The objective of the present work was to study the effect of annealing and concentration of Ca(OH)2 (lime) and calcium salts on the thermal and rheological properties of maize starch during an ecological nixtamalization process. Thermal and rheological properties of maize starch changed during the ecological nixtamalization process because of three main causes: the annealing phenomenon, type of calcium salt, and calcium salt concentration. In all treatments thermal properties (To, Tp, and Tf) of nixtamal starch increased owing to the annealing process, whereas the type of salt or lime increased thermal properties and decreased pasting properties in this order: CaCl2 > CaSO4 > Ca(OH)2 ≈ CaCO3. This behavior was because of the dissociation of each salt or lime in water. Anions (OH−) can penetrate much more easily into the starch granule and start the gelatinization process by rupturing hydrogen bonds. Additionally, amylose‐lipid complexes were formed during the nixtamalization processes, as indicated by an increasing peak at 4.5 Å in X‐ray diffraction patterns. 相似文献

Two-dimensional electrophoresis was used to investigate sarcoplasmic protein expression in pig Semimembranosus muscles sampled 20 min after slaughter. Two groups (light and dark) of 12 animals were selected from 1000 pigs, based on meat L values measured 36 h postmortem. Twenty-two proteins or fragments (p < 0.05) were differentially expressed. Muscles leading to darker meat had a more oxidative metabolism, indicated by more abundant mitochondrial enzymes of the respiratory chain, hemoglobin, and chaperone or regulator proteins (HSP27, alphaB-crystallin, and glucose-regulated protein 58 kDa). Conversely, enzymes of glycolysis were overexpressed in the lighter group. Such samples were also characterized by higher levels of glutathione S-transferase omega, which can activate the RyR calcium channels, and higher levels of cyclophilin D. This protein pattern is likely to have severe implications on postmortem metabolism, namely, acceleration of ATP depletion and pH fall and subsequent enhanced protein denaturation, well-known to induce discoloration. 相似文献

We have explored the possibility of predicting the malting quality of barley grain, indicated by malt extract yield, by characteristics measured either on plants at anthesis or in mature dry grain by image analysis. To produce barley samples with varying levels of all the characteristics studied, we used grain from an experiment designed to study the influence of lowinput husbandry practices on malting quality of barley by growing five malting genotypes at each of four environments (site × season) and with two different agronomic treatments (N fertilization and herbicide-mechanical roguing of weeds). The results showed that nitrogen content in the plant at anthesis was a good predictor of grain protein content, this characteristic in turn being positively correlated with embryo size and grain volume, as estimated by image analysis, and negatively correlated with nonstructural carbohydrate content in the plant at anthesis. Extract yield was positively correlated with Kolbach index (ratio of soluble to total wort protein) and negatively correlated with wort viscosity and barley grain protein content. In this study was analyzed the effect of crop year and harvesting time on the fatty acid composition of cv. Picual virgin olive oil. The study was carried out during the fruit ripening period for three crop seasons. The mean fatty acid composition of Picual oils was determined. The oils contained palmitic acid (11.9%), oleic acid (79.3%), and linoleic acid (2.95%). The content of palmitic acid and saturated fatty acids decreased during fruit ripening while oleic and linoleic acids increased. The amount of stearic and linolenic acids decreased. The amount of saturated acids, palmitic and stearic, and the polyunsaturated acids linoleic and linolenic was dependent on the time of harvest, whereas the amount of oleic acid varied with the crop year. The differences observed between crop years for both palmitic and linoleic acid may be explained by the differences in the temperature during oil biosynthesis and by the amount of summer rainfall for oleic acid content. A significant relationship was observed between the MUFA/PUFA ratio and the oxidative stability measured by the Rancimat method. 相似文献

The present work discusses the startup and operation of different biotrickling filters during the simultaneous removal of NH3, H2S, and ethyl mercaptan (EM) for odor control, focusing on (a) the impact of pH control in the stability of the nitrification processes during reactor startup and (b) the crossed effects among selected pollutants and their by-products. Two biotrickling filters were packed with poplar wood chips (R1 and R2A), while a third reactor was packed with polyurethane foam (R2B). R2A and R2B presented a pH control system, whereas R1 did not. Loads of 2?C10?g N?CNH3 m?3?h?1, 5?C16?g S?CH2S m?3?h?1, and 1?C6?g EM m?3?h?1 were supplied to the bioreactors. The presence of a pH control loop in R2A and R2B proved to be crucial to avoid long startup periods and bioreactors malfunctioning due to biological activity inhibition. In addition, the impact of the presence of different concentrations of a series of N species (NH 4 + , NO 2 ? , and NO 3 ? ) and S species (SO 4 2? and S2?) on the performance of the two biotrickling filters was studied by increasing their load to the reactors. Sulfide oxidation proved to be the most resilient process, since it was not affected in any of the experiments, while nitrification and EM removal were severely affected. In particular, the latter was affected by SO 4 2? and NO 2 ? , while nitrification was significantly affected by NH 4 + . A new soluble cocoa fiber product (SCFP), obtained after enzymatic treatment of cocoa husks, was characterized and its potential health effects studied in an animal model of dietary-induced hypercholesterolemia. The SCFP was rich in soluble dietary fiber (DF) and antioxidant polyphenols. Consumption of a cholesterol-rich diet containing the SCFP as a source of DF resulted in lower food intake and body weight gain in comparison with control groups consuming cholesterol-free or cholesterol-rich diets with cellulose as DF. The cholesterol-rich diet caused remarkable hypercholesterolemia. However, the SCFP diminished the negative impact of the cholesterol-rich diet, buffering the decrease of high density lipoprotein-cholesterol, and the increase of total and low density lipoprotein-cholesterol levels, and lipid peroxidation (malondialdehyde levels) induced by the fatty diet. The SCFP also decreased triglyceride levels to values lower than those in the group fed the cholesterol-free diet. The threat imposed by increased sediment loading rates ranks among the most important stressors affecting coral reef ecosystems worldwide. This study represents an effort to quantify the effects of unpaved roads on erosion rates in a dry sub-tropical area of Puerto Rico and is intended to aid in developing scientifically-based erosion mitigation strategies. Hence, the specific objectives of this study were to: (1) measure sediment production rates from unpaved roads; (2) evaluate the effect of precipitation, rainfall erosivity, slope, plot length, and vegetation cover on sediment production rates; and (3) compare measured sediment production rates to published surface erosion data from roaded and natural sites in the Eastern Caribbean. Sediment production from nine abandoned road segments with varying slopes and plot lengths were measured with sediment traps in southwestern Puerto Rico from August 2003 to September 2005. 相似文献

Nitrofurans were broadly used as an extremely effective veterinary antibiotic especially in pig and poultry production farms. Because of fears of the carcinogenic effects on humans, the nitrofurans were banned from use in livestock production in many countries, including the European Union. The present study examines the accumulation, distribution, and depletion of furaltadone and nifursol and of their tissue-bound metabolites [3-amino-5-morpholinomethyl-2-oxazolidinone (AMOZ) and 3,5-dinitro-salicylic acid hydrazine (DNSAH), respectively, in poultry edible tissues (muscle, liver, and gizzards) following administration to chickens of therapeutic and subtherapeutic concentrations of both compounds. Nitrofurans determination was performed by high-performance liquid chromatography-diode array detection and liquid chromatography-tandem mass spectrometry, respectively, for feeds and for poultry tissues. Furaltadone and nifursol, in very low concentrations, were found in samples of muscle, liver, and chicken's gizzard collected from slaughtered animals after 5 weeks of treatment and no withdrawal time period. When a withdrawal time period of 3 weeks was respected, no detectable nitrofuran parent compounds was observed in all of the studied matrices. For AMOZ, concentrations of 270 μg/kg in meat, 80 μg/kg in liver, and 331 μg/kg in gizzard were determined after administration of a medicated feed with furaltadone (132 mg/kg), 3 weeks after withdrawal of treatment. For DNSAH, the concentration values obtained are much lower than those observed for AMOZ. For meat, liver, and gizzard, DNSAH concentrations of 2.5, 6.4, and 10.3 μg/kg, respectively, were determined, after administration of a medicated feed with nifursol (98 mg/kg), 3 weeks after withdrawal of treatment. The gizzard could be considered a selected matrix for nitrofuran residues evaluation in poultry, due to its capacity of retaining either nitrofuran parent compounds or metabolites in higher concentrations, regardless of the administered dose or of the respected withdrawal time period. 相似文献
