The pasting behavior of flour from several Australian rice (Oryza sativa L.) cultivars, differing in amylose content and grown in three different locations and three seasons, were determined using the Rapid Visco Analyser. Genotype, growth season, and growth location all affected the pasting behavior of rice flour. The amylose content of the same cultivar was significantly higher in the coolest growing season, resulting in RVA traces with lower peak viscosity and higher setback than samples with lower amylose content. When the same cultivar of rice was grown in different locations in the same season, there were no significant differences in the total starch, protein, lipid, and amylose content of the flour, but there were significant differences in the pasting behavior. This indicates that environmental as well as genetic factors influence the pasting behavior of rice flour. Flour from parboiled and quick‐cooking rice did not paste and had low viscosities compared with unprocessed rice. Results from this study showed that the pasting behavior of rice flour was related to genotype and was influenced by environmental factors that brought about subtle changes in the grains that were not picked up by chemical analyses. 相似文献

The efficacy of dietary supplementation of mannan oligosaccharide (MOS) (Bio‐Mos®, Aqua Grade; Alltech, Lexington, KY, USA) was evaluated on survival, growth, physiological and immunological parameters of marron, Cherax tenuimanus. Marron were fed six different isonitrogenous and isocalorific diets supplemented with 0, 0.05, 0.1, 0.2, 0.4, and 0.8% of MOS for a duration of 112 d and examined for survival and growth every 28 d. Physiological and immunological indicators were measured every 56 d. After 112 d, survival was the highest when marron were fed 0.2 and 0.4% MOS supplemented diets. Wet tail muscle index (TMIwet) and dry tail muscle index (TMIdry) of marron fed MOS supplemented diets were significantly higher (P < 0.05) than marron fed diet without MOS. Osmoregulatory capacity was highest in marron fed 0.4% MOS. Marron fed MOS supplemented diets had lower (P < 0.05) bacteraemia than marron fed diet without MOS. Hemolymph clotting time was the lowest and granular cells were the highest in marron fed 0.2 and 0.4% MOS. In this study, gelatin was obtained from the scales of seabass (Lates calcarifer) and grey mullet (Mugil cephalus) collected in Vietnam by using Alcalase® 2.4 L FG for pretreatment and electrochemically activated water with pH 2.0–2.5 for extraction. The characteristics and physicochemical properties of gelatin were investigated. The results indicated that the gelatin had a high protein content (88.6–90.0%) with ash (1.43–1.55%) and no fat. The gelatin was identified as type A due to its pH value. The yields of gelatin were 14.1–15.2%. The gel strength and melting point were 270.3 g and 26.7°C, respectively, for gelatin from seabass scales and 249.1 g and 25.9°C, respectively, for samples from grey mullet scales. In contrast, the viscosities of gelatin were found to be 6.97 cP for seabass and 8.73 cP for grey mullet. Both gelatins contained α-chain and β-chain as the major components. Circular dichroism spectra indicated that the triple helical structure in collagen was almost transformed to the random coil structure in gelatin. The proportion of imino acids was high (197–205 residues/1,000 residues). So, gelatin from seabass and grey mullet scales could be used as a potential replacement for mammalian gelatin. 相似文献

The study characterized genetic diversity and genetic structure of five indigenous pig populations (Ha Lang, Muong Te, Mong Cai, Lung and Lung Pu), two wild pig populations (Vietnamese and Thai wild pigs) and an exotic pig breed (Yorkshire) using FAO/ISAG recommended 16 microsatellite markers in 236 samples. All estimated loci were very polymorphic indicated by high values of polymorphism information content (from 0.76 in S0225 to 0.92 in Sw2410). Indigenous populations had very high level of genetic diversity (mean He = 0.75); of all indigenous breeds, Lung Pu showed highest mean number of alleles (MNA = 10.1), gene diversity (He = 0.82), allele richness (5.33) and number of private alleles (10). Thirteen percentage of the total genetic variation observed was due to differences among populations. The neighbour‐joining dendrogram obtained from Nei's standard genetic distance differentiated eight populations into four groups including Yorkshire, two wild populations, Mong Cai population and a group of four other indigenous populations. The Bayesian clustering with the admixture model implemented in Structure 2.1 indicated seven possible homogenous clusters among eight populations. From 79% (Ha Lang) to 98% (Mong Cai). individuals in indigenous pigs were assigned to their own populations. The impact of low pathogenicity avian influenza (LPAI) has been confirmed mainly in farms. Unlike apparent losses caused by the high pathogenicity avian influenza (HPAI), the LPAI impact has been hardly evaluated due to underestimating its spread and damage. In 2019, a questionnaire study was conducted in southern Vietnam to identify the specific risk factors of LPAI virus (LPAIV) circulation and to find associations between husbandry activities and LPAI prevalence. A multilevel regression analysis indicated that keeping Muscovy ducks during farming contributed to LPAIV positivity [Odds ratio=208.2 (95% confidence interval: 13.4–1.1 × 104)]. In cluster analysis, farmers willing to report avian influenza (AI) events and who agreed with the local AI control policy had a slightly lower risk for LPAIV infection although there was no significance in the correlation between farmer characteristics and LPAI occurrence. These findings indicated that keeping Muscovy ducks without appropriate countermeasures might increase the risk of LPAIV infection. Furthermore, specific control measures at the local level are effective for LPAIV circulation, and the improvement of knowledge about biosecurity and attitude contributes to reducing LPAI damage. 相似文献

ABSTRACTThis study measures cost-efficiency and its determinants for 353 marine cage lobster farms in Vietnam using a two-stage bootstrap data envelopment analysis (DEA). In the first stage, the bootstrap DEA approach was used to obtain bias-corrected technical, allocative cost-efficiencies for the farms. Then, the bias-corrected cost-efficiency scores were regressed on a set of explanatory variables using a bootstrapped truncated regression. The results show that substantial cost-inefficiency occurs in lobster aquaculture due to the overuse of inputs, which, given the prevailing input prices, are also used in inappropriate ratios. Cost-efficiency is shown to be significantly impacted by the age of the farmer, total cage volume and by variables affecting the production environment such as the cage cleaning, distance to the nearest farms and the presence of other discharges into the marine environment. 相似文献

ABSTRACT: Accumulation profiles of 22 trace elements in abdominal muscle, abdominal exoskeleton and the hepatopancreas of the giant river prawn Macrobrachium rosenbergii were analyzed. The giant river prawn is an indigenous freshwater species from South Vietnam, and is cultured commercially and fished in the wild. Samples were collected from Ho Chi Minh City and the surrounding area (SKEZ, South Key Economic Zone), and from the Mekong River Delta between 2003 and 2005. Highest accumulations of essential (Cu, Se and Mo) and toxic (As, Ag, Cd and Hg) elements were observed in hepatopancreatic tissue, except for Mn, Sr, Sn, Ba and V in the exoskeleton and Rb and Cs in muscle tissue. Spatial differences showed concentrations of Cs and Pb in muscle and Sr in exoskeletons from the SKEZ were higher than those from the Mekong River Delta. The opposite trend was observed for Cr, Se and Sb in muscle, Mo, Sb and Tl in exoskeleton, and Se, Hg, Mo, Cd, Sb, Tl and Bi in the hepatopancreas. These differences in trace element concentrations in prawns likely reflect differences in industrialization and human activities between the two regions of South Vietnam. 相似文献

The objectives of this study were to evaluate the effects of supplementing maize meal and soybean meal, separately or mixed, on egg production performance of two breeds of scavenging hens under on-farm conditions. Treatments were: (1) confined, with a mixed feed (75% maize meal and 25% soybean meal) ad libitum (CMF); (2) scavenging, with a supplement of 60 g/bird per day of maize meal (ScM); (3) scavenging, with a supplement of 25 g/bird per day of soybean meal (ScS); (4) scavenging, with 54 g/ bird per day of the mixed feed (ScMF). Mean hen-day production was 21.8%, 19.8%, 17.7% and 22.8% for the CMF, ScM, ScS and ScMF treatments, respectively (p <0.05), and was significantly (p <0.001) higher for the improved Tamhoang breed (24.4%) than for the local Ri hens (16.7%). Mean egg weight was significantly higher for the Tamhoang (53.2 g) compared to the Ri hens (45.0 g) (p<0.01). Feed consumption per kilogram of eggs was significantly higher for the CMF treatment compared to the other treatments and was lower for the ScS compared to the other scavenging treatments (p <0.05). Feed cost per kilogram of eggs was lowest for the ScM treatment and was 30 to 40% higher for the confined treatment compared to the scavenging treatments. Feed consumption and cost of feed per kilogram of eggs were significantly lower for the Tamhoang than for the Ri hens. 相似文献
