Germinated brown rice is popular in Asia for its increased γ‐aminobutyric acid (GABA) content and sweeter and softer texture compared with conventional brown rice. However, most studies investigated germinated rice properties on medium‐grain or aromatic rice. The objective of this study was to compare differences between a medium‐grain (Jupiter) and a long‐grain (Wells) rice under similar germination conditions on their milling, physicochemical, and textural properties over the course of germination. Rough rice was soaked in water at 25°C for 12 h and then incubated at 30–34°C for four germination durations. Wells had a higher breakage percentage and a greater weight decrease than Jupiter during germination. Wells had a significantly lower GABA content before germination and at the first two germination durations than Jupiter, but the GABA content in Wells significantly increased at the third germination duration to become significantly higher than that of Jupiter. There were no significant changes in gelatinization temperatures and pasting properties of germinated rice from both cultivars at different germination durations. The cooked rice hardness from Wells decreased at the longest germination duration, whereas Jupiter showed a more significant decrease in cooked rice stickiness from germination. The results demonstrate that the impacts of germination on physical, chemical, and textural properties of rice were affected by grain type and germination duration.  相似文献

Using a modified bovine milk enzyme kinetic assay, xanthine oxidase activity of serum collected from 34 adult, healthy horses of both sexes was determined. Enzyme activity varied from 0 to 126 mU litre-1 with a mean of 44.95 +/- 21.05 mU litre-1. The optimal pH and temperature for maximal activity were 7.8 and 28 degrees C, respectively. Freezing the serum for four days at -70 degrees C did not destroy the enzyme activity. Various doses (25, 50 and 75 micrograms kg-1, intraperitoneally) of endotoxin (lipopolysaccharide D1 Escherichia coli O26:B6) previously known to have caused moderate to severe systemic clinical signs of endotoxaemia in horses produced a significant dose related increase in serum xanthine oxidase activity. Pretreatment (12 hours) with allopurinol (5 and 50 mg kg-1, intravenously [corrected]) significantly reduced the rise in xanthine oxidase activity in endotoxin (50 micrograms kg-1, intraperitoneally) treated horses. The results of this study suggest that xanthine oxidase catalysed production of superoxide radicals may play a role in the pathogenesis of endotoxaemia and that allopurinol, an alternate substrate, should be further evaluated for its therapeutic potential in endotoxin related systemic diseases in horses.  相似文献

The dose-dependent effects of naloxone on feed intake, and plasma chemicals (insulin, glucose, FFA) purportedly involved in feed intake regulation, were determined in 16-hr fasted sheep that were lean and chronically fed maintenance. Dorset ewes (n = 5) were treated with 0 (saline), 0.3, 1 or 3 mg/kg of naloxone in a generalized randomized block experiment with at least 7 d between successive doses. Feed intakes and plasma insulin, glucose and FFA were determined frequently during 24 hr of ad libitum intake after each naloxone treatment. The 0.3, 1 and 3 mg/kg doses of naloxone reduced (P less than 0.01) the 4-hr feed intake by 30, 40, and 60% respectively, whereas the initial feed intake (10 min) was decreased (P less than 0.05) 45% only by 3 mg/kg naloxone. However, total 24-hr intakes were similar across all doses because intakes between 4 and 24 hr of feeding in sheep treated with 0.3 (839 g), 1.0 (802 g) and 3.0 (1330 g) mg/kg naloxone exceeded (P less than 0.01) that in saline-treated sheep (391 g). Feeding-induced changes in plasma insulin, glucose and FFA concentrations were independent of naloxone treatment, suggesting that endorphinergic control of feed intake may not involve coincidental changes in plasma insulin, glucose and FFA levels which are thought to play a role in systemic regulation of appetite in animals. The endorphinergic regulation of appetite in sheep may involve the central nervous system, rather than peripheral opiate mechanisms that utilize blood-borne signals. Further, the ability of naloxone to suppress appetite in sheep appears inversely related to the duration of fasting or severity of negative energy balance.  相似文献

The effects of intramuscular administration of multiple doses of cimetidine and ranitidine on basal gastric pH, free and total acid content from young adult pigs were studied. Cimetidine (4.5 mg kg-1, four times a day, intramuscularly, for three days) significantly (P less than 0.05) raised the basal gastric pH above 3.5 with a simultaneous reduction in free acid content at two, three and 26 hours after the administration of the eighth dose. Ranitidine (0.75 mg kg-1, four times a day, intramuscularly, for three days) significantly (P less than 0.05) raised the basal gastric pH above 3.5 with a concomitant reduction in free acid content at three and 38 hours after the administration of the eight dose. Neither cimetidine nor ranitidine had any significant effects on total acid content. These results confirm that the pig is a basal acid secretor and that the pharmacodynamics and pharmacokinetics of cimetidine and ranitidine in pigs might be different from those in humans.  相似文献

Rice yellowing is a problem for the rice industry. The objective of this research was to determine the effect of various temperatures and exposure durations at certain moisture content levels on yellowing in rice. Preliminary experiments were performed on stored Oryza sativa L. ‘Cypress’ rice. These experiments showed that exposure temperature and duration had a great effect on yellowing, but that the effect of moisture content was not significant (P > 0.15). With this information, similar experiments were performed on freshly harvested ‘Cypress’ and ‘Bengal’ rice. Color degradation, as measured by hue angle and chroma, was observed when at temperatures >50°C for exposure durations >12 hr. Temperatures >55°C with exposure durations >12 hr also resulted in dramatically lowered peak viscosity, but not all samples that showed yellowing had lowered viscosity. For the conditions of these experiments, temperature and exposure duration were the most important factors in color and viscosity change.  相似文献

Research shows that elevated nighttime air temperatures (NTATs) contribute to increased chalk formation and reduced milling quality in rice. Arkansas rice-growing regions experienced exceptionally warm weather conditions during the summer of 2010, providing an opportunity to test this hypothesis under extreme conditions. Data from a previous study, conducted in years 2007-2009 (Ambardekar et al., 2011), was extended to include 2010 data, and analyzed to evaluate the correlations of 95th percentiles of NTAT frequencies (NT95) occurring during reproductive (R) stages of six rice cultivars with chalk and peak head rice yields (pHRYs). Long-grain cultivars produced chalk values that were positively correlated to NT95, and pHRYs that were inversely correlated, during the R5 through R8 stages. Medium-grain cultivars, Bengal and Jupiter, which in the original study showed little or no response to elevated NTATs during all R-stages, showed significant positive correlations between chalk, and negative correlations between pHRY, and NT95, during the R7 and R8 stages. The 2007-2009 analyses indicated quadratic relationships of chalk with NT95 and linear relationships of pHRY with NT95. However, addition of the 2010 data indicated that both of these relationships were quadratic in nature. The extreme temperatures observed in 2010 also verified that while cultivars vary in their level of resistance to NTAT effects, all of the rice cultivars analyzed throughout the four-year study exhibited some degree of susceptibility to extreme NTAT temperatures occurring during critical grain-filling stages.  相似文献

The effects of degree of milling on pasting properties of medium‐grain (cv. Bengal and Orion) and long‐grain rice (cv. Cypress and Kaybonnet) were quantified using a Brabender ViscoAmylograph and a Rapid Visco Analyser. For all the cultivars tested, surface and total lipid contents decreased as the degree of milling increased. The peak viscosities for all rice increased with the degree of milling and the rates of increase were higher for medium‐grain than long‐grain cultivars. Degree of milling did not have a consistent effect on final viscosity for all the cultivars tested.  相似文献

This study evaluated the physicochemical properties of high‐temperature, single‐pass dried rough rice. Pureline cultivars Wells (long grain) and Jupiter (medium grain) and hybrid cultivar CL XL729 (long grain), at initial moisture contents of 17.9–18.1% were dried in a single pass to approximately 12.5% moisture content with drying air temperatures of 60, 70, and 80°C and relative humidities of 13–83%. Immediately after drying, the samples were tempered for 1 h at the drying air temperatures in sealed plastic bags. Color, degree of milling, pasting viscosity, and thermal properties of the milled rice were evaluated. Results showed that color, degree of milling, and thermal properties were not affected by drying treatments. However, peak and final viscosities increased with increasing drying air temperatures in all three cultivars.  相似文献
