The combined effect of starter culture, nitrites, and nitrates has been studied in low-acidity salamis, typical products of northern Italy. Nine batches have been prepared, combining three different inoculations of starter cultures (control, Lactobacillus plantarum , and Lactobacillus plantarum together with Kocuria varians ) with three different preservatives (control, sodium nitrate, and sodium nitrite). All of the batches showed a good fermentation process with a proper pH decrease, which was quicker in batches inoculated with L. plantarum. The use of starter cultures and in particular the use of nitrites allowed the control of the proliferation of Enterobacteriaceae and enterococci. The accumulation of biogenic amines, especially putrescine, cadaverine, tryptamine, and tyramine, in salami ready for consumption (60 days of ripening) was strongly affected by the presence of Enterobacteriaceae and enterococci. Results obtained showed that the combined use of adequate preservatives and starter cultures allows the production of safer products with improved sensorial profile.  相似文献

In this study, the effects of three common cooking practices (i.e., boiling, steaming, and frying) on the artichoke phenolic compounds pattern were evaluated by LC-MS/MS analysis. The variation of carotenoids, antioxidant capacity, and artichoke physical properties after cooking was also investigated. The major phenolic compounds present in the raw sample were 5- O-caffeoylquinic and 1,5-di- O-caffeoylquinic acids; after cooking treatments, an increase of the overall caffeoylquinic acids concentration due to the formation of different dicaffeoylquinic acid isomers was observed. Steamed and fried samples showed similar patterns of dicaffeoylquinic concentrations, which were higher with respect to the boiled samples. On the other hand, all cooking practices, particularly frying, decreased flavonoid concentration. The antioxidant capacity of cooked artichokes, measured by three different assays, enormously increased after cooking, particularly after steaming (up to 15-fold) and boiling (up to 8-fold). The observed cooking effect on the artichoke antioxidant profile is probably due to matrix softening and increased extractability of compounds, but the increase of antioxidant capacity is much higher than the increase of antioxidant concentration. These results suggest that some common cooking treatments can be used to enhance the nutritional value of vegetables, increasing bioaccessibility of health-promoting constituents.  相似文献

During 2003-2005, 399 abortion samples (315 fetuses and 84 placentae) were collected from 107 ovine and caprine farms in northern Sardinia. Tissues from aborted fetuses and placentae were examined by PCR assay to detect DNA from Coxiella burnetii, Chlamydophila abortus, Salmonella enterica Serovar abortusovis, Toxoplasma gondii, and Neospora caninum. The DNA from at least 1 of these 5 infectious agents was amplified in 41% of ovine fetuses, while only 17% of the caprine fetuses yielded a positive amplification result for at least 1 of the 5 agents. Out of a total of 366 ovine aborted samples, T. gondii DNA was detected most frequently (18.1% of fetuses and 13.1% of placentae), followed by S. abortusovis (13% of fetuses and 14.4% of placentae), C. burnetii (10.9% of fetuses, of 9.2% placentae), C. abortus (2.4% of fetuses, 6.5% of placentae), and N. caninum (2% of placentae). In 33 fetuses and 9 placentae, the simultaneous presence of pathogens with different associations was detected. Out of a total of 31 caprine aborted samples, T. gondii was detected most frequently (13% of fetuses and 25% of placentae), followed by C. abortus (12.5% of placentae), C. burnetii (12.5% of placentae), and N. caninum (8.6%).  相似文献

This study is focused on the evaluation of the impact of Saccharomyces cerevisiae metabolism in the profile of compounds with antioxidant capacity in a synthetic wine during fermentation. A bioanalytical pipeline, which allows for biological systems fingerprinting and sample classification by combining electrochemical features with biochemical background, is proposed. To achieve this objective, alcoholic fermentations of a minimal medium supplemented with phenolic acids were evaluated daily during 11 days, for electrochemical profile, phenolic acids, and the volatile fermentation fraction, using cyclic voltametry, high-performance liquid chromatography-diode array detection, and headspace/solid-phase microextraction/gas chromatography-mass spectrometry (target and nontarget approaches), respectively. It was found that acetic acid, 2-phenylethanol, and isoamyl acetate are compounds with a significative contribution for samples metabolic variability, and the electrochemical features demonstrated redox-potential changes throughout the alcoholic fermentations, showing at the end a similar pattern to normal wines. Moreover, S. cerevisiae had the capacity of producing chlorogenic acid in the supplemented medium fermentation from simple precursors present in the minimal medium.  相似文献

The aim of this study was to evaluate the effects of hatchery‐tank colours (white, yellow, red, blue, green and black) on the performance of larval culture of Macrobrachium amazonicum. The larvae were fed daily with newly hatched Artemia nauplii. The hatchery‐tank colours affected the light level inside the tanks, the consumption of Artemia nauplii (AN), larval development, survival, mass gain and productivity of postlarvae (PL). The overall consumption of Artemia nauplii per larva during the larval cycle was 30% and 45% higher in the green and red tanks respectively. The significant variation of AN consumption among tank colours (= 0.0006) indicates that M. amazonicum larvae are visual predators. Survival was higher in the black, blue and green tanks, reaching more than 75%. However, the highest productivity was obtained in the black tanks (80.1 PL L?1). Lighter coloured tanks and excess luminosity (more than 2 μmol s?1 m2 at tank bottom) appear to be important stress factors for larvae, contributing to reduce survival and productivity. The results indicate that rearing M. amazonicum in black tanks will improve larvae condition, ensure greater productivity of postlarvae and lower Artemia consumption, increasing technological and economic viability.  相似文献

Feed training of carnivorous fish is a delicate and stressful process. Thus, feed additives that reduce stress and encourage fish consumption could improve training efficiency. Therefore, the aim of this study was to evaluate monosodium glutamate (MSG) dietary supplementation during pacamã (Lophiosilurus alexandri) feed training through growth performance and intestinal histomorphometry. Fish were trained by the method of gradual diet transition, using five diets with increasing proportions of commercial diet and decreasing proportions of gelatin. A quadruplicate experimental design was performed with seven treatments, consisted in diets supplemented with different levels of MSG (0.0; 2.0; 8.0; 16.0; 29.0; 34.0 and 42.0 g/kg). Pacamã (0.17 ± 0.01 g) were distributed in 28 tanks (30 fish per tank) and trained for 41 days with the experimental diets. There were no effects (p > .05) of MSG on growth performance and feed training indices. However, fish trained with diets supplemented with 42.0 g/kg of MSG presented higher number of goblet cells in the anterior portion of intestine (p < .05). These results demonstrate that MSG did not act on growth performance and feed training efficiency of pacamã, and high levels of MSG can cause dietary stress on fish intestinal mucosa.  相似文献

In this work we have determined the community composition of spore-forming arbuscular mycorrhizal fungi (AMF) in a maquis site on Pianosa island, a protected area within the Tuscan Islands UNESCO Biosphere Reserve, Italy. We have analysed rhizosphere soil of the dominant plant species Pistacia lentiscus, Smilax aspera, Rosmarinus officinalis and of the endemic plant Helichrysum litoreum. The AMF species recovered were: Scutellospora dipurpurescens, Glomus coronatum, Glomus mosseae, Glomus etunicatum, Glomus geosporum, Glomus viscosum, Entrophospora sp., Pacispora sp. and Glomus rubiforme. The identification of native S. dipurpurescens and G. coronatum was carried out on spores isolated from rhizosphere soil of H. litoreum, by combining morphological traits and 18S (SSU) and ITS rDNA sequences. Therefore, AMF species of Pianosa rhizosphere soils represent an important repository for the conservation and maintenance in their natural habitat of such beneficial symbionts, key microorganisms of soil fertility.  相似文献

A method based on semiautomated solid phase extraction using octadecyl-bonded silica disks and gas chromatography-mass spectrometry, operated in selected ion monitoring mode, allows detection and quantification of approximately 100 pesticides and transformation products in drinking water. Samples (500 mL) were passed through the disk, and the retained pesticides were eluted with acetone and ethyl acetate. Typical recoveries for pesticides at 0.1 microg L(-1) in water were in the range of 72-120% with relative standard deviations less than 20%. Calibration curves were linear over the range of 0.025-0.5 microg mL(-1) (equivalent to a concentration range in drinking water of 0.05-1.0 microg L(-1)).  相似文献

Control of horse parasites often omits application of measures to eradicate the free-living stages in pastures and frequently relies on chemotherapy only. Selective therapy was used for Spanish Sport horses grazing either in the same pasture (continuous) or in rotated meadows. In each group, equines exceeding a cutoff value of 300 strongyle eggs per gram of feces received ivermectin or moxidectin. Efficacy of the treatment was assessed by estimating reduction of fecal egg counts and the number of horses shedding parasite eggs (PHR). Coprocultures revealed presence of the cyathostomins Cyathostomum and Gyalocephalus spp. In all treated groups, a 100% value for both reduction of fecal egg counts and PHR against cyathostomins was obtained, and PHR values ranged from 100% to 12%. The longest strongyle egg reappearance period was observed in horses undergoing rotation grazing and receiving ivermectin (9 weeks), compared with a 6-week period recorded for the other treated equines. Our results seem to point that the efficacy of selective therapy in equine herds could be reduced if the horses with fecal egg counts below the threshold value (thus not receiving chemotherapy) remain grazing in the same pastures with the treated ones. It is strongly suggested that interested parties consider performing periodic fecal analyses to monitor fecal egg counts, together with the percentage of horses passing eggs in feces, to improve the effect of this procedure.  相似文献
