An inverse gas chromatographic (IGC) method was developed to study the binding interactions between selected volatile flavor compounds and soy protein isolate (SPI) under controlled relative humidity (RH). Three volatile probes (hexane, 1-hexanol, and hexanal) at very low levels were used to evaluate and validate system performance. On the basis of the thermodynamic data and the isotherms measured at 0% RH, 1-hexanol and hexanal had higher binding affinities than hexane, which could be attributed to hydrogen-bonding interactions with SPI. At 30% RH, 1-hexanol and hexanal were retained less than at 0% RH, indicating possible competition for binding sites on the SPI surface between water and volatile probe molecules. Results showed that the thermodynamic data determined were comparable to the available literature values. Use of IGC allowed for the rapid and precise generation of sorption isotherms. Repeatability between replicate injections and reproducibility across columns were very good. IGC is a potentially high-throughput method for the sensitive, precise, and accurate measurement of flavor-ingredient interactions in low-moisture food systems.  相似文献

This study investigates the episodic acidification of Reedy Creek, a wetland-influenced coastal plain stream near Richmond, Virginia. Primary objectives of the study were to quantify the episodic variability of acid-base chemistry in Reedy Creek, to examine the seasonal variability in episodic response and to explain the hydrological and geochemical factors that contribute to episodic acidification. Chemical response was similar in each of the seven storms examined, however, the ranges in concentrations observed were commonly greater in summer/fall storms than in winter/spring storms. An increase in SO inf4 sup2? concentration with discharge was observed during all storms and peak concentration occurred at or near peak flow. Small increases in Mg2+, Ca2+, K+ concentrations and dissolved organic carbon (DOC) were observed during most storms. At the same time, ANC, Na+ and Cl? concentrations usually decreased with increasing discharge. In summer/fall storms, the absolute increase in SO inf4 sup2? concentration was one-third to 15 times the increase observed in winter/spring storms; the decrease in ANC during summer/fall storms was usually within the range of the decrease observed in winter/spring storms. In contrast, the decrease in Na+ and Cl? concentrations during winter/spring storms was much greater than that observed during summer/fall storms. Data show that while base flow anion deficit was higher in summer/fall than in winter/spring, anion deficit decreased during most summer/fall storms. In contrast, base flow anion deficit was lower in spring and winter, but increased during winter/spring storms. Increased SO inf4 sup2? concentration was the main cause of episodic acidification during storms at Reedy Creek, but increased anion deficit indicates organic acids may contribute to episodic acidification during winter/spring storms. Changes in SO inf4 sup2? concentration coincident with the hydrograph rise indicate quick routing of water through the watershed. Saturation overland flow appears to be the likely mechanism by which solutes are transported to the stream during storm flow.  相似文献

Adaptive management of natural resources is widely supported, but in biodiversity conservation there have been few practical applications of the approach in its entirety. Some of the contributions to this special publication examine progress in the implementation of adaptive approaches into conservation policy, while others explore novel theoretical and modeling approaches that seek to accommodate the complexities of real-world applications. Several of the papers address the treatment of uncertainty in adaptive management through innovative approaches to experimentation and monitoring, use and characterisation of expert knowledge and reconciliation of differences of opinion about parameters or systems. Drawing on these contributions, we discuss the major impediments to implementing adaptive management, why adaptive management has been slow to be implemented and how this can be redressed.  相似文献

Austral bracken Pteridium esculentum contains three unstable norsesquiterpene glycosides: ptaquiloside, ptesculentoside, and caudatoside, in variable proportions. The concentration of each of the glycosides was determined in this study as their respective degradation products, pterosin B, pterosin G and pterosin A, by HPLC-UV analysis. Samples of P. esculentum collected from six sites in eastern Australia contained up to 17 mg of total glycoside/g DW, with both ptaquiloside and ptesculentoside present as major components accompanied by smaller amounts of caudatoside. Ratios of ptaquiloside to ptesculentoside varied from 1:3 to 4:3, but in all Australian samples ptesculentoside was a significant component. This profile differed substantially from that of P. esculentum from New Zealand, which contained only small amounts of both ptesculentoside and caudatoside, with ptaquiloside as the dominant component. A similar profile with ptaquiloside as the dominant glycoside was obtained for Pteridium aquilinum subsp. wightianum (previously P. revolutum ) from northern Queensland and also P. aquilinum from European sources. Ptesculentoside has chemical reactivity similar to that of ptaquiloside and presumably biological activity similar to that of this potent carcinogen. The presence of this additional reactive glycoside in Australian P. esculentum implies greater toxicity for consuming animals than previously estimated from ptaquiloside content alone.  相似文献

Nonfat dry milk (NDM) is widely used both as an ingredient in other preparations and for direct consumption. Flavor quality of NDM is a critical parameter because it can directly impact final product quality. Flavors can be formed in NDM during subsequent storage. Identification of compounds responsible for storage-induced flavors is necessary to correlate sensory quality with potential sources of the flavors. Six NDM samples were selected for volatile flavor analysis based on sensory analysis and storage time. Volatile components were extracted by direct solvent extraction/high vacuum distillation. Volatile extracts were separated into neutral/basic and acidic fractions and analyzed by gas chromatography-olfactometry (GCO) and aroma extract dilution analysis (AEDA). A variety of aldehydes, ketones, and free fatty acids were responsible for generation of flavors in stored NDM. The following compounds exhibited high aroma impact by AEDA: 3-(methylthio)propanal (boiled potato); o-aminoacetophenone (corn tortilla); 2,5-dimethyl-4-hydroxy-3(2H)-furanone and 2-methyl-3-hydroxy-4H-pyran-4-one (burnt sugar); butanoic acid (cheesy); pentanoic acid (sweaty); acetic and hexanoic acids (sour/vinegar); octanoic, decanoic, and dodecanoic acids (waxy); p-cresol (cowy/barny); 3-methylindole (fecal); dimethyl trisulfide (cabbage); (E,E)-2,4-decadienal (fried/fatty); furfuryl alcohol (rubber/vitamin); phenylacetic acid (rose-like); and 1-octen-3-one (mushroom).  相似文献

Effect of storage on wall-bound phenolics in green asparagus   总被引:2,自引:0,他引:2  
The cell walls of green asparagus spears have been analyzed for their phenolic and carbohydrate composition as modified by postharvest storage. Esterified phenolic components were released by sequential alkaline hydrolysis and identified and quantified by diode array HPLC. Significant quantities of ferulic acid (FA) and its derivatives were found to increase at least 3-fold during storage, particularly in walls from the lower parts of the stem, where accompanying changes in sugar composition were also observed. In fresh asparagus, >60% of the total FA was in the form of diferulic acid, and this increased to approximately 70% after 3 days of storage. The main FA dehydrodimers were 8-8-, 8-O-4-, and 8-5-diferulates. These have been detected in other monocotyledonous and dicotyledonous plants, but as a smaller proportion of the total FA. The possible roles phenolic esters might have in relation to the mechanical, textural, and wound-response properties of asparagus spears are discussed.  相似文献

Abstract

The primary nitrogen forms utilized by plants are ammonium and nitrate. Although the importance of nutrients other than nitrogen for proper turfgrass growth is well established, the amounts of these nutrients in the plant tissue in relation to the use of different N‐forms has not been clearly documented. This study was conducted under greenhouse conditions to determine the effect of N‐form and cutting regime on growth, macronutrient, and micronutrient content of creeping bentgrass (Agrostis palustris Huds. ‘Penncross'). Treatments consisted of 100% NO3? (calcium nitrate), 100% NH4 + (ammonium sulfate), and a 50:50 ratio of NH4 +:NO3 ?. Half the turfgrass plants were maintained at a height of 1 cm (cut), while the other half of the plants were not cut until the end of the study (uncut). The uncut 50:50 treatment yielded the highest shoot, verdure, and total plant dry matter, while the uncut NO3 ? treatment produced the highest root dry matter. The uncut NH4 + treatment yielded the least shoot, root, and total plant dry matter. Plants of the uncut NO3 ? treatment had greater accumulation of macronutrients in the shoot and root tissue compared to plants of the NH4 + treatment. The uncut NO3 ? and 50:50 treatments had higher total accumulation of micronutrients compared to the uncut NH4 +‐treated plants. The cut NO3 ? treatment resulted in the highest macronutrient and micronutrient contents in the root tissue in comparison to other cut treatments. The cut treatments had the highest percentage accumulation of nutrients in the verdure tissue, while the uncut treatments had the highest percentage accumulation of nutrients in the shoot tissue.  相似文献

Denstity stratification was characterized in ionically enriched Onondaga Lake for a 7 mo period of 1980, based on paired profiles of temperature and cloride collected at 1 m depth intervals from a single deep water location on 54 different occasions. The lake was both thermally and chemically stratified. The chemical component represented 38.5% of the density stratification for the study period. It was most often the dominant component in establishing the depth of the upper mixed layer, which was unusually shallow in the lake. Further, the presense of the chemical component prolonged the stratification period. The chemical component of stratification decreased progressively through the study. The altered stratification characteristics of the lake may have negative effects on the level of biomass in the upper waters and the oxygen resources of the lower waters.  相似文献
