The effect of fat content and carbohydrate fat-replacers on the release of volatile odor compounds from beefburger, salami, and frankfurter has been investigated. The reduction in fat content in any of the three meat products studied resulted in a tendency toward an increase in the quantities of volatiles released in the headspace. Tapioca starch and maltodextrin appear to delay the release of certain classes of compounds selectively; for instance, tapioca starch appears to slow the release of some Maillard products while maltodextrin has a similar effect on terpenes. In contrast, oat fiber decreases the release of most of the compounds analyzed. Thus, the addition of carbohydrate fat-replacers to low-fat meat products could assist the flavor qualities of low-fat meat products by slowing down the release of odor compounds.  相似文献

Previous studies suggest that differences in concentrations of natural flavor precursors of the Maillard reaction may affect the odor and flavor of cooked chicken meat. To determine whether such differences occur in the purchased product, chickens from a range of commercial sources were analyzed for selected precursors. These analyses demonstrated that variation occurs both between different commercial sources and between individual chickens from the same source. Coefficients of variation exceeding 30% were observed for inosine 5'-monophosphate, guanosine 5'-monophosphate, and inosine, comparable with those previously determined for reducing sugars and their phosphates. These correspond to concentration ranges of 3-fold and higher, which in some cases may have the potential to affect odor and flavor formation. In contrast, thiamin and amino acids (both protein and nonprotein) show less variation with ranges mainly less than 2-fold.  相似文献

Panoramic Camera images at Gusev crater reveal a rock-strewn surface interspersed with high- to moderate-albedo fine-grained deposits occurring in part as drifts or in small circular swales or hollows. Optically thick coatings of fine-grained ferric iron-rich dust dominate most bright soil and rock surfaces. Spectra of some darker rock surfaces and rock regions exposed by brushing or grinding show near-infrared spectral signatures consistent with the presence of mafic silicates such as pyroxene or olivine. Atmospheric observations show a steady decline in dust opacity during the mission, and astronomical observations captured solar transits by the martian moons, Phobos and Deimos, as well as a view of Earth from the martian surface.  相似文献

Mycoplasma gallisepticum, a major pathogen of chickens and turkeys, has caused significant declines in house finch (Carpodacus mexicanus) populations in the eastern United States since it was first observed in this species in 1994. There is evidence that M. gallisepticum infection is now endemic among eastern house finches, although disease prevalence has declined, suggesting an evolving host-parasite relationship. Studies based on randomly amplified polymorphic DNA (RAPD) have documented the presence of a single, unique RAPD profile in house finch M. gallisepticum isolates, suggesting a single point source of origin, which agrees with the known epidemiologic observations. In the present study, we evaluated the molecular variability of 55 house finch isolates as well as 11 chicken and turkey isolates including reference strains of M. gallisepticum. Molecular variability was evaluated by polymerase chain reaction (PCR)-restriction fragment length polymorphism (RFLP) analysis and nucleotide sequencing of the pvpA gene, which encodes for the putative cytadhesin protein PvpA. Three different RFLP groups and 16 genotypes were evident from the 55 house finch isolates evaluated. Sequence analysis of pvpA gene PCR products showed that although most house finch M. gallisepticum isolates clustered more closely to each other, others clustered more closely to either turkey or chicken field isolates. These findings suggest that house finch isolates are more polymorphic than previously recognized by RAPD studies. This feature may allow us to learn more about the molecular evolution and epidemiology of this emerging disease host-parasite relationship.  相似文献

Sensory evaluation was used to identify flavor precursors that are critical for flavor development in cooked chicken. Among the potential flavor precursors studied (thiamin, inosine 5'-monophosphate, ribose, ribose-5-phosphate, glucose, and glucose-6-phosphate), ribose appears most important for chicken aroma. An elevated concentration (added or natural) of only 2-4-fold the natural concentration gives an increase in the selected aroma and flavor attributes of cooked chicken meat. Assessment of the volatile odor compounds by gas chromatography-odor assessment and gas chromatography-mass spectrometry showed that ribose increased odors described as "roasted" and "chicken" and that the changes in odor due to additional ribose are probably caused by elevated concentrations of compounds such as 2-furanmethanethiol, 2-methyl-3-furanthiol, and 3-methylthiopropanal.  相似文献

The impacts of using a modified farrowing pen (MOD) on the performance of sows and their litters and on ambient air quality over a hot and a cool season were evaluated. Primiparous Yorkshire × Landrace sows farrowed either during the months of February and March (thermoneutralily, TN) or June and July (heat-stress, HS). Temperatures within each season were controlled to 21 and 29 °C, respectively, for TN and HS. Animals from each group were assigned to a standard farrowing crate (STD; TN, n = 17; HS, n = 16) or a MOD pen (TN, n = 19; HS, n = 19). The MOD pen consisted of a STD crate with a 1.5 × 1.6-m comfort zone in the back, equipped with rubber floor mats, a feeder and a nipple waterer. Litter size was standardized to 10 or 11. No creep feed was provided and piglets were weighed weekly. Sows were weighed on days 2 and 22. Feed intake of sows was monitored daily, a milk sample was obtained on day 21 for compositional analyses and jugular blood samples were collected on days 2 and 21 to measure prolactin, IGF-I and urea. Sows consumed less feed (3.4 vs. 4.7 ± 0.1 kg/day, P < 0.001) in a hot than in a cool season and, at 29 °C, sows in MOD pens consumed more feed (3.9 vs. 3.0 ± 0.2 kg/day, P < 0.01) than sows in STD pens. Sow lactation weight loss was greater (− 26.4 vs. − 19.1 ± 1.9 kg, P < 0.05) for sows in STD than MOD pens in a hot season. The reduction in prolactin concentrations from days 2 to 22 of lactation tended to be greater (P = 0.08) in a hot season for sows in STD pens. Concentrations of urea and IGF-I increased as lactation advanced (P < 0.01) and IGF-I was lower for HS compared to TN sows on both days (P < 0.01), whereas urea was greater for HS sows on day 2 only (P < 0.01). Milk DM was less in a hot than in a cool season (P < 0.01). Average piglet weight gain was reduced in a hot compared to a cool season during the second week of lactation (P < 0.05) and this reduction was less in MOD than STD pens during the third week of lactation (P < 0.01). During a hot season, even though not significant, average weight gain of piglets from days 2 to 21 of lactation was reduced by 6.0% in MOD pens compared to 9.7% in STD pens.  相似文献

The objective of this study was to access the effect of long-term fertilization and film mulching application on soil properties and bacterial community structure. We used 16S rRNA gene to investigate soil bacterial community composition by high through-put sequencing. The results demonstrated that predominant groups in the bacterial community were: Proteobacteria, Bacteroidetes, Actinobacteria, Acidobacteria, Firmicutes, Planctomycetes, Gemmatimonadetes, Verrucomicrobia, Chloroflexi and Cyanobacteria. Long-term fertilization of combined manure and nitrogen application caused significant decrease in soil bacterial diversity and richness compared to non-fertilization control, though manure fertilization alone played a significant role in restoring bacterial diversity. Film mulching and manure fertilization significantly increased the relative abundances of soil bacterial groups mentioned above. Furthermore, film mulching played significant role in shaping the bacterial community structure regardless of fertilization. Redundancy analysis (RDA) showed that soil moisture content, pH, total N and soil organic C had significant (P < 0.05) influence on dominant bacterial groups. Altogether, plastic film mulching and manure application prevented loss of soil bacterial diversity and abundance during long-term fertilization. These findings showed the detrimental use of combined manure and nitrogen fertilization to soil microbes and the useful application of manure fertilization coupled with film mulching to soil biodiversity in long-term fertilization experiments.  相似文献

Observations of tidal flow over a sill show that upstream solitary wave generation occurred in conjunction with the downstream movement of a streamline bifurcation over the obstacle crest. Solitary waves appeared upstream of the bifurcation, riding on the surface stratification. Shear flow instabilities on the plunging interface were also evident and may contribute to wave generation through subharmonic interaction. Nonlinear waves generated downstream of an internal control became trapped in the supercritical flow.  相似文献
