During dough fermentation, yeast (Saccharomyces cerevisiae) changes the physical properties of the dough matrix. In this study, we investigate if different yeast strains have an impact on dough rheology and on the gas holding capacity of fermenting dough. Furthermore, we analyze whether observed differences are linked to the metabolite profiles of the yeast strains. More specifically, the impact of 25 yeast strains on dough spread, dough fermentation properties, and dough metabolite profile was analyzed. Our results demonstrate large differences in the fermentation ability and metabolite profile of the 25 strains. Analysis of metabolites in fermented dough confirmed that acetic acid and succinic acid are likely responsible for the lowering of dough pH during fermentation and that the onset of CO2 release from dough is related to dough pH rather than to the volume of CO2 within the dough. Our results further suggest that the spread test is an inadequate tool to quantify rheological differences observed for strains with different fermentation profiles.  相似文献

Three essential oils, oregano, red thyme, and cassia (100% pure oil), were encapsulated by phase separation into zein nanospheres. Topographical images indicated that the powders were made up of irregularly shaped particles ( approximately 50 mum) containing close-packed nanospheres. Approximately 31% of the oregano encapsulated particles had mean diameters greater than 100 nm compared to 19% for the zein alone particles. In vitro digestion of zein particles with pepsin at a concentration ratio of 10:1 was complete after 52 h in phosphate-citrate buffer, pH 3.5, at 37 degrees C by spectroscopic analysis. Nonenzymatic, aqueous in vitro release of essential oils from encapsulated zein particles was carried out in phosphate buffered saline at pH 7.4 and 37 degrees C. Release occurred at varying rates over 20 h probably from different locations within the closely packed nanospheres of different sizes. Gel electrophoresis SDS-PAGE of zein incubated with freeze-dried swine manure solids at 37 degrees C indicated that preformed microbial enzymes capable of digesting zein within minutes were present in the manure. Except for differences in size of nanospheres, no structural differences were resolved by several microscopic methods, suggesting that the oil and proteins phases were blended during phase separation.  相似文献

A juvenile male greater shearwater (Puffinus gravis) found off the Georgia coast, United States, was lethargic, hypothermic, dehydrated, and emaciated. It was provided with supportive care but subsequently died. The coelomic cavity contained fibrinous fluid intermixed with hundreds of nematodes, some of which protruded through a perforation in the proventriculus. Nematodes were embedded in the wall of the proventriculus from the lamina propria to the serosal surface and were surrounded by granulocytes, epithelioid macrophages, multinucleate giant cells, lymphocytes, and fibroplasia. A full-thickness tear in the proventriculus was lined by heterophils and multinucleate giant cells. The nematode histomorphology was consistent with Anisakis spp. The definitive hosts of Anisakis spp. are marine mammals, which are infected through ingestion of parasitized fish and crustaceans. Marine birds are aberrant hosts of Anisakis spp., and young, inexperienced, immunocompromised birds might be more susceptible to severe infestations. Fatal anisakiasis is rarely reported in birds.  相似文献

We examined the effects of fertilization and gypsy moth defoliation on condensed tannin concentration (%CT) of hybrid poplar (Populus x canadensis cv 'Eugeneii') fine roots in the summers of 1997 and 1998. This factorial experiment included two defoliation treatments (defoliated and a foliated control) and fertilization treatments (100 kg nitrogen (N) ha(-1) and an unfertilized control). Gypsy moth (Lymantria dispar L.) populations were experimentally increased to obtain defoliation in the summers of 1996, 1997 and 1998; fertilization subplots were supplemented with NH4NO3 (100 kg N ha(-1)) in the spring of each year. Despite the severity of defoliation, the effects were small, and significant on only two sampling dates: in May 1997, when fine root %CT was 23% lower in the defoliated trees, and in November 1997, when trees in the defoliated unfertilized plots had 35% higher root %CT than trees in all other plots. Defoliation effects on root %CT did not follow the same seasonal pattern as defoliation effects on root starch content, N uptake capacity or leaf %CT. Regulation of root condensed tannin concentration appeared to be partially uncoupled from these traits. The small transient effects on root defense reflect the resilience of this early successional tree to severe early season defoliation.  相似文献

This paper describes advances in hatchery and grow‐out technology of cobia (Rachycentron canadum, Linnaeus). In 2007, methods for capture, transport, acclimation, sampling, conditioned spawning, larval rearing, fingerling production, nursery, shipping and grow‐out have been perfected. Survival rates ranging from 17.5% to 35% were achieved from egg to shipping size fingerlings (1.0 g) in 2007 at the University of Miami Experimental Fish Hatchery, with production of approximately 20 000 fingerlings per 12 000 L tank. Wild and F1 broodstock cobia have been conditioned to spawn through temperature manipulation producing viable eggs for experimental and production level larval rearing trials in several hatcheries. Brood fish have also been induced to spawn using hormones. Cobia appear to be susceptible to infestations by parasitic protozoa such as Amyloodinium ocellatum and to infections caused by deleterious bacteria such as Photobacterium spp. and Vibrio spp. Prophylactic methods used to prevent and control epizootic diseases at the hatchery are summarized. Improved techniques for cage management were implemented, and both novel designs of submerged cages deployed in exposed areas and traditional gravity cages in protected areas have been used for commercial ongrowing of cobia in the Americas and the Caribbean region.  相似文献

Many organisms persist in fragmented habitat where movement between patches is essential for long-term demographic and genetic stability. In the absence of direct observation of movement, connectivity or isolation metrics are useful to characterize potential patch-level connectivity. However, multiple metrics exist at varying levels of complexity, and empirical data on species distribution are rarely used to compare performance of metrics. We compared 12 connectivity metrics of varying degrees of complexity to determine which metric best predicts the distribution of prairie dog colonies along an urban gradient of 385 isolated habitat patches in Denver, Colorado, USA. We found that a modified version of the incidence function model including area-weighting of patches and a cost-weighted distance surface best predicted occupancy, where we assumed roads were fairly impermeable to movement, and low-lying drainages provided dispersal corridors. We also found this result to be robust to a range of cost weight parameters. Our results suggest that metrics should incorporate both patch area and the composition of the surrounding matrix. These results provide guidance for improved landscape habitat modeling in fragmented landscapes and can help identify target habitat for conservation and management of prairie dogs in urban systems.  相似文献

A new biophenolic secoiridoid was identified in Australian Frantoio olive mill waste (OMW) extracts. Isolation, purification, and structure elucidation were performed. Hydroxytyrosyl acyclodihydroelenolate, the first nonaldehydic acyclic secoiridoid, is reported. A second compound was identified as p-coumaroyl-6'-secologanoside (comselogoside), and although it has been identified recently in OMW and leaves, this is the first time it has been identified in both OMW and olive fruits. UV, mass spectral, and NMR data are given for both compounds. The two compounds were quantified by HPLC-DAD, and their antioxidant potential was assessed against the classical olive biophenols, hydroxytyrosol and oleuropein, by the in vitro DPPH radical scavenging assay.  相似文献
