Carcasses from 59 steers produced from the mating of Braford, Simbrah, Senepol, and Simmental bulls to Brahman- and Romana Red-sired cows and Brahman bulls mated to Angus cows were used in this study. Effects of sire breed and feeding calves vs yearlings on fat depots in the chuck, when steers were fed to 1.0 cm external fat, were determined. Breed of sire and feeding calves vs yearlings had no effect (P greater than .05) on percentage of intermuscular fat. However, carcasses from Braford-sired steers had a higher (P less than .05) percentage of dissectable subcutaneous fat on the chuck than did those from other breed groups. Carcasses from Simmental-sired steers were superior (P less than .05) to those from Braford-sired steers in USDA yield grade and had a higher average marbling score (P less than .05) than the Simbrah-sired group. Estimated kidney, pelvic, and heart (KPH) fat was higher (P less than .05) in carcasses from Brahman-, Simbrah-, and Senepol-sired steers than in Braford-sired steers. Steers fed as calves had higher percentages (P less than .05) of KPH fat and major chuck muscles than did those fed as yearlings. The best single predictor of percentage of intermuscular fat within the chuck was adjusted fat over the ribeye (R2 = .46).  相似文献

In June and September 1988, the USDA Food Safety and Inspection Service sampled raw chicken carcasses at a federally inspected slaughter establishment in Puerto Rico to determine the effects of changing the scalding equipment on bacterial contents of raw poultry products. The scalding equipment was changed to a countercurrent configuration, with a postscald hot-water rinse cabinet that sprayed carcasses as they exited the scalder. Analysis of 250 carcass-rinse samples collected at preevisceration, prechill, and postchill sites over 7 days indicated that carcasses had mean aerobe plate counts of log(10)3.73 before evisceration, 3.18 before chilling, and 2.87 after chilling; Enterobacteriaceae counts of log(10)2.70 before evisceration, 2.25 before chilling, and 1.56 after chilling; and Escherichia coli counts of log(10)2.09 before evisceration, 1.61 before chilling, and 0.89 after chilling. Salmonellae were found on 24% of the carcasses before evisceration, on 28% before chilling, and on 49% after chilling. Although bacterial count reductions were significant at all 3 sites, the proportion of carcasses contaminated with salmonellae in this study was higher at the postchill than prechill site (49 vs 28%). This no doubt was caused by cross-contamination in the chiller. These percentages indicated that although simple scalder changes contributed substantially to the improvement of the bacterial quality of chicken carcasses, additional interventions in the chilling process (such as chlorination of chill water) are important to control cross-contamination and to preserve the positive effects obtained by the scalder changes.  相似文献

A primary epidemic of inclusion body hepatitis in broilers   总被引:4,自引:0,他引:4  
Inclusion body hepatitis (IBH) was diagnosed in 15 broiler flocks supplied by one breeder in the South Island of New Zealand. The affected flocks suffered mortality up to 30%. Malaise and slightly increased mortality were noticed by growers from about day 12 post-hatch; mortality peaked in the fourth week, and, in most flocks, declined to normally accepted levels from day 33 on. Gross signs seen at necropsy usually included bone-marrow aplasia, atrophy of the bursa of Fabricius and the thymus, and swollen hemorrhagic livers with focal necrosis. Jaundice was seen in many surviving birds. In some flocks, there was also proventricular hemorrhage, mild tracheitis, and airsacculitis. Downgrading and condemnation rates were increased in all flocks. Eosinophilic intranuclear inclusion bodies were seen in hepatocytes of some affected birds. An adenovirus was isolated from a number of cases investigated. The disease in broilers was preceded by production drops associated with feed refusal and increased mortality in the breeder stock.  相似文献

SUMMARY In a trial using Bos indicus and Bos taurus bulls in a tropical environment the serving capacity, defined as the number of complete services achieved during a 40-minute yard test, failed to predict the fertility of the bulls after 3 or after 7 weeks of mating. The amount of intramuscular fat is one factor contributing to the palatability of meat. As a preliminary attempt to study the capability of M. Longissimus dorxi in pigs to synthesize intramuscular lipids, an in vitro techniques was designed. Tissue alices were incubated with glucose U-C14 or acetate-1-C14 in the presence and absence of non-radioactive glucose and insulin. Following incubation, the quantities of C14-labelled total lipids, fatty acids, and individual lipid classes, produced from each substrate were determined. The results indicate that intramuscular lipids can be synthesized in the muscle tissue, but at a slow rate. It was found that the conversion of glucose into lipids, fatty acids, and triglycerides was markedly stimulated by an increase of the glucose concentration of the medium from 2 to 5 mM. Insulin had no effect on the amount of glucose converted into total lipids. However, at both glucose concentrations insulin significantly stimulated the utilization of glucose for production of giyearide-glycerol at the expense of fatty acid synthesis. Acetate was utilized to a greater extent than glucose for synthesis of fatty acids. The presence of glucose and insulin had no effect on the utilization of acetate for production of total lipids, fatty acids, and individual lipid classes. The major part of the radioactivity of total lipids was incorporated into the triglycerides both when glucose-U-C14 and acetate-1-C14 were used as substrates.  相似文献

Plasma ceruloplasmin activities and plasma Cu and Zn concentrations were determined in 215 clinically normal equids of various ages and breeds. Newborn foals, regardless of breed, were hypocupremic, compared with adolescent and mature horses. The mean plasma Cu concentration of newborn Standardbred-Thoroughbred (STD-TB) foals was 2.9 mumol/L, which was about one-sixth of plasma Cu concentrations of mature horses. Newborn draft-cross foals had higher (4.6 mumol/L) plasma Cu concentrations than did newborn STD-TB foals, but plasma Cu content was only one-fifth of the dams' concentrations. Draft-cross horses, regardless of age, had plasma Cu concentrations 15% to 40% higher than did STD-TB horses. Plasma Cu concentrations of Quarter Horse yearlings were similar to those in draft-cross yearlings. Plasma ceruloplasmin activities revealed a curvilinear relationship to plasma Cu concentrations. Plasma Zn concentrations of newborn and 1-week-old STD-TB foals were 30% to 80% higher than those for yearling and mature STD-TB horses. There were no differences between draft-cross neonates and their dams in plasma Zn concentration. Plasma Zn concentrations of neonatal and mature draft-cross horses were 22% higher than those obtained for all other equids. Age and breed of equid should be a consideration in interpretations of plasma Cu and Zn concentrations in equids.  相似文献
