The aim of this study was to identify the effect of growth, size and season on the flesh quality of Atlantic salmon (Salmo salar). Following smoltification, two groups of size sorted 0+ and 1+ smolts (four treatment groups in all) were measured for body weight and length in January, June and October 2002. The fish were stored on ice for 4 days before filleted and samples taken for flesh colour, fat/dry content, end pH, gaping score and texture shear force. Large fish upon smoltification grew faster during the first year at sea, while smaller fish grew faster during the second year at sea, resulting in similar weight at slaughter. Season showed the main influence on quality, where fish slaughtered in October had harder texture, higher fat content and redder colour compared to previous samples (P < 0.05). There were only minor differences between the fish slaughtered in January and June (P > 0.15). No significant differences (P > 0.05) were detected as an effect of size or smoltification age when effects of season were accounted for in the statistical model. We conclude that the observed variation in quality was an effect of changes in growth with season. We recommend that actions aimed to halter growth prior to slaughter could be an effective control measure to reduce seasonal quality variations.  相似文献

Through the recent increases in abundance, pikeperch (Sander lucioperca) has not only become a valuable target for recreational and commercial fishing, but also the most important top predator in many lakes. Generally oligotrophic Lake Höytiäinen (283 km2) sustains one of the most economically valuable pikeperch stocks in Finland, and its annual fisheries yield (up to 5.5 kg/ha) is exceptionally high among Finnish lakes. Here, we followed seasonal movements of fish using conventional tagging, and studied short‐term and long‐term diet of pikeperch by stomach content and stable isotope analyses to examine if the movements were motivated by prey availability. A clear seasonal migration pattern was observed: in summer, 80% of the tag recoveries were obtained from the shallow and mesotrophic northern and western areas, whereas in autumn and winter, the deep and oligotrophic southern area dominated in the recaptures. The diet of pikeperch consisted of the most abundant fish species in the lake, perch (Perca fluviatilis) and roach (Rutilus rutilus), as well as insects. Stable isotope analysis indicated a shift from a dominance of pelagic food sources to littoral food sources during the growing season of pikeperch. Our results suggest that the pikeperch migrations facilitate efficient material transfer from the mesotrophic part while the deeper and oligotrophic part offers a favourable overwintering environment.  相似文献

Biotransformations of profenofos were studied in vitro. Two metabolites, desthiopropylprofenofos and hydroxyprofenofos, were detected by LC-MS after incubation of profenofos with human liver homogenates and different mammalian liver microsomes. The rank order of desthiopropylprofenofos formation in liver microsomes based on intrinsic clearance (Vmax/Km) was mouse > human > rat, while for profenofos hydroxylation it was mouse > rat > human. In view of the ratio between desthiopropylation and hydroxylation intrinsic clearance rates, human liver microsomes were most active in profenofos bioactivation. The interspecies differences and interindividual variation were within range of the default uncertainty/safety factors for chemical risk assessment. CYP3A4, CYP2B6 and CYP2C19 were identified as profenofos-oxidizing enzymes in human liver on the basis of recombinant expressed enzymes and correlation with CYP model activities. The rank order of CYPs in profenofos activation was CYP3A4 > CYP2B6 > CYP2C19, whereas it was the contrary for profenofos hydroxylation. Profenofos inhibited relatively potently several human liver microsomal activities: the lowest IC50 values were about 3 μM for CYP1A1/2 and CYP2B-associated activities. Profenofos is extensively metabolized by liver microsomal CYP enzymes and its interaction potential with several CYP activities is considerable.  相似文献

A high-performance liquid chromatographic (HPLC) method with diode-array detection (DAD) was used to identify and quantify free and total phenolic acids (m-hydroxybenzoic acid, p-hydroxybenzoic acid, protocatechuic acid, gallic acid, vanillic acid, syringic acid, o-coumaric acid, m-coumaric acid, p-coumaric acid, caffeic acid, ferulic acid, sinapic acid, chlorogenic acid, and ellagic acid) in plant foods. Free phenolic acids were extracted with a mixture of methanol and 10% acetic acid. Bound phenolic acids were liberated using first alkaline and then acid hydrolysis followed by extraction with diethyl ether/ethyl acetate (1:1). All fractions were quantified separately by HPLC. After HPLC quantification, results of alkali and acid hydrolysates were calculated to represent total phenolic acids. Ellagic acid was quantified separately after long (20 h) acid hydrolysis. The methods developed were effective for the determination of phenolic acids in plant foods. DAD response was linear for all phenolic acids within the ranges evaluated, with correlation coefficients exceeding 0.999. Coefficients of variation for 4-8 sample replicates were consistently below 10%. Recovery tests of phenolic acids were performed for every hydrolysis condition using several samples. Recoveries were generally good (mean >90%) with the exceptions of gallic acid and, in some cases, caffeic acid samples.  相似文献
