The objective of this study was to determine the optimal postmortem aging period and nutrient composition for Beef Value Cuts of the round. Forty USDA Select and 40 Premium USDA Choice beef carcasses were selected from a commercial beef packing plant in Colorado over a 12-wk period. The bottom and inside rounds were collected from both sides of each carcass for further fabrication into the following muscles: adductor, gastrocnemius, gracilis, pectineus, and superficial digital flexor. Each pair of muscles was cut into 7 steaks and randomly assigned to 1 of the following aging periods: 2, 4, 6, 10, 14, 21, and 28 d, and placed in refrigerated storage (2°C, never frozen). Upon completion of the designated aging period, steaks were removed from storage, cooked to a peak internal temperature of 72°C, and evaluated using Warner-Bratzler shear force (WBSF). A 2-way interaction was detected (P < 0.05) between individual muscle and postmortem aging period. The WBSF of all muscles except the superficial digital flexor decreased with increased time of postmortem aging. Quality grade did not affect (P > 0.05) WBSF values for the adductor, gastrocnemius, pectineus, and superficial digital flexor muscles. Exponential decay models were used to predict the change in WBSF from 2 to 28 d postmortem (aging response). The adductor, gastrocnemius, Select gracilis, Premium Choice gracilis, and pectineus required 21, 14, 23, 23, and 25 d, respectively, to complete the majority of the aging response. To determine the nutrient composition of the adductor, gastrocnemius, gracilis, pectineus, semimembranosus, and superficial digital flexor, bottom and inside rounds were collected from 10 USDA Select and 10 Premium USDA Choice carcasses and fabricated into the respective muscles, cut into 2.54-cm cubes, frozen (-20°C), and then homogenized. The adductor, gracilis, pectineus, semimembranosus, and superficial digital flexor were analyzed for DM, moisture, CP, and ash percentages. All muscles were evaluated for total lipid, fatty acid, and cholesterol composition. When quality grades were combined, all muscles fell into the extra lean or lean categories specified by USDA guidelines. Results of this study illustrate the potential for Beef Value Cuts of the round to be sold in food service operations and retail stores with marketing emphasis being placed on the exceptional leanness and acceptable tenderness of these cuts. 相似文献

1.?Severe foot and hock dermatitis in broiler chickens can reduce growth rate and increase susceptibility to bacterial infection, affecting both profitability and welfare. However, little is known about the underlying physiological changes associated with foot and hock lesions. 2.?This study compared global hepatic gene expression in control birds and those with ammonia-induced foot and hock lesions using Agilent 44?K chicken oligonucleotide microarrays (8 birds per group). 3.?In total, 417 genes were differentially expressed of which 174 could be mapped onto the genome. Genes associated with energy metabolism, thyroid hormone activity and cellular control were affected, while there was also evidence of an up-regulation of genes linked to a pro-inflammatory response. 4.?It is conceivable that pain is the underlying cause for the observed changes in energy metabolism genes. 5.?Changes in hepatic gene expression provide new information on how a chicken's physiological mechanisms alter to cope with foot and hock lesions. The findings support other data indicating that birds with increased severity of lesions are likely to be in pain and that growth will be compromised. Perineal hernias almost exclusively affect male dogs (sexually intact or castrated). Factors that may contribute or predispose a dog to perineal hernias include tenesmus, pelvic musculature variations (male vs female), and gonadal hormone influence. In dogs with perineal hernias and tenesmus it is important to include rectal and prostatic diseases, including paraprostatic cysts, in the differential list of potential underlying causes. Surgical correction of the perineal hernia with a perineal herniorrhaphy is indicated. Successful treatment depends on the degree of preexisting neurologic alterations, meticulous surgical technique, and identification and correction of underlying contributing factors. Paraprostatic cysts develop predominantly in sexually intact medium to large breed dogs. These cysts are thin-walled structures often attached to the prostatic dorsal midline. Osseous metaplasia of paraprostatic cysts may occur. Clinical signs of tenesmus often result from compression on adjacent structures (urinary bladder and colon), and tenesmus may contribute to the development of perineal hernias. Preferred treatment of a paraprostatic cyst is surgical removal and castration. This report describes a dog with bilateral perineal hernias and a large mineralized paraprostatic cyst that was identified as a possible contributing factor to the hernias. 相似文献

1. We investigated the use of monthly production records for genetic evaluation of laying hens, derived from a test day model with random regression in dairy cattle and compared it with other models. 2. Records of 6450 hens, daughters of 180 sires and 1335 dams, were analysed using a model with restricted maximum likelihood (REML): traits considered were monthly and cumulative egg production. Five models were studied: (1) random regression with covariates derived from the regression of Ali and Schaeffer (Canadian Journal of Animal Science, 67: 637-644, 1987) (RRMAS), (2) random regression with covariates derived from quartic polynomial (RRMP4), (3) fixed regression with covariates derived from Ali and Schaeffer (FRM), (4) multiple trait (MTM) and (5) cumulative (CM). 3. The models were compared on the basis of Spearman rank correlations of individual breeding values and sire breeding values estimated from subsets of full-sib split data. The hens (about 10% per generation) which ranked highest on their estimated breeding values from different models were compared phenotypically with their full records. 4. The estimates of heritability resulting from RRMP4 were biased upward from the estimates obtained from MTM, so this model was discarded. The heritabilities for monthly productions from RRMAS and MTM showed a similar pattern. They were high for the 1st month of production, decreased to their lowest value at about month 5 of production and increased again to the end of lay. 5. Spearman rank correlations between animal breeding values estimated by monthly models (RRMAS, FRM and MTM) were high, between 0.91 and 0.98, whereas those between estimates of monthly models and CM were lower, from 0.85 to 0.87. The correlations estimated either from intermittent months of measurements (odd vs even months) or full records were generally high, from 0.93 to 0.99. Information from odd months of production could be sufficient for cost-efficient recording schemes. The RRMAS generally had the highest correlation of sire breeding values between subsets of full-sib records, followed by MTM, RM and CM. Monthly models selected hens with higher productivity than the cumulative model. 6. In conclusion, genetic evaluation based on monthly production may be better than using cumulative production and RRMAS appeared to be the best among the models tested here. 相似文献

The present experiment characterized the pituitary responsiveness to exogenous GnRH in the first 10 d after ovulation following commercially available deslorelin acetate implantation at the normal dosage for hastening ovulation in mares. Twelve mature, cyclic mares were assessed daily for estrus and three times weekly for ovarian activity starting May 1. Mares achieving a follicle at least 25 mm in diameter or showing signs of estrus were checked daily thereafter for ovarian characteristics. When a follicle >30 mm was detected, mares were administered either a single deslorelin acetate implant or a sham injection and then assessed daily for ovulation. On d 1, 4, 7, and 10 following ovulation, each mare was challenged i.v. with 50 microg GnRH, and blood samples were collected to characterize the LH and FSH responses. The size of the largest follicle on the day of treatment did not differ (P = 0.89) between groups. The number of days from treatment to ovulation was shorter (P < 0.001) by 2.0 d for the treated mares indicating a hastening of ovulation. The size of the largest follicle present on the days of GnRH challenge was larger in the treated mares on d 1 (P = 0.007) but smaller on d 10 (P = 0.02). In addition, the interovulatory interval was longer (P = 0.036) in the treated mares relative to controls by 4.4 d. Concentrations of FSH in plasma of the treated mares were lower (P < 0.05) than control concentrations from d 3 to 12; LH concentrations in the treated mares were lower (P < 0.05) relative to controls on d 0 to 5, d 7, and again on d 20 to 23. Progesterone values were the same (P = 0.99) for both groups from 2 d before ovulation though d 23. There was an interaction of treatment, day, and time of sampling (P < 0.001) for LH and FSH concentrations after injection of GnRH. Both the LH and FSH responses were suppressed (P < 0.009) in the treated mares relative to controls on d 1, 4, and 7; by d 10, the responses of the two groups were equivalent. In conclusion, deslorelin administration in this manner increased the interovulatory interval, consistently suppressed plasma LH and FSH concentrations, and resulted in a complete lack of responsiveness of LH and FSH to GnRH stimulation at the dose used during the first 7 d after the induced ovulation. The copper and zinc contents of 25 rations for adult horses were evaluated. The total amount of copper and zinc daily ingested was obtained by adding the amount of each element contained and added of the commercial feed to the amount contained in ingested hay and oats. The total amount of copper and zinc ingested daily was compared with the official recommendations for the maintenance of an adult horse of 550 kg. The results show that a traditional ration oats/hay does not contain a sufficient amount of copper and zinc in order to cover their respective requirements. Furthermore, many rations which include commercial feed also do not cover the requirements of these two elements. The importance of these observations is discussed in the light of the eventual need to complete the rations. 相似文献

OBJECTIVE: To measure apolipoproteins in cerebrospinal fluid (CSF) from healthy mares and to determine whether CSF concentrations of apolipoproteins change during pregnancy and lactation. ANIMALS: 5 healthy pregnant mares. PROCEDURE: 2 sets of CSF samples were obtained; initial samples were obtained 10 to 30 days before parturition (mean, 18 days; median, 17 days), and second samples were obtained 19 to 26 days after parturition (mean, 23 days; median, 23 days). Cerebrospinal fluid was collected from the lumbosacral subarachnoid space of standing horses by use of routine collection techniques. Cerebrospinal fluid cholesterol concentrations were measured by use of a sensitive enzymatic assay. Ultracentrifugal fractions of CSF lipoproteins were characterized by determining the distribution of apolipoproteins, using polyacrylamide gel electrophoresis. RESULTS: Analyses of isolated ultracentrifugal fractions by polyacrylamide gel electrophoresis revealed 2 apolipoproteins, with the expected molecular weights for apolipoprotein E and apolipoprotein A-I. No significant differences were observed between pre- and postpartum values in mares. The concentration of cholesterol in CSF fluid of mares was comparable to values reported in other mammals. CONCLUSIONS AND CLINICAL RELEVANCE: Apolipoprotein E in CSF of horses is a major apolipoprotein associated with high-density lipoproteins, which is similar to findings in other mammals. Additional characterization of the role of apolipoproteins in mammalian CSF may provide critical insight into various degenerative neurologic disease processes. 相似文献

Mortality records of 8,642 lambs from a composite population at the U.S. Meat Animal Research Center during the first year of life were studied using discrete survival analyses. Lamb mortality was studied across periods from birth to weaning, birth to 365 d of age, and weaning to 365 d of age. Animal-time data sets were created for each period using different time intervals: daily, weekly, fortnightly, and monthly. Each data set was analyzed using logistic and complementary log-log sire, animal, and maternal effects models. Explanatory variables included in the models were duration of time interval, sex, type of birth, contemporary group, age of dam, and type of upbringing (nursery or not). Similar estimates of explanatory variables were obtained within the same period across models and different time intervals. Heritability estimates from the complementary log-log models were greater than those from the comparable logistic models because of the difference in variance of the respective link functions. Heritability estimates from the complementary log-log sire model ranged from 0.13 to 0.21 for all periods. These estimates were greater than the complementary log-log animal model estimates that ranged from 0.04 to 0.12. Maternal effects were important early in life, with the maternal heritability slightly greater than the direct additive heritability. Negative correlations (-0.72 to -0.65) between direct additive and maternal effects was estimated. The similarity of results among survival analysis methods demonstrates that the discrete methodology is a viable alternative to estimate variance components in livestock survival data. 相似文献
