Although cyclodextrins (CDs) have been successfully used as antibrowning agents in different fruit juices, no research has studied the effect of these compounds on enzymatic browning in peach juice. In this paper, the color of fresh peach juice was evaluated in the presence of two types of natural (alpha-CD and beta-CD) and a modified (maltosyl-beta-CD) CD, and the effectiveness of these compounds as browning inhibitors was determined using the color space CIELAB system. Moreover, to clarify the mechanism by which CDs inhibit peach juice enzymatic browning, the process was kinetically modeled in the absence and presence of CDs using a colorimetric method; the apparent complexation constants between the mixtures of diphenols present in peach juice and some types of CD were calculated. The results show that the highest affinity constant was presented by alpha-CD (Kc = 18.31 mM-1) followed by maltosyl-beta-CD (Kc = 11.17 mM-1), whereas beta-CD was incapable of inhibiting peach juice enzymatic browning. In this study, the structural features and ripening-related changes that occur in the arabinan-rich pectic polysaccharides highly enmeshed in the cellulosic matrix of the olive pulp fruit were evaluated. These pectic polysaccharides, obtained from two consecutive harvests at green, cherry, and black ripening stages, account for 11-19% of the total pectic polysaccharides found in the olive pulp cell walls and were previously shown to occur as calcium chelating dimers. On the basis of the 13C NMR, (1H, 13C) gHSQC, 2D COSYPR, and (1H,13C) gHMBC carbon and proton resonances of the variously linked arabinosyl residues, we propose a tentative structure. This structure is particularly characterized by T-beta-Araf (1-->5)-linked to (1-->3,5)-Araf residues and by the occurrence of branched and linear blocks in the arabinan backbone. Methylation analysis showed that these pectic polysaccharides of black olives have more arabinan side chains, which were shorter (less (1-->5)-Araf), highly branched (more (1-->3,5)-Araf), and with shorter side chains (fewer (1-->3)-Araf) than those of green and cherry olives. Quantitative 13C NMR data indicated that these modifications involved the disappearance of the characteristic terminally linked beta-Araf residue of the arabinans. This odd feature can be used as a diagnostic tool in the evaluation of the stage of ripening of this fruit, as well as a marker for the presence of olive pulp in matrices containing pectic polysaccharides samples.  相似文献

Fourteen benzohydrazides have been synthesized and evaluated for their in vitro antifungal activity against the phytopathogenic fungus Botrytis cinerea. The best antifungal activity was observed for the N',N'-dibenzylbenzohydrazides 3b-d and for the N-aminoisoindoline-derived benzohydrazide 5. A quantitative structure-activity relationship (QSAR) study has been developed using a topological substructural molecular design (TOPS-MODE) approach to interpret the antifungal activity of these synthetic compounds. The model described 98.3% of the experimental variance, with a standard deviation of 4.02. The influence of an ortho substituent on the conformation of the benzohydrazides was investigated by X-ray crystallography and supported by QSAR study. Several aspects of the structure-activity relationships are discussed in terms of the contribution of different bonds to the antifungal activity, thereby making the relationships between structure and biological activity more transparent.  相似文献

Consumers demand organic products because they believe they are more flavorful and respectful to the environment and human health. The effects of conventional, integrated, and organic farming, grown in a controlled greenhouse, on color, minerals, and carotenoids of sweet pepper fruits ( Capsicum annuum), cv. Almuden, were studied. Experimental results proved that organic farming provided peppers with the highest (a) intensities of red and yellow colors, (b) contents of minerals, and (c) total carotenoids. Integrated fruits presented intermediate values of the quality parameters under study, and conventional fruits were those with the lowest values of minerals, carotenoids, and color intensity. As an example, the concentrations of total carotenoids were 3231, 2493, and 1829 mg kg (-1) for organic, integrated, and conventional sweet peppers, respectively. Finally, organic red peppers could be considered as those having the highest antioxidant activity of all studied peppers (agricultural farming and development stage).  相似文献

In the present work sub- and supercritical extraction conditions using carbon dioxide were studied in order to obtain extracts with different compositions from the green microalgae Dunaliella salina. Different compositions of beta-carotene isomers were identified in the extracts by using HPLC-DAD. Also, antioxidant activity of the extracts was measured using a TEAC assay. An experimental design was applied considering two factors, extraction pressure and temperature, in a wide range of values, trying to maximize the extraction yield. Higher yields were obtained at high pressures and low temperatures, that is, at higher CO2 densities. Attempts were made to correlate the antioxidant activity of the extracts with their chemical composition by means of principal component analysis. A certain relationship was found between their antioxidant activity and the isomeric composition of beta-carotenes. As a result, an original equation is proposed to predict the antioxidant activity of extracts from D. salina in terms of the ratio 9-cis-beta-carotene/all-trans-beta-carotene, the concentration of alpha-carotene, and, especially, the concentration of 9-cis-beta-carotene.  相似文献

Traditionally antioxidant activity of melanoidins has only been evaluated in food for implication in shelf life but gastrointestinal digestion is necessary to study their potential bioactivity. In addition, the biological fate of melanoidins has been stressed during the past decade since they did not behave as inert substances. In the present paper a soluble coffee melanoidin isolated from brewed coffee after ultrafiltration with a 10 kDa cutoff membrane was treated ionically and enzymatically collecting the respective high and low molecular weight fractions. Antioxidant activity of these fractions was evaluated with five well-described assays (DPPH, ABTS, ORAC, HOSC, and FRAP) that were previously setup in a plate reader based automatized analysis. Low molecular weight compounds released from melanoidin after gastrointestinal digestion exerted the highest antioxidant activity, even higher than compounds bound ionically to melanoidins. Gastrointestinal digestion is able to modify coffee melanoidins to some extent, as hypothesized from their absolute antioxidant activities. Two options are plausible: by modifying/releasing the ionically bound compounds and/or by genesis of new more active structures from the melanoidin skeleton after enzymatic treatment.  相似文献

The Catarina scallop Argopecten ventricosus is a highly valued resource. Although its hatchery spat production has already been reported, the effects of initial larval stocking density have never been reported for production purposes. This study evaluates A. ventricosus growth and survival in triplicate using three stocking densities: low (LD; 2 larvae mL?1), medium (MD; 4 larvae mL?1), and high (HD; 6 larvae mL?1). Three-day old larvae were reared in 18-L plastic carboy at 25.6?±?0.5 °C and fed with a microalgal blend of Isochrysis galbana and Chaetoceros calcitrans (1:1 cell number ratio) for 7 days, equivalent to 10 post-fertilization days (PFD). Higher specific growth rate was recorded at LD (15.8?±?0.2%) after 8 PFD of culture compared to MD (1.6?±?0.5%) and HD (4.1?±?1.8%) densities. The least time required for 60% of the larvae to reach the pediveliger stage was recorded at LD condition (10 PFD). Higher survival was recorded at HD (58.8?±?3.1%) at 8 PFD compared to MD (53.5?±?3.1%) and LD (43.9?±?3.0%). After 8 PFD, stocking density was highly related to larval growth and survival. To increase production and growth, and reduce the time required to reach pediveliger stage, stocking density should start with 6 larvae mL?1 and be reduced to 2 larvae mL?1 at 7 PFD.

The ionic composition of culture water may be a more important limiting factor than the salinity itself and may lead to osmotic stress which may influence growth and survival of shrimp culture. The uptake rate and the effect of magnesium chloride (MgCl2), calcium chloride (CaCl2), and potassium chloride (KCl) salts in juveniles of whiteleg shrimp (Litopenaeus vannamei) cultured with biofloc technology (BFT) was evaluated for 62 days in seawater (30 practical salinity unity). Five treatments were analyzed in triplicate: T1; control (water exchange rate of 5% daily), T2; adding CaCl2?+?MgCl2?+?KCl, T3; adding MgCl2?+?KCl, T4; adding CaCl2?+?KCl, and T5; adding CaCl2?+?MgCl2. Mineral salts were added to water and the response of experimental parameters: physicochemical variables of water quality, osmotic pressure, total hemocyte count, glutathione peroxidase gene expression, superoxide dismutase, and zootechnical variables of the shrimp was assessed. The uptake of single chloride salts (CaCl2, MgCl2, and KCl) by shrimp varied as a function of the concentrations and the ratio of these three ions. Magnesium deficiencies in the culture medium increased CaCl2 and KCl uptake without showing gene expression of SOD and GPx. The best survival rate was obtained by adding the three ions (T2) and the control (T1, water exchange of 5%). We concluded that L. vannamei can be maintained by the addition of essential chloride ions in BFT without water replacement.

The development and intensification of Nile tilapia farming systems has happened together with ever increased use of antibiotics and therapeutants. Research on the use of probiotics has come along as alternative to routine use of antibiotics in fish diets. The manipulation of the gut microbiota through dietary probiotic inclusion targeting improved growth rate and disease resistance has been investigated in many farmed fish species. However, mechanisms underlying modulation of fish immune response remains unclear. This review summarizes and discuss recent findings in the role of probiotics on the immunity of Nile tilapia Oreochromis niloticus addressing available information regarding immunological parameters such as phagocytic activity, lysozyme, respiratory burst activity, antioxidant enzymes, complement system as well as immune-related gene expression, in the aim to foster research efforts on effective strategies for the successful use of probiotics in the tilapia farming industry.

The effects of four tropical forage legume hays (Vigna unguiculata, Psophocarpus scandens, Pueraria phaseoloides and Stylosanthes guianensis) on voluntary feed intake (VFI) and their nutritive value were studied in growing pigs using a corn-soybean meal-based diet containing varying proportions of forage legume hays (0, 10, 20 and 40 % or 0, 12.5 and 25 % for VFI and nutritive value determination, respectively). There was no difference in VFI between species (P?>?0.20), but a linear response to forage inclusion level (P?V. unguiculata, where the response was quadratic (P?=?0.01). All four forage species linearly decreased the total tract apparent digestibility (TTAD) from 0.76 to 0.61, 0.80 to 0.68, 0.54 to 0.40 and 0.58 to 0.31 except for S. guianensis (0.44) for DM, N, NDF and N retention, respectively. Differences in digestibility (P?S. guianensis, in which N retention remained quite high (0.44) at the highest inclusion level (25 %). P. phaseoloides hay should be avoided in pigs as it combines the lowest VFI with the lowest nutrient digestibility.  相似文献
