The effects of adding amino acids on the content of acrylamide in potato crisps, French fries, flat breads, and bread crusts were investigated. Addition of glycine or glutamine during blanching of crisps reduced the amount of acrylamide by approximately 30% compared to no addition. No effect was found in French fries. Addition of glycine during doughmaking significantly reduced acrylamide in both flat breads and bread crusts. In bread crusts the reduction of acrylamide ranged from 50 to >90% depending on the baking condition. In flat breads the reduction varied between 60 and >95%. 相似文献

The literature on heavy metal toxicity to vascular plants is reviewed. Special attention is given to forest plant species, especially trees, and effects at low metal concentrations, including growth, physiological, biochemical and cytological responses. Interactions between the metals in toxicity are considered and the role of mycorrhizal infection as well. Of the metals reviewed, Zn is the least toxic. Generally plant growth is affected at 1000 μg Zn L?1 or more in a nutrient solution, though 100 to 200 µg L?1 may give cytological disorders. At concentrations of 100 to 200 μg L?1, Cu and Cd disturb metabolic processes and growth, whereas the phytotoxicity of Pb generally is lower. Although a great variation between plant species, critical leaf tissue concentrations affecting growth in most species being 200 to 300 μg Zn g?1 dry weight, 15 to 20 μg Cu g?1 and 8–12 μg Cd g?1. With our present knowledge it is difficult to propose a limit for toxic concentrations of Zn, Cu, Cd and Pb in soils. Besides time of exposure, the degree of toxicity is influenced by biological availability of the metals and interactions with other metals in the soil, nutritional status, age and mycorrhizal infection of the plant. 相似文献

The concentrations of selected trace metals, organotins, polychlorinated biphenyls (PCBs), and polycyclic aromatic hydrocarbons (PAHs) were determined in caged blue mussels (Mytilus edulis) during dredging operations in the Göta Älv Estuary (SW Sweden). Maximum values of pollutants in mussel tissues were found after the dredging started. Our results showed that the dredging caused mobilization of organotins from the sediments to the water column during the experimental period. Multidimensional scaling (MDS) and cluster analysis were applied to compare and establish relationships between levels of pollutants in mussels and sampling sites during the experimental period. In order to evaluate the biological effects of contaminants, genotoxic damage was measured using the Comet assay, and its potential application for environmental monitoring is discussed. 相似文献

Metal mining is carried out in the drainage basin of Lake Kariba, Zimbabwe. In an attempt to assess the distribution of heavy metals in the lake ecosystem, the concentrations of chromium (Cr), cadmium (Cd), copper (Cu), lead (Pb), manganese (Mn), nickel (Ni), zinc (Zn), and selenium (Se) were analysed in the following ecosystem components at different locations in the lake; water, sediment, aquatic macrophytes, mussels, and carnivorous and herbivorous fish. Concentrations were generally in the same range as in other temperate and tropical aquatic ecosystems, except for Pb and Cd, which were higher in marcrophytes and fish from the lake. Apart from Cd, there were no signs of biomagnification and the highest levels of metals were found in the macrophytes and sediments. While metal contamination in fish is probably a combination of uptake from the food and an equilibrium with the surrounding water, the levels in macrophytes appear to be determined mainly by uptake from the sediment through the roots. 相似文献

The objective of the present study was to examine the effect of potassium (K) fertilization and soil texture on total yield (1st and 2nd cuttings) and yield components of sweet basil (Ocimum basilicum L.) A greenhouse pot experiment was conducted in a completely randomized statistical design. Basil growth was examined in two different textured soils under three different doses of K fertilization. Generally, for the basil grown under clay soil conditions, moderate amounts of K fertilization is proposed to be sufficient if higher linalool contents are wanted. However, if the growing conditions are sandy loam in texture, it is suggested that higher doses of K be used. Results also highlighted the contribution of second cut as an important cultural practice in the cultivation of an annual basil. 相似文献

Temporal changes in densities of young brown trout (Salmo trutta), mainly of age 0+, and in water quality (pH and alkalinity) were assessed by means of electrofishing in lake tributaries in three acidic, software watercourses in western and southwestern Norway; Gaular and Vikedal (1987–1999) and Bjerkreim (1988–1999). Approximately 74 sites were sampled each year. Most of the streams were acidic with mean annual pH levels between 5.1–5.9. Alkalinity and pH increased significantly in all three areas during the study period. Brown trout fry densities increased significantly during the period in Vikedal and Bjerkreim. Also in Gaular, the density of young brown trout has exhibited a positive trend in recent years. We suggest that the increase in the density of young brown trout is because the study areas have became less acidified during recent years due to reduction in sulphate deposition. 相似文献

This study aims to follow the kinetics of aroma compound release during model cheese consumption in order to clarify the relationships between flavor release and some oral parameters. Eight subjects participated in the study. Breathing, salivation, chewing, and swallowing were monitored during the eating process. Temporal nosespace analyses were performed using on-line atmospheric pressure ionization-mass spectrometry (API-MS) and off-line solid-phase Micro extraction-gas chromatography-mass spectrometry (SPME-GC-MS). Flavor release profiles were obtained only for ethyl hexanoate, heptan-2-one, and heptan-2-ol. Among them, only the concentrations of ethyl hexanoate and heptan-2-one could be determined by API-MS. Absence of competition between the aroma compounds was checked for both techniques. In-nose maximum concentration (C(max)) varied with aroma compounds. However, C(max) was reached at the same time (T(max)) for the three compounds. Interindividual differences were observed for most of the parameters studied and for all of the aroma compounds. They were related to the interindividual differences among the oral parameters. The aroma release parameters C(max) and AUC (area under the curve) could be related to respiratory and masticatory parameters. ABSTRACTSoil redox potential (Eh) and pH are fundamentals parameters for plants growth. Measuring soil Eh is essential but complex due to the lack of measurement reliability resulting from high temporal variability and metrological challenges. This paper proposes practical advancements for measuring Eh in aerobic soils using combined electrodes (improvements in methodology specific to cleaning electrodes, measurement time, cleaning the dataset). The study of soil Eh and pH on sunflower and wheat in pot experiments has highlighted the relationship between Ehcumul (Eh associated with a dimension of time) and the portion of porosity that is accessible to air. For reduced soil conditions, sunflower positively reacts to better aeration. Strong correlations exist between the duration of each potential range and the growth of sunflower. The study of sunflower growth in soil reveals extremely harmful impact resulting from too high and/or too low Eh values. 相似文献

Spelt wheat seeds (Triticum aestivum subsp. spelta cv. Ostro) were used to obtain white spelt flour (64.5% yield), wholemeal spelt flour (100% yield), and scalded spelt wheat kernels. From these materials, white spelt wheat bread (WSB), wholemeal spelt wheat bread (WMSB), and spelt wheat bread with scalded spelt wheat kernels (SSKB) were made and were compared to the reference white wheat bread (WWB). The spelt wheat flours and breads contained more proteins in comparison to wheat flour and bread. Among the samples the highest rate of starch hydrolysis was noticed in WSB. During the first 30 min of incubation this particular bread was shown to have significantly more (P < 0.05) rapidly digestible starch than the WMSB and later on also more starch than in WWB and SSKB, respectively. The WMSB had the lowest hydrolysis index (HI = 95.7). However, the result did not differ significantly from that in the reference common wheat bread. On the other hand, the most refined spelt wheat flour resulted in a bread product (WSB) that was statistically withdrawn (P < 0.05) as one with the highest HI (112.6). 相似文献

We evaluated ground beetle diversity in relation to forest edge between an oak-hornbeam forest and adjacent herbaceous grassland. To test our hypothesis that the diversity of ground beetles was higher in the forest edge than the interior, pitfall trap samples were taken along two forest-grassland transects in northern Hungary. The diversity of ground beetles was significantly higher at the forest edge and in the grassland than in the forest interior. Ground beetle assemblages in the forest interior, forest edge and grassland could be separated from each other by ordination. Indicator species analysis detected five groups of species: habitat generalists, grassland-associated species, forest generalists, forest specialists, and edge-associated species. Rank correlation indicated leaf litter, herb, canopy cover, and prey abundance as the most important factors influencing carabid diversity. The high diversity of the forest edge resulted from the presence of edge-associated species and of species characteristic of adjacent habitats. Forest edges seem to play an important role in maintaining diversity. Serving as source habitats, edges also contribute to the recolonisation by ground beetles after habitat destruction or other disturbance in the adjacent habitats. 相似文献
