In food industry, roselle beverages and their subproducts could be functional ingredients since they are an excellent source of bioactive compounds with improved performance due to their important anthocyanins content. The aim of this study was to analyze anthocyanin content and antioxidant properties of aqueous infusions elaborated with color contrasting Hibiscus materials and design a mathematical model in order to predict color-composition relationship. Color measurements of beverages from roselle (Negra, Sudan and Rosa) were made by transmission spectrophotometry, anthocyanins quantification was determined by HPLC, and antioxidant potential was evaluated by in vitro methods (ABTS and FRAP assays). Beverages prepared with particle size minor of 250 μm presented until 4- and 2- times more anthocyanins content and antioxidant capacity respectively, in comparison to beverages prepared with powders with particle size major of 750 μm. Positive correlations among pigments composition and color parameters were found (p?<?0.05), showing that anthocyanins content, antioxidant capacity, C*ab and hab values increased in relation with the smallest particle size of flours. Also, mathematical models were stablished to predict anthocyanin content (r?≥?0.97) and antioxidant capacity (r?≥?0.89) from color data; we propose equations for quick estimation of the antioxidant capacity in the Hibiscus beverages with high anthocyanin content. The obtained models could be an important tool to be used in food industry for pigment characterization or functional compounds with potential health benefits.  相似文献

The physiological development of laboratory rats fed with a typical indigenous tortilla diet was studied for two generations. The experiment compared casein control diet and five different types of diets: (1) a diet of tortillas obtained from fresh masa (FM); (2) regular tortillas produced from enriched dry masa flour containing vitamins B1, B2, niacin, folic acid, and the microminerals iron and zinc (REDMF); (3) tortillas produced from enriched dry masa flour fortified with 6% defatted soybean meal (FEDMF); (4) tortillas produced from enriched quality protein maize flour (EQPM); and (5) and, tortillas produced from enriched quality protein maize flour fortified with 3% defatted soybean meal (FEQPM). The growth of rats fed FEDMF and FEQPM diets was significantly higher (P<0.05) in both generations than their counterparts fed EQPM, REDMF, or FM diet. Animals fed quality protein maize (QPM) tortilla had the highest protein digestibility, but the FEQPM and FEDMF diets had the highest biological value (BV), net protein utilization (NPU), and protein-digestibility-corrected EAA scores (PDCEAAS). The difference among treatments was more evident in the second-generation rats. The pregnancy rate, number of newborns/litter, litter weight, and newborn survival rate was also higher for rats fed FEDMF, EQPM, and FEQPM diets than their counterparts fed REDMF and FM.  相似文献

The objective of this study is to evaluating the Brazilian biodiversity through physicochemical characterization and determination of antioxidant potential of three species from the Myrtaceae family, namely yellow guava (Psidium cattleyanum Sabine), guabiroba (Campomanesia xanthocarpa O. Berg), and uvaia ( Eugenia pyriformis Cambess). Guabiroba had the greater quantity of phenolic compounds (9033 mg chlorogenic acid/100 g) and vitamin C (30.58 mg/g) and showed the best TSS/TTA (total soluble solid/total titratable acid) ratio (45.12). For the ABTS (2,2-azino-bis-3-ethylbenzothiazoline-6-sulfonic) method, the guabiroba (507.49 μM Trolox/g) presented the highest antioxidant potential; however, in the DPPH (2,2-diphenyl-1-picrylhydrazyl) method, uvaia (170.26 g/g DPPH) and guabiroba (161.29 g/g DPPH) were not statistically different. The uvaia outranked the other fruits with respect to its high carotenoid (909.33 μg/g) and vitamin A (37.83 μg/g) contents, and the yellow guava, although showing a lower bioactive compound content and antioxidant activity, nevertheless presented much higher values than many traditionally consumed fruits.  相似文献

Bacterial diversity in peat bogs of the karst origin was studied with the use of traditional inoculation methods and modern molecular techniques. Representatives of phylogenetic groups of Proteobacteria and Acidibacteria predominated among the domain of Bacteria. Aquaspirillum and Bacillus predominated in the saprotrophic bacterial complex. The amount of actinobacteria in the studied peat samples was higher than that in typical oligotrophic peat bogs.  相似文献

Summary Several types of outcrossing mechanisms in cowpeas are observed in breeding plots at IITA. Two of these have been studied. One is genetic male sterility controlled by the simple recessive conditions of a gene designated as ms 2 ms 2. The other is mechanical male sterility involving petals constricted in such a way as to provide an opening for stigma and style to emerge at an early, pre-receptive stage of development; while simultaneously restricting stamen development. It is also inherited as a recessive character with the gene symbol designation of Cp-as normal and cp cp as constricted petal. The flower structure is unique and is easily recognized in large populations. Because fruit set is extremely poor it appears less promising than the genetic male sterility at present.  相似文献

In the subsistence-agricultural region of eastern Zambia, less than 10% of the households have adequate supply of maize (Zea mays L.), the staple food, throughout the year. A major constraint to increasing crop production in the region is poor fertility status of the soil. In order to address this problem, improved fallow has been introduced as a technology for improving soil fertility within a short span of two to three years. Farmers have been testing the technology and a number of empirical studies have been undertaken over the years to identify the factors influencing farmers' decision to adopt the technology. This paper presents a synthesis of the results of adoption studies and highlights generic issues on the adoption of improved fallows in Zambia. The synthesis indicates that farmers' decision on technology adoption does not have a simple directed relationship of some technological characteristics only, but constitutes a matrix of factors including household characteristics, community level factors, socioeconomic constraints and incentives that farmers face, access to information, local institutional arrangements and macro policies on agriculture. The adoption of improved fallows is not strictly speaking a binary choice problem but a continuous process in which farmers occupy a position along a continuum in the adoption path. Further, adoption of improved fallows may not take place in a policy vacuum but needs to be facilitated by appropriate and conducive policy and institutional incentives. Several questions and issues that require further study emerge from the synthesis. These include determination of the relative importance of the factors in the adoption matrix, identification of the conditions under which farmers use a combination of inputs and their profitability under changing price scenarios, exact definition to delineate between `non-adopters', `testers' and `adopters' of agroforestry technologies, and understanding the impact of cash crop farming in farmers' adoption decisions of improved fallows (where off farm opportunities exist). Further, there is a need to determine the inter-relationship between household poverty, labor availability and the adoption of improved fallows and, to evaluate a combination of policy interventions at both national and local level to promote the adoption of agroforestry-based soil fertility management.
