sunflower oil (SfO) matrix and stored under either an ambient air or argon atmosphere containing, respectively, ca. 20 and <0.5% residual oxygen as controls or containing a natural antioxidant, delta-tocopherol (0.01%). Samples were analyzed by static headspace GC/FID to determine the stability over time of the compounds in mixture. It was found that the type of oil had the greatest effect (P < 0.01) on overall compound stability. A low-oxygen atmosphere also had a significant (P < 0.05) protective effect on the aroma compounds in both oils. The addition of delta-tocopherol generally offered little additional protection. No significant relationship could be determined between the oxidation of the lipid matrix and the loss of oxidation-sensitive thiol compounds. 相似文献

A normal-phase HPLC-MS/MS method was applied to screen for proanthocyanidins in 88 different kinds of foods. Thirty-nine foods were found to contain proanthocyanidins. These foods include 19 kinds of fruits, eight cereals/beans, seven nuts, two beverages, two spices, and one vegetable. Twenty-five kinds of foods were found to contain both oligomeric (DP = 10) and polymeric proanthocyanidins (DP > 10), and the other 14 foods contained only oligomers. Procyanidins with B-type linkages were detected as the only components in 21 foods and also as principal components in the others. Propelargonidins were identified in pinto bean, raspberry, strawberry, and almond, etc. Plum, avocado, peanut, curry, and cinnamon were identified as potential sources of A-type proanthocyanidins in addition to cranberry. Thiolytic degradation and MS/MS analyses indicated that the A-type linkages are present as a terminal unit in plum or between the extension units in curry, cinnamon, and avocado, whereas A-type linkages exist at both positions in cranberry and peanut. 相似文献

Although wild annual sunflower (Helianthus annuus L.) is indigenous to North America, it has been both inadvertently and intentionally introduced into other countries, such as Australia, where it has become naturalized. Prior to this research, there were no collections of naturalized H. annuus from Australia in the USDA National Plant Germplasm System gene bank. The possibility exists that naturalized Australian populations may contain distinct traits, such as oil content and fatty-acid composition, differing from their North American progenitors due to the different environments, diseases, and insect-pest complexes. The objective of this study was to collect naturalized H. annuus populations from the five states of Australia and to analyze them for oil content and fatty-acid composition. Fifty-six populations were collected throughout the broad distributional range of this species and then analyzed for oil content and fatty-acid composition. The mean oil content of the H. annuus populations was 28%, ranging from a low of 19% to a high of 31%, similar to populations of this species in its native North American habitats. Fatty-acid profiles were also similar for North American wild populations, Australian naturalized populations, and improved cultivars. Oil concentration of hybrids can be rapidly increased to acceptable levels by backcrossing with cultivated sunflower. Based on this fact, there should be little concern about the relatively low oil content of these naturalized populations when they are used as a source of other unique traits for cultivated sunflower improvement. 相似文献

A bacteriological survey was performed on 155 untreated, individual, rural groundwater supplies which included drilled wells, dug wells, and springs. Of these, 105 exceeded the Environmental Protection Agency (EPA) maximum contaminant level of one total coliform per 100 mL. Repeat sampling for 87 of the unacceptable 105 supplies indicated that 76 again exceeded the EPA standard limit. Masked coliforms were detected through confirmation tests in 11 water supplies that exhibited excessive noncoliform colonies (> 50 CFUs/membrane filter). Also, 48% of the supplies contained fecal coliforms and 62% contained fecal streptococci. Bacterial densities were related to the type of water supply with drilled wells containing fewer total coliforms, fecal coliforms, fecal streptococci, and heterotrophic plate count bacteria than dug wells or springs. Water supplies that were shallower, older, and lacking adequate casing characteristically were more heavily contaminated with sanitary indicator bacteria than supplies that were deeper, of more recent construction, and with sufficient casing. 相似文献
