The effect of the partial NaCl replacement by other salts (potassium, calcium, and magnesium chloride) on the formation of volatile compounds through the processing of dry-cured ham was studied using solid-phase microextraction (SPME). Three salt formulations were considered, namely, I (100% NaCl), II (50% NaCl and 50% KCl), and III (55% NaCl, 25% KCl, 15% CaCl(2), and 5% MgCl(2)). There was an intense formation of volatile compounds throughout the processing of dry-cured hams, particularly during the "hot-cellar" stage. The differences between treatments were found to be more remarkable at the end of the curing process. Hams from formulations I and II had significantly higher amounts of lipid-derived volatiles such as hexanal than hams from formulation III, whereas the latter had significantly higher amounts of Strecker aldehydes and alcohols. Plausible mechanisms by which salt replacement may affect the generation of volatile compounds include the influence of such replacement on lipid oxidation and proteolysis phenomena. The potential influence of the volatiles profile on the aroma of the products is also addressed in the present paper.  相似文献

In this study, the hypothesis that food-derived opioid peptides besides β-casomorphin 7 might modulate the production of mucin via a direct action on epithelial goblet cells was investigated in HT29-MTX cells used as a model of human colonic epithelium. Seven milk whey or casein peptides, a human milk peptide, and a wheat gluten-derived peptide with proved or probable ability to bind μ- or δ-opioid receptors were tested on the cell culture. Significantly increased secretion of mucins was found after exposure to six of the assayed peptides, besides the previously described β-casomorphin 7, as measured by an enzyme-linked lectin assay (ELLA). Human β-casomorphin 5 and α-lactorphin were selected to study the expression of mucin 5AC gene (MUC5AC), the HT29-MTX major secreted mucin gene. α-Lactorphin showed increased expression of MUC5AC from 4 to 24 h (up to 1.6-fold over basal level expression), although differences were statistically different only after 24 h of exposure. However, this increased expression of MUC5AC did not reach significance after cell treatment with human β-casomorphin 5. In conclusion, six food-derived peptides have been identifed with described or probable opioid activity that induce mucin secretion in HT29-MTX cells. Concretely, α-lactorphin is able to up-regulate the expression of the major secreted mucin gene encoded by these cells.  相似文献

The phenolic composition of wine depends on, among other factors, the grapes used to make it. In this sense, knowledge of the chemical composition of grapes and its association with the resulting wines is an important tool to determine if there is a relationship between the phenolic composition of grapes and the price that these wines obtain in the market. For this purpose, grape skins and seeds from the cultivar Cabernet Sauvignon from the central region of Chile, in 2009 and 2010 vintages from two ripening points, were subjected to chemical and phenolic analyses, as were the wines made from these grapes. Grapes and the corresponding wines from three retail price wine categories, U.S. $6-8, U.S. $28-30, and U.S. $150-160, were evaluated. No differences were found across the price categories in the chemical analysis of grapes. Berry skins and wines from the higher price categories presented a higher concentration only of total tannins, and the differences in their concentrations were only among the different fractions of proanthocyanidins in the skins, seeds, and wines; there were no differences in their proportions. A seasonal effect influenced the concentrations of certain compounds in grapes and led to a decrease in the concentration of total phenols, total tannins, and total anthocyanins between sampling dates as harvesting moved toward the common commercial grape harvest in Chilean viticulture.  相似文献

A greenhouse pot experiment was conducted to investigate how the addition of two vermicomposts (commercial or produced from damaged greenhouse tomatoes) and/or inoculation with arbuscular mycorrhizal (AM) fungi affected availability and extractability of P, K and trace metals and biochemical quality of a soil contaminated with heavy metals. The pots were planted with Trifolium repens L., which was harvested 40?days after germination. Shoot and root dry matter of T. repens increased by the addition of both vermicomposts. P, K, Fe, Mn, Cu and Zn uptake by T. repens increased after vermicompost addition, whereas Ni, Pb and Cd concentrations were below the detection limit of the method used. After harvest, AB-DTPA-extractable Fe, Cu, Zn, Cd and Pb decreased in the organically amended soil, whereas AB-DTPA P, K and Mn increased. The addition of both vermicomposts, particularly which made from damaged tomatoes, boosted dehydrogenase, ??-glucosidase and urease activities in the postharvest soil, implying a higher microbial functional diversity and biochemical quality in this amended soil. Although phosphatase activities were greater in the postharvest soils with higher AB-DTPA-extractable metals, the other enzyme activities were negatively affected. The inoculation of the soils with AM fungi had weak effects on plant growth, as well as on the availability and extractability of metals and enzyme activities compared to non-inoculation.  相似文献

In recent years, moving bed systems have been shown as an efficient technology in wastewater treatment and particularly in the treatment of urban effluents. This paper presents the results obtained for three different carriers in organic matter removal, analysing the influence of hydraulic retention time (HRT) and the filling ratio, as well as the kinetic constants of each carrier used. During the research, differences in the organic matter removal were observed under different conditions studied as a result of physical and geometrical characteristics of each carrier and their hydraulic behaviour. Two of the three carriers studied in this research had similar yields compared to the third carrier that presented lower rates of organic matter removal and lower kinetic constants than the other two. Carriers 1 and 2 obtained removal rates of organic matter in the form of soluble chemical oxygen demand (sCOD) above 50% for intermediate and higher filling ratios with HRTs of 15, 10 and 15 h, respectively. The maximum values obtained for carrier 1, 2 and 3 were 56.97%, 58.92% and 46.13%, respectively, under 15 h of HRT and 50% of filling ratio. The kinetic constants obtained by respirometry showed a similar trend to the values obtained from sCOD removal.  相似文献

The present work discusses the startup and operation of different biotrickling filters during the simultaneous removal of NH3, H2S, and ethyl mercaptan (EM) for odor control, focusing on (a) the impact of pH control in the stability of the nitrification processes during reactor startup and (b) the crossed effects among selected pollutants and their by-products. Two biotrickling filters were packed with poplar wood chips (R1 and R2A), while a third reactor was packed with polyurethane foam (R2B). R2A and R2B presented a pH control system, whereas R1 did not. Loads of 2?C10?g N?CNH3 m?3?h?1, 5?C16?g S?CH2S m?3?h?1, and 1?C6?g EM m?3?h?1 were supplied to the bioreactors. The presence of a pH control loop in R2A and R2B proved to be crucial to avoid long startup periods and bioreactors malfunctioning due to biological activity inhibition. In addition, the impact of the presence of different concentrations of a series of N species (NH 4 + , NO 2 ? , and NO 3 ? ) and S species (SO 4 2? and S2?) on the performance of the two biotrickling filters was studied by increasing their load to the reactors. Sulfide oxidation proved to be the most resilient process, since it was not affected in any of the experiments, while nitrification and EM removal were severely affected. In particular, the latter was affected by SO 4 2? and NO 2 ? , while nitrification was significantly affected by NH 4 + . The biotrickling filter packed with polyurethane foam was more sensitive to crossed effects than the biotrickling filter packed with poplar wood chips.  相似文献

Chestnut agro-industrial companies consume a high volume of water for washing and processing fruit, generating a large volume of wastewater. This work studied the biodegradation of chestnut processing wastewater through aerobic assays, varying substrate, and biomass concentrations. In general, this wastewater presents a good biodegradability, especially in experiments with relatively low chemical oxygen demand (COD) (0.4 and 0.6?g O2 L?1) allowing a COD removal of 85?C90?%. The best results were obtained in the reactor initially loaded with 2?g?L?1 of biomass and 0.4 or 0.6?g O2 L?1 of COD. These experiments also showed high COD removal rates: 4.25 and 3.88?g COD g?1 volatile suspended solids (VSS) h?1, respectively. The sedimentation rate, evaluated for different initial values of biomass (1, 2, and 3?g?L?1), always presented higher values in the experiments with 2 and 3?g?L?1 of biomass, regardless of the initial COD value used. After comparing different kinetic models (Monod, Contois, and Haldane), it was observed that the Haldane inhibition model satisfactorily describes the COD biodegradation. AQUASIM software allowed calculating the kinetic constant ranges: K s, 1.59?C6.99?g COD L?1; ?? max, 25?C40?g COD g?1 VSS day?1; and K i values, 0.07?C0.11. These kinetic constants corresponds to maximum rates (??*) between 1.48 and 4.25?g COD g?1 VSS day?1 for substrate concentrations (S*) from 0.38 to 0.88?g COD L?1.  相似文献

In situ remediation with waste material is an inexpensive method to reduce contaminant availability in polluted soil. The experiments were done to investigate the effects of possible in situ application of two different amendments: inorganic material (marble sludge) and organic material (horticultural waste compost) on chemical and biological properties of abandoned metalliferous mine wastes. The results show that the application of inorganic material raises the pH above neutrality and the combination of inorganic and organic material would produce the highest ratio of biological activity. The reductions of available Zn, Pb and As in lime, organic and lime/organic amendments were favoured by incubation time. However, available Cd content increased after 275?days of incubation, except the treatment with inorganic amendment. This work denoted that the application of lime with organic amendments has a better effect than the lime alone because the addition of both amendments improves both soil chemical and biological properties.  相似文献

Conservation biology often relies on the protection of (semi)natural habitat remnants. However, the ever increasing human population is taking over natural resources and habitats. Here, contrary to most other studies, we ask how human-associated severe changes in the environment can be used to enrich local biodiversity. We tested if industrial activity (gravel excavation) leads to the creation of habitats that support grassland butterflies and how these areas add to the richness of local species when compared to typical semi-natural habitats (grasslands). We also identified key factors affecting the richness, abundance, diversity and commonness of butterfly species to provide practical recommendations. Species richness, diversity index and the occurrence of rare species were higher in gravel-pit shores than in grasslands. The richness of butterfly species and their abundance were positively affected by the richness of plant species, shrub density and age of the gravel-pit but negatively by the cover of water reservoirs in the surrounding area and the isolation of gravel-pits from grasslands. Butterfly diversity was positively influenced by the richness of plant species and proximity of human settlement but negatively by area of the shore and isolation. Our study is the first one to show the high value of gravel-pits for the conservation of butterflies. We recommend the inclusion of gravel-pits in a system of ecological networks and management of their surroundings to improve the colonization rate of rare species. We suggests that directing interest to the possible positive effects of industrial development on biodiversity may support conservation efforts.  相似文献

Biological soil crusts (BSCs) are increasingly recognized as common features in arid and semiarid ecosystems and play an important role in the hydrological and ecological functioning of these ecosystems. However, BSCs are very vulnerable to, in particular, human disturbance. This results in a complex spatial pattern of BSCs in various stages of development. Such patterns, to a large extent, determine runoff and erosion processes in arid and semiarid ecosystems. In recent years, visible and near infrared (Vis‐NIR) diffuse reflectance spectroscopy has been used for large‐scale mapping of the distribution of BSCs. Our goals were (i) to demonstrate the efficiency of Vis‐NIR spectroscopy in discriminating vegetation, physical soil crusts, various developmental stages of BSCs, and various types of disturbance on BSCs and (ii) to develop a classification system for these types of ground cover based on Vis‐NIR spectroscopy. Spectral measurements were taken of vegetation, physical crusts and various types of BSCs prior to, and following, trampling or removal with a scraper in two semiarid areas in SE Spain. The main spectral differences were: (i) absorption by water at about 1450 nm, more intense in the spectra of vegetation than in those of physical crusts or BSCs, (ii) absorption features at about 500 and 680 nm for the BSCs, which were absent or very weak for physical crusts, (iii) a shallower slope between about 750 and 980 nm for physical crusts and early‐successional BSCs than for later‐successional BSCs and (iv) a steeper slope between about 680 and 750 nm for the most developed BSCs. A partial least squares regression‐linear discriminant analysis of the spectral data resulted in a reliable classification (Kappa coefficients over 0.90) of the various types of ground cover and types of BSC disturbance. The distinctive spectral features of vegetation, physical crusts and the various developmental stages of BSCs were used to develop a classification system. This will be a promising tool for mapping BSCs with hyperspectral remote sensing.  相似文献
