Granule size distribution of wheat starch is an important characteristic that can influence its chemical composition, which in turn may affect its functionality. The granule size distribution and chemical composition of soft wheat starches were characterized and compared and relationships among those properties were identified. Thirty-four starch samples from 12 soft wheat cultivars grown in the eastern half of the United States were examined. Granule size distribution was characterized using a laser light-scattering technique. Amylose and phospholipid contents were determined using colorimetric procedures. A clear trimodal distribution of granule sizes was shown by 26 out of 34 starch samples: small granules with diameters <2.8 μm, midsize granules with diameters of 2.8–9.9 μm, and large granules with diameters >9.9 μm. Volume% distribution of granules within the three size classes had ranges of 9.7–15.2% (small), 13.4–27.9% (medium), and 57.9–76.9% (large). Highly significant differences were seen among the cultivars for volume% of granules within the ranges of 9.9–18.5 μm and 18.5–42.8 μm. Cultivar specific surface area means also differed. The environment affected granule size distribution, with some cultivars exhibiting more variation than others. Pioneer 2555 was the least variable, whereas Pioneer 2550 and Geneva were the most variable cultivars. Mean total amylose (TAM), apparent amylose (AAM), and lysophospholipid (LPL) values varied significantly among cultivars. TAM was positively correlated with the volume% of granules of 9.9–18.5 μm. LPL was negatively correlated with mean starch granule diameter and positively correlated with specific surface area of granules, indicating smaller granules tended to have higher lipid contents. Results suggest that significant differences exist in granule size distribution of soft wheat starches and affect starch chemical composition. Data also suggest it is possible that lipid is preferentially associated with the biosynthesis of small starch granules.  相似文献

During testing of wheats at the early generation developmental stage, often there is not enough seed to mill for bake testing products such as sugar‐snap cookie diameter. This study reports a prediction equation for sugar‐snap cookie diameter that uses sucrose solvent retention capacity (SRC), wheat milling softness, and flour protein content. A total of 507 wheats were milled using three laboratory milling systems (short, medium, and long mill flow). Prediction equations were similar for all three mills. Standard errors of prediction were <2% of the mean estimate of cookie diameter. Additional observations eliminated lactic acid SRC (an indication of glutenin strength), alkaline water retention capacity (a traditional predictor of pastry quality), and flour yield (the main milling quality characteristic) from the prediction model.  相似文献

Of interest to researchers and urban planners is the effect of urban forests on concentrations of ambient air pollution. Although estimates of the attenuation effect of urban vegetation on levels of air pollution have been put forward, there have been few monitored data on small-scale changes within forests, especially in urban forest patches. This study explores the spatial attenuation of particulate matter air pollution less than 10 μ in diameter (PM10) within the confines of an evergreen broadleaved urban forest patch in Christchurch, New Zealand, a city with high levels of PM10 winter air pollution. The monitoring network consisted of eight monitoring sites at various distances from the edge of the canopy and was operated on 13 winter nights when conditions were conducive for high pollution events. A negative gradient of particulate concentration was found, moving from higher mean PM10 concentrations outside the forest (mean=31.5 μg m?3) to lower concentrations deep within the forest (mean=22.4 μg m?3). A mixed-effects model applied to monitor meteorological, spatial and pollution data indicated temperature and an interaction between wind speed and temperature were also significant (P?0.05) predictors of particulate concentration. These results provide evidence of the potential role that urban forest patches may play in mitigating particulate matter air pollution and should be considered in plans for improving urban air quality.  相似文献

Significant changes in starch, total nitrogen and dry weight occurred 4, 5, 6, 7, 8 and 11 days after planting in the cotyledons of developing bean seedlings, cv. Greenpod 478. These changes were significantly correlated with increases in plant dry weight and an increase in top : root ratio from 2.8 : 1 at emergence (4 days) to 5.6 : 1 at cotyledon senescence (11 days). Although 57% of the cotyledons of cv. Slimgreen were cracked, the pattern of changes in the constituents and associated plant growth was similar to that for Greenpod 478, but the magnitude was generally smaller. Subsequent tests to determine the effect of cracking on changes in cotyledon constituents showed marked influences of this type injury on the starch and total nitrogen contents in cotyledons and on top growth.  相似文献

This study investigated the effects of different concentrations of FSH (10, 50, 100 and 200 ng/ml) in supplemented MEM+ on the development of equine pre‐antral follicles that were cultured in vitro for 2 or 6 days. The ovaries (n = 5) from mares in seasonal anoestrus were collected from a local abattoir. Ten ovarian tissue fragments of approximately 3 × 3 × 1 mm were obtained from each animal. The fragments were cultured in situ for 2 days (D2) or 6 days (D6) in MEM+ or MEM+ supplemented with FSH at four different concentrations, establishing the following 11 groups: control (D0); MEM + (D2); MEM + (D6); MEM + 10 ng/ml of FSH (D2); MEM + 10 ng/ml of FSH (D6); MEM + 50 ng/ml of FSH (D2); MEM + 50 ng/ml of FSH (D6); MEM + 100 ng/ml of FSH (D2); MEM + 100 ng/ml of FSH (D6); MEM + 200 ng/ml of FSH (D2); and MEM + 200 ng/ml of FSH (D6). Follicles were observed in only 9.65% (388 of 4,018) of the histological sections. Of the 861 follicles evaluated, 488 were in the primordial stage, and 373 were in various developmental stages; 59.7% were morphologically normal. Regarding the integrity of the pre‐antral follicles, the groups with 100 ng/ml FSH of 2‐days culture as well as 50, 100 and 200 ng/ml FSH of 6‐days culture provided the best results. In conclusion, the in vitro culture of abattoir‐derived equine ovarian fragments presented better morphological integrity when supplemented with FSH for 6 days, in comparison with the MEM culture group. However, no clear effects were observed with FSH regarding the promotion of activation from a primordial to a developing follicle.  相似文献
