Application of the aroma extract dilution analysis on an extract of white pepper powder showing an intense fecal, cowshed-like off-flavor revealed 3-methylindole (fecal, swine-manure) and 4-methylphenol (fecal, horse-like) with the highest flavor dilution (FD) factors among the 22 odor-active compounds detected. In addition, high FD factors and/or undesirable odor qualities suggested 3-methylphenol (phenolic), butanoic acid (cheese-like), and 2- and 3-methylbutanoic acid (cheese-like) as well as pentanoic acid and hexanoic acid (cheese-like odors) as contributors to the malodor. Although the intensities of the off-note were clearly different in 50 commercial samples of white pepper, quantitation of 3-methylindole and 3- and 4-methylphenol as well as of the five short-chain acids by means of stable isotope dilution assays showed similar concentrations in most of the samples. Storage of a freshly ground white pepper powder for up to 7 months revealed a significant decrease in the typical odor qualities of white pepper and an increase in the fecal odor note with storage time. Because the concentrations of the odorants mentioned above were not much changed during storage, possibly very volatile odorants, such as alpha-pinene, which are able to mask the malodor, are lost during storage of, in particular, pepper powders. On the basis of odor activity values, which were calculated using breakthrough thresholds, in particular, 3-methylindole, 4-methylphenol, 3-methylphenol, and butanoic acid could be suggested as the main sources of the fecal off-flavor. 相似文献

This study compared 38 sainfoin and 2 Lotus accessions to their respective tannin contents, N buffer solubility, and in vitro protein degradation. Tannin contents were measured by a protein precipitation method using either bovine serum albumin or Rubisco and by the colorimetric HCl/butanol method. Precipitation of bovine serum albumin and Rubisco was highly correlated (R(2) = 0.939). Correlations between the protein precipitation variants and the HCl/butanol method were relatively low (R(2) < 0.6). Protein degradation was measured at 4 h of incubation in an inhibited in vitro system and could not be explained by any of the tannin assays (R(2) < 0.03) and only partially by N buffer solubility (R(2) ≤ 0.433). Decisive factors other than the quantity of tannins or their ability to precipitate proteins must be considered. The effects of product and preparation variables on the in-cup chemical composition of tea extracts is of interest because the appearance and taste characteristics and the possible health effects of a tea liquor arise from the chemical components extracted from the leaf during tea preparation. A comprehensive study was therefore undertaken to determine the contributions of product and preparation variables on the total soluble solids, caffeine, and polyphenol contents of tea extracts. The results of this study show that the variety, growing environment, manufacturing conditions, and grade (particle size) of the tea leaves each influence the tea leaf and final infusion compositions. In addition, the composition of the tea infusion was shown to be influenced by whether the tea was contained in a teabag and, if so, the size and material of construction of the bag. Finally, the preparation method, including the amounts of tea and water used, infusion time, and amount of agitation, was shown to be a major determinant of the component concentrations of tea beverages as consumed. An illustration of the variation introduced by these product and preparation factors is provided by comparing solids, caffeine, and polyphenol contents of green and black tea infusions when commercial products are prepared according to the instructions given on their packaging. 相似文献

Global change scenarios predict an increased risk for declining amounts of soil organic matter (SOM) for Central Germany. Within this region the production of bioenergy is one important strategy to counteract the rising anthropogenic CO2‐emissions. Both issues have a close connection: SOM is an important basis for soil productivity and requires a steady reproduction flux. Bioenergy production requires productive soils and partly consumes plant biomass C. Therefore, the available amount for SOM reproduction is reduced. This study provides a methodology for the large‐scale identification of areas with possible conflicts between bioenergy production and SOM reproduction based on (1) the prediction of climate change impact on SOM reproduction and (2) an analysis of the regional distribution of biogas plants. With the C demand index (CDI) and the capacity index (CAP), two indicators were developed which enable the identification of hot spots of high carbon demand for SOM reproduction due to climate change and the usage of bioenergy. As a result of low data requirements, the indicators are widely applicable and transferable to other large‐scale studies. The proposed methodology was applied to Central Germany as a pilot region. Results indicate a growing demand (10–40%) of fresh organic C from biomass for SOM production in comparison to the current level. The analysis reveals that the bioenergy C demand is not evenly distributed within the study region. It also shows some regional clustering. Furthermore, the analysis identifies certain hot spots of a high C demand, where a high capacity of biogas production may conflict with rising demands for biomass to mitigate climate change effects on SOM storage. The hot spot areas—identified and selected on a large scale—can subsequently be analyzed in more detail on a local to farm scale by using high‐resolution data and models which enable the quantification of soil C dynamics. 相似文献

Theoretical advances in systematic reserve design aim to promote the efficient use of limited conservation resources and to increase the likelihood that reserve networks enhance the persistence of valued species and ecosystems. However, these methods have rarely been applied to species that rely on spatially disjunct habitats. We used the marbled murrelet, a seabird that requires old-growth forest in which to nest and high quality marine habitats in which to forage, as a case study to explore methods of incorporating multiple ecological values into single species spatial reserve design. Specifically, we used the cost function in MARXAN to include the ecological value of marine habitats while identifying spatial solutions for terrestrial nesting habitat reserves. Including marine values influenced terrestrial reserve designs most when terrestrial habitat targets were low and little or none of the target was represented in pre-existing protected areas. Our results suggest that including marine values in the planning process will influence marbled murrelet terrestrial reserve designs most where substantial terrestrial nesting habitat still exists, where new reserves are relatively unconstrained by pre-existing reserves, or when conservation resources only allow the protection of a small fraction of available habitat. This paper presents a novel framework for incorporating multiple measures of ecological value in the spatial reserve design process and should be particularly useful for species that rely on multiple habitats during their life cycle. 相似文献

Consumption of a shiitake mushroom diet has been reported to have effects on serum phospholipids. However, much less is known about the effect on serum polar lipids including lysophospholipids and free fatty acids. In the present study, the effects of a shiitake diet were evaluated on the basis of identification and quantification of individual polar lipid components in rat serum using liquid chromatography-mass spectrometry/mass spectrometry. By comparison with standards and published data, 50 lysophospholipids and 32 free fatty acids were identified, and the concentrations of 27 polar lipids in rat serum were determined. Shiitake diets decreased the levels of all individual polar lipid components in the serum of male rat. The total level of serum polar lipids in males fed 4% shiitake diets (1365.71 mol/L) was significantly lower than that of the control (2270.26 mol/L). However, shiitake diets did not significantly affect the levels of serum polar lipids in female rats. 相似文献

Global warming in the Arctic may alter decomposition rates in Arctic soils and therefore nutrient availability. In addition, changes in the length of the growing season may increase plant productivity and the rate of labile C input below ground. We carried out an experiment in which inorganic nutrients (NH4NO3 and NaPO4) and organic substrates (glucose and glycine) were added to soils sampled from across the mountain birch forest-tundra heath ecotone in northern Sweden (organic and mineral soils from the forest, and organic soil only from the heath). Carbon dioxide production was then monitored continuously over the following 19 days. Neither inorganic N nor P additions substantially affected soil respiration rates when added separately. However, combined N and P additions stimulated microbial activity, with the response being greatest in the birch forest mineral soil (57% increase in CO2 production compared with 26% in the heath soil and 8% in the birch forest organic soil). Therefore, mineralisation rates in these soils may be stimulated if the overall nutrient availability to microbes increases in response to global change, but N deposition alone is unlikely to enhance decomposition. Adding either, or both, glucose and glycine increased microbial respiration. Isotopic separation indicated that the mineralisation of native soil organic matter (SOM) was stimulated by glucose addition in the heath soil and the forest mineral soil, but not in the forest organic soil. These positive ‘priming’ effects were lost following N addition in forest mineral soil, and following both N and P additions in the heath soil. In order to meet enhanced microbial nutrient demand, increased inputs of labile C from plants could stimulate the mineralisation of SOM, with the soil C stocks in the tundra-heath potentially most vulnerable. 相似文献
